Salsa for One image

I love salsa and because I had these items on hand, I used them! It turned out better than I thought.

Number Of Ingredients 10

3 ripe roma tomatoes
3 cilantro stems, with leaves
2 green onions, diced
1 peeled and sliced garlic clove
2 teaspoons red wine vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon chili-garlic sauce
1/2 teaspoon cumin
1 tablespoon diced red onion

Steps:

  • Put all ingredients except red onions and green onions in a blender or food processor.
  • Blend until smooth.
  • Pour into an air tight container and add green and red onions.
  • Stir salsa and close your container.
  • Refrigerate for at least an hour.

This is probably the easiest and fastest supper you'll ever make.

1 (6 ounce) boneless beef top sirloin steak, cut 1 1/2 inches thick
seasoned salt to taste
3 tablespoons water
1 cup prepared salsa
1 large potato, peeled and diced
1 carrot, peeled and chopped
1 small white onion, diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle both sides of steak with seasoned salt. Place in a foil-lined baking dish with 3 tablespoons of water. Pour salsa over steak, and spread chopped vegetables all around pan. Cover, and seal with foil.
  • Bake in the preheated oven for one hour, or to desired doneness. Serve immediately.

¾ cup green chile peppers, chopped
1 teaspoon vinegar
1 teaspoon salt

Steps:

  • Combine the tomatoes, onion, and green chile peppers in a bowl; drain briefly. Return the mixture to the bowl; stir the vinegar and salt into the tomato mixture.

6 roma tomatoes, diced
3 fresh jalapeno peppers, seeded and chopped
¼ red onion, chopped
3 green onions, chopped
2 cloves cloves garlic, crushed
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
2 tablespoons fresh lemon juice
1 ½ teaspoons ground cumin
1 small jicama, peeled and chopped
1 (10 ounce) can diced tomatoes with green chilies, drained
salt and ground black pepper to taste

Steps:

  • Mix together the tomato, jalapeno pepper, red onion, green onion, garlic, cilantro, lime juice, lemon juice, cumin, jicama, and the diced tomatoes with chilies in a bowl. Season with salt and pepper. Allow to sit at least 1 hour before serving.

4 large tomatoes, chopped
1 onion, chopped
½ cup chopped fresh cilantro
3 cloves garlic, minced
1 tablespoon lime juice
1 tomatillo, diced
salt to taste
1 jalapeno pepper, minced

Steps:

  • In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. If you desire your salsa with more of a kick, add the remaining 1/2 jalapeno. If you are satisfied with the salsa's heat, do not add the remaining jalapeno pepper. Cover the salsa, and chill until ready to serve.
