- Fate rinvenire i funghi secchi,tagliateli a pezzettini e tritate l'aglio. In una casseruola grande fate soffriggere i funghi in poco olio di oliva extra vergine (o se preferite in una noce di burro) assieme all'aglio,coprite e cuocete a fuoco basso. Una volta cotta frullate con un frullatore ad immersione la salsa ai funghi misti fino a che non sarà perfettamente liscia e aggiungete l'estratto di pomodoro mescolando la salsa ai funghi fino a quando il pomodoro sarà ben amalgamato.

This is a rich dish, so a little goes a long way. This sauce makes enough for 1 lb. of pasta. For those of you that don't know Maryanne Esposito, let me introduce you to a marvelous cook, who cooks only "Authentic" Italian food, and it is incredible! I had the priviledge of meeting Maryanne at a woman's luncheon many years ago, and she has her own cooking show on Channel 11 in NH. She and her husband, who is a local doctor, live in the next town from where I used to live and work.

Steps:
- Melt the butter in a large saute pan, and cook the garlic until it is soft.
- Stir in the mushrooms, and cook until they begin to give off their liquid. Transfer the mushrooms to a bowl, and set aside.
- Brown the pork sausage in the same pan, breaking it up with a fork.
- Season with salt and pepper.
- If the sausage seems dry, add a little butter to the pan while it is cooking.
- Return the mushrooms to the pan, and mix ingredients well.
- Cover the pan and keep warm.
- Cook the fettucine as directed on the package, then drain it, and add it to the pan with the sausage mixture.
- Stir in the cream and cheese, and mix everything quickly over med-high heat, until the mixture is hot.
- Serve immediately.

- Heat the olive oil in a large frying pan over medium heat. Add the onion, celery, carrot, garlic, chili, and thyme, and sauté for about 5 minutes until softened. Squeeze out the soaked dried porcini (reserve the soaking water) and stir into the pan. Add the fresh mushrooms and sauté for 1 minute or so. Increase the heat, add the white wine, and allow to evaporate.
- Add the tomatoes, the reserved porcini soaking water, and the stock, and season with some salt and pepper. Bring to a boil, then lower the heat, partially cover with a lid, and cook gently for 45 minutes.
- Just before the mushroom ragù is ready, bring a large saucepan of salted water to a boil and cook the pappardelle pasta until al dente, 2-3 minutes.
- Drain the pasta and combine well with the ragù. Serve immediately with a sprinkling of grated Parmesan and some fresh thyme.
