  • bring to boil and cook on low for 10 minutes.

We have a timeshare in a home in Taos, NM and when we're there, we smoke meat quite a bit, especially for entertaining. Last week we smoked a mixed grill of Prime Ribs of Pork (4 lbs), coils of pork sausage, and a few chicky breasts--beginning with a great dry rub. After the smoking ceased, we put the meat on the BBQ grill just to get a slight caramelization and heat the meat up.

2/3 cup molasses
1/4 cup chipotles in adobe sauce, pureed (with adobo sauce included in puree)
3 garlic cloves, minced (or 1 1/2 teaspoons granulated garlic)
1 medium yellow onion, minced (or 1 tablespoon onion powder)
5 tablespoons Worcestershire sauce (or 1 tablespoon Worcestershire powder)
Juice of 1 lemon
1 whole lemon, zested, and minced
1/4 cup soy sauce
2 cups ketchup
1 1/2 cups beer

Steps:

  • Combine all and bring to a boil over medium heat. Simmer over low heat 15 minutes. Let cool, place in container, and refrigerate.

I can see the grass skirts blowing in the wind! LOL! This is such a great sauce for so many things. I have used it on chicken, beef pork,(it's awesome on spare ribs) and fish! Haven't gotten to the veggies yet, but I'm working on it. This doubles easily and keeps well in the fridge.

1 teaspoon butter
1/2 cup sweet onion, finely chopped
3/4 cup light brown sugar
1 tablespoon dry mustard
1 cup cider vinegar (the brown one)
1 cup crushed pineapple, undrained
3/4 cup ketchup
1 lime, juice of
1/2 cup pomegranate juice
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce

Steps:

  • Heat oven to 425°F
  • Line a shallow baking pan with nonstick foil.
  • Place sweet onions in butter in a small saucepan and sauté until soft and translucent.
  • Add brown sugar, dry mustard, cider vinegar, pineapple, ketchup, lime juice, pomegranate juice, soy sauce and Worcestershire sauce.
  • Stir until combined and cook over medium heat and thickened, 20 to 30 minutes.

pepper, to taste
1/4 teaspoon Worcestershire sauce
5 cloves

Steps:

  • Mix sugar and cornstarch; add broth gradually, stirring constantly.
  • Add remaining ingredients and cook, stirring occasionally, until raisins are plump and mixture is thick.
  • Serve hot.

1/2 cup soy sauce
1/4 cup banana ketchup
1/4 cup brown sugar
1/2 head garlic, minced
1/2 cup carbonated lemon-lime beverage (7-up or Sprite)
1/2 cup pineapple juice (optional, if not using, add additional 1/2 cup lemon lime beverage)
2 tablespoons oyster sauce (or hoisin sauce)
1 tablespoon lemon juice (optional)
1/2 teaspoon ground black pepper
1 dash msg

Steps:

  • Cut pork meat into thin and long slices.
  • In a blender, blend together soy sauce, banana ketchup, brown sugar, garlic, lemon-lime beverage, pineapple juice (if using), oyster (or hoisin) sauce, lemon juice (if using), pepper, and MSG.
  • Mix together pork and marinade and keep in the refrigerator overnight.
  • String the pork on the skewers.
  • Place in hot grill, grill approximately 4-5 minutes each side.
  • With the leftover marinade, boil over high heat in a medium pot for about 10 minutes. Strain and serve over hot rice.
  • Note: Skewers can also be cooked under the broiler in the oven.

2 cups condensed tomato soup (Campbell's preferred)
6 tablespoons lemon juice (fresh is best) or 6 tablespoons vinegar

Steps:
