Corn Cakes with Poached Eggs and Mango Salsa image

Don't be intimidated by the poached eggs in this bright, can't-miss morning meal. -Eva Amuso, Cheshire, Massachusetts

1 medium mango, peeled and chopped
1/2 cup salsa
2 tablespoons minced fresh cilantro
1 green onion, finely chopped
CORN CAKES:
4 large eggs, room temperature
2/3 cup all-purpose flour
2/3 cup cornmeal
4 teaspoons baking powder
1 teaspoon salt
1/8 teaspoon pepper
1 can (8-1/4 ounces) cream-style corn
1/2 cup 2% milk
1/2 cup butter, melted
1 cup fresh or frozen corn, thawed
4 green onions, chopped
1/4 teaspoon cream of tartar
POACHED EGGS:
1 tablespoon white vinegar
6 large eggs

Steps:

  • In a small bowl, combine the mango, salsa, cilantro and onion; set aside., Separate 2 eggs. In a large bowl, combine the flour, cornmeal, baking powder, salt and pepper. In another bowl, whisk the remaining eggs, egg yolks, cream-style corn, milk and butter. Stir into dry ingredients just until blended. Fold in corn and onions. In a small bowl, beat egg whites and cream of tartar until stiff peaks form. Fold into batter., Pour batter by 1/4 cupfuls onto a greased cast-iron skillet or hot griddle. Cook on each side or until golden brown, 2-3 minutes. , Meanwhile, place 2-3 in. water in a large skillet with high sides; add vinegar. Bring to a boil; reduce heat and simmer gently. Break cold eggs, 1 at a time, into a custard cup or saucer; holding the cup close to the surface of the water, slip each egg into water., Cook, uncovered, until whites are completely set and yolks are still soft, about 4 minutes. With a slotted spoon, lift eggs out of water. Serve with corn cakes and salsa.

Baked Eggs With Salsa image

A hot breakfast meal that's definitely a new favorite of mine to make in the morning. A different way to make eggs interesting and delicious again with a little southwestern influence. Personally I prefer mine with a hotter salsa to liven things up as well as mushrooms mixed into the salsa. A modified recipe from one on Foodnetwork. I've also upped the amount of salsa based on the review and I think mushrooms added to this would be great as well.

1/2 cup salsa, plus maybe a tad more (your choice of hotness)
4 eggs
salt, to taste
black pepper, to taste
1/4 cup green onion (optional)
1/4 cup shredded cheese
1 tablespoon cilantro, chopped
vegetable oil

Steps:

  • Preheat oven to 400 degrees F.
  • Lightly oil or spray a medium nonstick skillet with an ovenproof handle.
  • Spoon salsa into the pan.
  • Lightly press down salsa to make 4 evenly spaced shallow nests and break an egg into each.
  • Add green onions and season eggs with salt and pepper.
  • Bake about 15 minutes or until the egg whites are cooked and the yolks are still runny.
  • Sprinkle the cheese over the eggs and continue baking until just melted, about 1 minute more.
  • Top with the cilantro and serve immediately.

The creamy smooth center of a poached egg is very soothing over hot grits.

2 teaspoons white vinegar
1 large egg
Creamy Calcium Grits
Coarse salt and freshly ground pepper

Steps:

  • Fill a high-sided skillet or a wide saucepan with 3 inches of water. Bring to a boil over high heat. Stir in vinegar. Break egg into a small shallow bowl or cup. Reduce heat to a high simmer. Lower the bowl with egg just to the edge of the simmering water. Quickly empty egg into the bubbling water. Use a spoon to keep egg white together, if needed. Simmer until yolk is just set, about 4 minutes.
  • Remove poached egg with a slotted spoon, and drain it quickly on a paper towel. Place egg over Creamy Calcium Grits. Season with salt and pepper, and serve immediately.

GRITS INGREDIENTS COST

Also stir in 1/2 cup of water, 3/4 tsp of salt, and 1/2 tsp of cumin. Stir everything together and allow it to come up to a simmer over medium heat. STEP 3: Make four indentations in the sauce with the back of a large spoon. Crack an egg into each. Reduce the heat to low, place a lid on top of the skillet and allow the mixture to simmer while you make the grits. It should take about 10 minutes of simmering on low with a lid for the eggs to poach. STEP 4: In a medium pot with a lid, bring 3 cups of water to a boil over high heat. Once it reaches a rolling boil, stir in the 3/4 cup of quick cooking grits and 3/4 tsp salt. Reduce the heat to low, place a lid on the pot, and allow it to cook on the lowest heat setting for 5 minutes. After five minutes it should be thick. Turn off the heat and stir in the butter. Place the lid back on the pot to keep them warm until you're ready to serve. STEP 5: Once the eggs are done cooking, spoon some grits into a bowl and top with an egg and a spoonful or two of the tomato sauce. Add sliced fresh green onions on top.

I was searching for an egg and grits recipe that was different from the usual and came across this one. I am glad that I found it because it was excellent! I doubled the sauce recipe and used 9 eggs to feed 3 adults and 2 kids. It was just the right amount. The only change that I made was to add more garlic in the sauce and salt/pepper the top of each egg. Very flavorful. Give it a try!
