1½-2 cloves garlic
2 big handfuls of fresh flat-leaf parsley
1 bunch of fresh basil
1 handful of fresh mint
1 small handful of capers
1 small handful of gherkins, in sweet vinegar
6 quality anchovy fillets
1 tablespoon Dijon mustard
3 tablespoons red wine vinegar
8 tablespoons really good extra virgin olive oil

Steps:

  • Peel the garlic and pick the herb leaves, then finely chop on a large board with the capers, gherkins and anchovies.
  • Place in a bowl, add the mustard and vinegar, then slowly stir in the oil until you achieve the right consistency.
  • Balance the flavours with black pepper, a bit of sea salt and maybe a little more vinegar.

1 Tbsp capers in salt
4 anchovies (in salt or in oil)
½ slice day old white bread
2 Tbsp white wine vinegar
90 g (large handful) flat leaf parsley
1 large boiled egg yolk (optional)
1 medium clove garlic
125 ml EV olive oil (you might not need all)

Steps:

  • Rinse the capers and place them in a small bowl of room temperature water to soak while you get the other ingredients ready.
  • Do the same with the anchovies if they are salted, if in oil, just pat them dry with a kitchen paper.
  • Tear the bread up, place in a small saucer, and pour the vinegar over, squashing down the bread to soak the vinegar up.

1 pound tomatillos, husked
½ cup finely chopped onion
1 teaspoon minced garlic
1 serrano chile peppers, minced
2 tablespoons chopped cilantro
1 tablespoon chopped fresh oregano
½ teaspoon ground cumin
1 ½ teaspoons salt, or to taste
2 cups water

Steps:

  • Place tomatillos, onion, garlic, and chile pepper into a saucepan. Season with cilantro, oregano, cumin, and salt; pour in water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the tomatillos are soft, 10 to 15 minutes.
  • Using a blender, carefully puree the tomatillos and water in batches until smooth.

This sauce from the Lombardy region of Italy is a fantastic companion to meat. A dollop on top is all you need! I also mix this with plain pasta as a variation on basil pesto. There are a number of different ways to do this. Optional basil and mint or dijon mustard or parmesan cheese can be added, but here's the basic recipe.

1 cup fresh parsley, leaves only
1/4 cup pine nuts
2 tablespoons capers
1 garlic clove
3 anchovy fillets
red wine vinegar, to taste
1/2 cup extra virgin olive oil
salt & pepper
1 cup basil leaves (optional)
1/2 cup mint leaf (optional)
1 tablespoon Dijon mustard (optional)
1/2 cup parmesan cheese (optional)

Steps:

  • Blend all the ingredients in a blender or with pestle and mortar.
  • Leaving it to stand for a while allows the flavors to develop.
  • Mix with pasta or place a dollop on meat or fish.
  • Enjoy!

10 garlic cloves
6 -10 green chilies (Heat of chili to your liking I used jalapeno and habanero)
1 vidalia onion, 12 ounces chopped
2 limes, zested then discard all the white pith saving the meat
6 lbs green tomatoes, all blemishes and stems remove (12 cups pureed)
1 tablespoon dried oregano
2 teaspoons ground cumin
1 teaspoon dried chipotle powder or 1 teaspoon smoked paprika
1 cup chopped fresh cilantro
1 teaspoon salt
1 teaspoon fresh cracked pepper

Steps:

  • Prepare boiling water canner. Heat jars and lids in simmering water or dishwasher until ready for use. Set bands aside in hot water.
  • Pulse garlic, chilies, onions, lime zest and lime meat in a food processor. Process till chunky smooth. Place in a large saucepan. Pulse the green tomatoes in food processor till chunky smooth add to the onion mixture.
  • Bring to a boil. Stir in oregano, cumin, chipotle, cilantro, salt and pepper. Reduce heat and simmer 5 minutes.
  • Ladle salsa into hot jars leaving 1/2 inch head-space. Remove air bubbles. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.
  • Process salsa in a boiling water canner for 20 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

30g wild garlic (or 2 garlic cloves)
3 tsp Dijon mustard
40g small capers , drained, rinsed and roughly chopped
200ml extra virgin olive oil
2 tbsp sherry vinegar

Steps:

  • Chop the herbs and garlic, mixing with 1 tsp sea salt, until very fine.
  • Add the mustard and capers, and combine. Transfer the mixture to a bowl and stir in the olive oil.
  • Add the vinegar, little by little, stirring and tasting as you go - trust your palate!

1 bunch flat-leaf parsley leaves and tender stems (3-ounce; 80g), roughly chopped
2 tablespoons salted capers (3/4 ounce; 25g), soaked in cold water for 10 minutes to remove excess salt
4 oil-packed anchovy fillets (about 1/2 ounce; 15g)
2 medium cloves garlic
1 large hard boiled egg
2 tablespoons (30ml) fresh juice from 1 lemon
1/4 cup plus 2 tablespoons (90ml) extra-virgin olive oil
Kosher salt

Steps:

  • In a blender jar, or using an immersion blender, purée together parsley, capers, anchovies, garlic, boiled egg, and lemon juice until creamy; scrape down sides as necessary to blend everything evenly. Add olive oil and pulse briefly to emulsify. Season with salt.
  • Salsa verde can be refrigerated in an airtight container for up to 5 days.

This Italian salsa is a delicious accompaniment to grilled vegetables, fish, chicken, beef, sausages, lentils, potatoes, charred bread, pasta and fresh-cut tomatoes.

Large handful parsley, chopped fine
Large handful basil, chopped fine
Large handful mint, chopped fine
2 tbsp capers, chopped
6 anchovy fillets
1 spring onion, thinly sliced and minced fine
1/4 - 1/2 clove garlic, crushed (depending on size of the clove)
1 tsp dijon mustard
Good olive oil
1/2 lemon

Steps:

  • Combine parsley, mint, capers, spring onion, garlic and dijon mustard in a bowl.
  • Chop your anchovies and then with a fork mash them up. Add to the bowl and mix it in well.
  • Pour olive oil over the herb mixture until soaked in the oil. Its shouldn't be swimming in oil, but have the texture of a thick dressing.
  • To finish the sauce gradually add squirts of lemon juice, tasting each time until you find the perfect balance.
  • Leave the sauce to rest for a minimum of 30 minutes so the oil can soak into the herbs and flavour develops nicely.

  • Wash your herbs and pick them off the main stalks. The smaller tender stalks are fine and actually add more flavour and bulk.
  • If you own a blender then make it work and add the ingredients roughly chopped into the blender along with the oil, seasoning, mustard, lemon zest and lemon juice. Blend till fairly smooth and you're done. Simple as that. And yes, taste it. Adjust if you want with more seasoning and lemon juice.
