- Put a griddle pan on a high heat.
- Halve, deseed and slice the pepper into thin strips, then peel, halve, and finely slice the onion. Slice the chicken lengthways into long strips, roughly the same size as the pepper strips.
- Put the peppers, onion, and chicken into a bowl with the paprika and cumin. Squeeze over the juice of half a lime, drizzle over 1 tablespoon of oil, season with a good pinch of black pepper and mix well. Put aside to marinate for 5 minutes or so while you make your salsa.
- For the salsa, finely chop the chilli, roughly chop the tomatoes and the coriander (stalks and all), then place in a clean bowl with a pinch of sea salt and black pepper. Squeeze over the juice of 1 lime, and stir in the coriander.
- Using tongs, place the pepper, onion, and chicken onto the griddle and cook for 6 to 8 minutes, or until the chicken is golden and cooked through. As the pan will be really hot, keep turning the pieces of chicken and vegetables over so they don't burn - you just want them to lightly chargrill to give you a lovely flavour.
- To make the guacamole, squeeze the cherry tomatoes onto a board, then finely chop with ½ -1 red chilli and a handful of coriander leaves, including the top part of the stalks.
- Halve and destone the avocado, then squeeze it over a board so the flesh comes out of the skin. Discard the skin. Squeeze over the lime juice and chop everything together until fine. Taste and adjust the flavours, if needed.
- Warm the tortillas in a microwave or warm, dry frying pan, then divide between serving plates. Squeeze the remaining lime juice over the sizzling pan.
- At the table, carefully help yourselves to the chicken and vegetables straight from the hot grill pan. Just be sure to put it down on top of something that won't burn, like a chopping board.
- Serve with bowls of natural yoghurt and guacamole, alongside the Cheddar, a grater, and the lovely fresh salsa.

- Place the flour, yeast, salt, and sugar into a large mixing bowl; whisk to combine the ingredients.
- Set and lock the mixing bowl to the mixer. Attach the dough hook and turn the mixer on low. Slowly add the warm water and let the dough mix for about a minute, or until a nice ball of dough has formed. (Note: You can knead this dough by hand on a lightly floured surface, it will just take a bit longer to form.)
- Place the dough ball in a large, lightly oiled bowl. Cover it tightly with plastic wrap, and let it sit for an hour.
- Preheat the oven to 450º F.
- Place the chicken and vegetables into a large mixing bowl. Drizzle with olive oil, add the seasoning, then toss to evenly coat the ingredients; set aside.
- Lightly oil your pizza pan. Transfer the dough out onto it, and work the dough up to the edges of the pan until your pizza dough is fully formed.
- Spoon the salsa over the center of the pizza and evenly spread it out, leaving about 1/2-1 inch of room for a crust to form. Evenly sprinkle the shredded cheese over the salsa, and finally, transfer the seasoned chicken and veggies to the pizza, spreading them out.
- Bake the pizza for 12-15 minutes, or until the crust is golden in color. Remove the pizza from the oven and let it sit for about 5 minutes before cutting into it. Garnish with fresh herbs, and enjoy!

- Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 12-inch pizza crust. Cover with plastic wrap and let rest.
- Brush chicken, peppers and onions with oil and sprinkle with salt and pepper. Grill for about 8 minutes or until chicken is cooked. Cut peppers into strips and set aside with chicken and onions.
- Remove wrap from dough and brush one side with oil. Carefully place oil side down on grill. Brush top of dough with oil. Grill 3-4 minutes on each side. - Preheat the oven to 425 degrees F (220 degrees C).
- Roll or pull pizza dough to desired shape and spread on a large baking sheet or pizza stone. Prick with a fork.
- Bake in the preheated oven until firm, about 8 minutes.

- Heat oil in large skillet.
- Add chicken and cook, stirring frequently until lightly browned.
- Stir in seasonings.
- Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender.
- Heat oven to 425°.
- Sprinkle pizza pan with semolina flour and press dough into pan.
- Pre-bake dough until it is a very light golden brown, about 6 minutes.
- Remove from oven and scatter chicken over crust, spoon salsa over chicken, spread vegetable mixture over that, and finally, top with cheese.
- Bake for another 15 minutes until crust is golden brown.
SPICY CHICKEN FAJITAS
Steps:
- Combine 2 tablespoons of oil, lime juice and spices in a medium bowl. Add the chicken and stir to coat it evenly. Cover and refrigerate for 1 to 8 hours.
- In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the peppers and onion and cook until crisp-tender. Remove to a plate.
- Add the remaining tablespoon of oil to the skillet. Cook chicken for 5 to 6 minutes or until no longer pink. Return the pepper/onion mixture to the pan. Once warm, remove from heat.
- Warm the tortillas either in a nonstick skillet or in the microwave.Spoon the chicken mixture down the center or each tortilla and top with desired toppings.Serve.
