SPICY SALSA MEATLOAF
Looking for a new way to perk up meatloaf? Stir salsa into the meat mixture and then top the loaf with salsa. The amount of heat is up to you.

- Heat oven to 350°F. In large bowl, mix all ingredients except 1/4 cup salsa. Press mixture into ungreased 9x5-inch loaf pan. Top with 1/4 cup salsa.
- Bake 45 to 55 minutes or until meat thermometer inserted in center of loaf reads 160°F. Serve with additional salsa if desired.

Steps:
- Preheat oven to 425.
- in a small bowl, mix the bread crumbs, water and salsa and set aside for 10 minutes.
- in a large bowl, add onions, garlic, turkey, egg and when it's ready, the water/breadcrumb mixture.
- using your clean hands, mix together.
- shape into a loaf shape in a large pan. I usually use a 9x13x2.
- Bake for 60 minutes or until cooked through. Remove from oven and allow to cool slightly before slicing.

Serve meatloaf with a little sass. High-fiber cereal and salsa as hot as you like sets this meatloaf apart.

Steps:
- Heat oven to 350°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
- In large bowl, stir together cereal and 1 cup salsa (mixture will be thick). Let stand 5 minutes.
- Add eggs, chili powder, cumin, salt and pepper to cereal mixture; stir until blended. Add ground beef; stir until well mixed. Press evenly in ungreased 9x5-inch glass loaf dish.
- Bake uncovered 1 hour 5 minutes to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cover; let stand 5 to 10 minutes. Drain and discard liquid before slicing. Serve with 1/2 cup salsa.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

- Preheat oven to 350°. Cook rice according to package directions; cool slightly. In a large bowl, combine tomato sauce, 1/2 cup salsa, onion, egg, celery, parsley, cilantro, garlic and seasonings; stir in rice. - 1. Preheat oven to 400F degrees.
- 2. Mix all ingredients in one bowl until all dry ingredients are incorporated.
- 3. Lightly grease or spray a loaf pan (or brownie edge pan).
- 4. Add mixture to the pan. Add desired amount of ketchup and spread across the top.
- 5. Bake for 1 hour. Meatloaf will pull away from the sides of the pan and crisp around the edges when done.

- Preheat the oven to 350 degrees Farenheit Lightly oil a 9 x 5-inch loaf pan In a large bowl, combine all of the ingredients with your hands. Mix well, but don't overhandle the mixture or the meat loaf will turn out heavy. Spread evenly in the prepared pan and place on a baking sheet. Bake until a meat thermometer inserted in the center reads 165F, about 1 1/2hours. Cool for 5 minutes before serving. Drain off the pan and unmold onto a serving platter. Slice and serve hot, with more of the salsa on the side. Notes: Use your favorite salsa, as long as it's thick. If you want a milder meat loaf, leave out the salsa. On the other hand, if you want a real kick-in-the-pants loaf, add 1 tablespoon chili powder and 1/2 teaspoon ground hot red pepper to the mix. But if you want my real secret to what makes this meat loaf a killer, I think it's using three different kinds of onions.
