SALSA TUNA MELTS
I felt like having tuna melts tonight, but didn't want just the same old stuff. (I usually just go for tuna, mayo and lots of black pepper.) This is what I came up with, and it was pretty darned tasty, if I do say so myself. Hope you like it too! (Note: Prep and Cooking times are approximate...I didn't time mine, so I had to guess.)

Steps:
- Toast your bread until it is light golden brown. (If it gets too dark during this step, the edges will burn when you put it in the oven/toaster oven later.).
- Drain excess liquid from the salsa if it is very juicy. Otherwise, the tuna mixture will be too runny, and the toast will become soggy.
- While the bread is toasting, mix the tuna, mayonnaise and salsa in a small bowl.
- Spread some of the tuna mixture on each piece of toast.
- Place slices on a foil-lined pan in the toaster oven and heat until tuna mixture is warmed through, about 3-5 minutes.
- Top each piece with a slice of cheese, and put back in oven until cheese is melted.
- Enjoy!
ULTIMATE TUNA MELTS
Steps:
- In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. Broil for 1 to 2 minutes, just until the cheese melts and starts to brown. (Watch it carefully!) Sprinkle with the microgreens and serve hot.
CHEESY TUNA TORTILLA MELTS

Steps:
- Preheat oven to 375°F Grease an 8x8-inch baking dish.
- Arrange tortillas on a flat surface.
- FILLING:.
- Combine ingredients for filling in a bowl. Place 1/2 cup filling in the center of each tortilla. Fold top and bottom of tortilla over filling, Roll up tortilla from open end and place in prepared dish, seam side down.
- SAUCE:.
- Heat oil in large saucepan on medium heat. Add onion and garlic and gently cook for 2-3 minutes until tender., Add next 4 ingredients. Cook for 3 minutes, stirring often. Add evaporated milk, bring to a boil, lower heat and cook until thickened, 3-5 minutes. Pour over tortillas,. Sprinkle with remaining cheese.
- Bake in preheated oven 20-25 minutes, until bubbling. Remove and sprinkle with cilantro and green onions. Let sit 5 minutes before serving.
- TIPS: Use part Skim Mozzarella cheese as a healthier option,.
- Sauce can be made a day ahead and refrigerated until ready to use.
- Serve with store bought guacomole and your favorite veggies!
