1 ½ cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

  • In a medium saucepan heat oil over medium heat; add in onion, garlic and chili flakes, cook stirring for 3 minutes.

Steps:

  • Add oil to a 12-inch skillet and place over MEDIUM heat. Add the rice and taco seasoning and cook, stirring, until lightly toasted and spices are fragrant. 1 cup salsa ((I used mild so my kids would eat it- go as hot as you want!))
1 (4oz) can green chilis

Steps:

  • Combine all ingredients together in a microwaveable bowl. Microwave on high for 8-9 minutes, or until rice is tender.
  • Let sit for 3-5 minutes and it will soak up most of the liquid in the bowl. Fluff with a fork and serve.

1 (6.8 ounce) package Spanish rice mix
1 pound ground beef
1 (16 ounce) jar chunky salsa

Steps:

  • Bring 2 cups water and olive oil to a boil in a medium saucepan. Stir in rice and contents of spice pack. Return to a boil. Cover; reduce heat to low. Simmer until most water is absorbed, 20 to 25 minutes.
  • While rice cooks, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir cooked beef, salsa, and corn into the rice. Let simmer for 5 minutes or until warm. Serve.
