Looking for a new way to perk up meatloaf? Stir salsa into the meat mixture and then top the loaf with salsa. The amount of heat is up to you.

1 1/2 lb lean (at least 80%) ground beef
1/2 cup Progresso™ plain bread crumbs
1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/2 teaspoon red pepper sauce
1 egg
1/4 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 350°F. In large bowl, mix all ingredients except 1/4 cup salsa. Press mixture into ungreased 9x5-inch loaf pan. Top with 1/4 cup salsa.
  • Bake 45 to 55 minutes or until meat thermometer inserted in center of loaf reads 160°F. Serve with additional salsa if desired.

This is a great, easy recipe from one of my husband's cooking for bachelors-type books. It's supposed to have three ingredients, but I cheat and add a few extras

2 lbs lean ground turkey
1 cup seasoned dry bread crumb
1 1/2 cups water
1 cup salsa (mild, medium or spicy, according to taste)
1 onion, chopped
3 garlic cloves, chopped
1 egg

Steps:

  • Preheat oven to 425.
  • in a small bowl, mix the bread crumbs, water and salsa and set aside for 10 minutes.
  • in a large bowl, add onions, garlic, turkey, egg and when it's ready, the water/breadcrumb mixture.
  • using your clean hands, mix together.
  • shape into a loaf shape in a large pan. I usually use a 9x13x2.
  • Bake for 60 minutes or until cooked through. Remove from oven and allow to cool slightly before slicing.

1 cup Old El Paso™ Thick 'n Chunky salsa
2 eggs
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 lb extra lean (at least 90%) ground beef
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 350°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • In large bowl, stir together cereal and 1 cup salsa (mixture will be thick). Let stand 5 minutes.
  • Add eggs, chili powder, cumin, salt and pepper to cereal mixture; stir until blended. Add ground beef; stir until well mixed. Press evenly in ungreased 9x5-inch glass loaf dish.
  • Bake uncovered 1 hour 5 minutes to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cover; let stand 5 to 10 minutes. Drain and discard liquid before slicing. Serve with 1/2 cup salsa.

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

3/4 cup uncooked instant brown rice
1 can (8 ounces) tomato sauce
1-1/2 cups salsa, divided
1 large onion, chopped
1 large egg, lightly beaten
1 celery rib, finely chopped
1/4 cup minced fresh parsley
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
1 tablespoon chili powder
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
1 pound ground turkey
1/2 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend

Steps:

  • Preheat oven to 350°. Cook rice according to package directions; cool slightly. In a large bowl, combine tomato sauce, 1/2 cup salsa, onion, egg, celery, parsley, cilantro, garlic and seasonings; stir in rice. Add beef and turkey; mix lightly but thoroughly., Shape into two 8x4-in. loaves in a greased 15x10x1-in. baking pan. Bake until a thermometer inserted in center reads 165°, 1 to 1-1/4 hours., Spread with remaining salsa and sprinkle with cheese; bake until cheese is melted, about 5 minutes. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without topping. Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. 1 lb lean ground beef (93/7)
1 egg or egg substitute equivalent
1/3 c crushed cornflakes or breadcrumbs
1/3 c salsa, tomato-based
1/3 c reduced fat cheese, shredded
1/2 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1 dash(es) salt
1 bottle ketchup (if desired)
(ingredients can be doubled and tripled in exact amounts)

Steps:

  • 1. Preheat oven to 400F degrees.
  • 2. Mix all ingredients in one bowl until all dry ingredients are incorporated.
  • 3. Lightly grease or spray a loaf pan (or brownie edge pan).
  • 4. Add mixture to the pan. Add desired amount of ketchup and spread across the top.
  • 5. Bake for 1 hour. Meatloaf will pull away from the sides of the pan and crisp around the edges when done.

1 small onion, diced
1 tablespoon Worcestershire sauce
1/2 package dry onion soup mix
1 egg
1 teaspoon garlic
1/2 teaspoon pepper
3/4 cup salsa
3/4 cup salsa
1 teaspoon brown sugar
1 teaspoon chili powder
2 tablespoons ketchup

Steps:

  • Mix ingredients for loaf together and place in a loaf pan.
  • Bake at 350 degrees for 45 minutes or until almost done.
  • Top loaf with sauce and bake 10-15 minutes longer.
  • ** for OAMC: complete steps 1 & 2 but bake until done. Defrost overnight, top with sauce and then bake at 350 degrees for 20 minutes or until sauce bubbles. OR bake from frozen for 1 hour at 350 degrees, top with sauce and then bake for 30 minutes or longer until sauce bubbles.**

1/2 cup bottled, thick Salsa plus more for serving
1/2 cup onions, chopped
1/2 cup green bell pepper seeded and chopped
1/2 cup dried bread crumbs
1/4 cup green onion, chopped white and green parts
1/4 cup shallots, chopped
2 cloves garlic minced
2 large eggs beaten
2 teaspoons salt
1 teaspoon black pepper freshly ground
1 tablespoon chili powder optional
1/2 teaspoon ground hot red pepper optional

Steps:

  • Preheat the oven to 350 degrees Farenheit Lightly oil a 9 x 5-inch loaf pan In a large bowl, combine all of the ingredients with your hands. Mix well, but don't overhandle the mixture or the meat loaf will turn out heavy. Spread evenly in the prepared pan and place on a baking sheet. Bake until a meat thermometer inserted in the center reads 165F, about 1 1/2hours. Cool for 5 minutes before serving. Drain off the pan and unmold onto a serving platter. Slice and serve hot, with more of the salsa on the side. Notes: Use your favorite salsa, as long as it's thick. If you want a milder meat loaf, leave out the salsa. On the other hand, if you want a real kick-in-the-pants loaf, add 1 tablespoon chili powder and 1/2 teaspoon ground hot red pepper to the mix. But if you want my real secret to what makes this meat loaf a killer, I think it's using three different kinds of onions.
