SALMON AND POTATO PIE
Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
- In a medium saucepan, cook onions, garlic and butter over medium heat until vegetables become transparent in color.
- Add onion/garlic mixture, salmon and thyme to cooked potatoes. Mash all together with milk, adding just enough to bring about a mashed potato consistency. Spread evenly into pie shell.
- Place second pie shell over top of salmon mixture. Cut slits into the upper shell, then pinch edges of both pie shells together. Bake on lower rack of oven for 45 minutes.

Steps:
- Heat oven to 425F degrees.
- Place pizza crust on ungreased cookie sheet.
- bake for 6-8 minutes.
- Cool at least 15 minutes.
- Meanwhile, in a small bowl, combine cream cheese, mustard and honey; mix until well blended.
- Spread cream cheese mixture over cooked crust, arrange salmon over top, sprinkle with onion, caper, and dill.
- Cut into wedges; serve immediately, or cover and refrigerate until serving time.

CRISP POTATO GALETTE WITH SMOKED SALMON AND CAVIAR

Steps:
- Toss grated potatoes in 1/4 pound clarified butter. Season with salt and freshly ground pepper.
- Heat 2 non-stick saute pans over high heat until nearly smoking. Divide remaining butter between the 2 pans. Add the potatoes evenly to each pan, and shape them into thick pancakes. Cook for 1 to 2 minutes, then reduce heat. Saute until almost golden brown. Use a spatula to check the underside of the pancake, turn over and cook other side until golden. Remove galettes from pans and warm in a preheated 425 degree F. oven for 10 minutes.
- Prepare dill cream: In a bowl, mix together shallots, dill, creme fraiche or sour cream, juice of 1/2 lemon and season with salt and pepper. Mix well.
- Remove galettes from oven while still warm. Spread with dill cream and cover with slices of smoked salmon. Lightly brush smoked salmon with olive oil, then sprinkle with black pepper and remaining lemon juice. Cut galettes into desired portions and garnish with caviar and chopped chives. Serve immediately.
MOM'S SALMON AND POTATO BAKE
During World War II when meat was scarce, my mother used to feed her large family casseroles using whatever meat or fish was available. My favorite is a type of baked casserole with salmon and potato which not only tasted great, but one which satisfied her family of seven kids.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a casserole dish.
- Place one layer of potato and onion slices in the prepared dish. Add salmon. Sprinkle flour over top until salmon layer is covered. Sprinkle with 1/2 of the salt and pepper. Layer with remaining onion and potato slices, then sprinkle with remaining salt and pepper. Add milk and top with butter.
- Bake, covered, in the preheated oven until golden brown, about 1 hour and 15 minutes.

- Preheat oven to 220C and place Lebanese bread on 2 large baking trays.
- Arrange potato, overlapping slightly over bread and spray with oil and then top with thyme, garlic, capers and mozzarella.
- Bake, swapping trays halfway through cooking for 10 to 15 minutes or until potato is tender and bases are crisp.
- Meanwhile, heat a non-stick frying pan over medium heat and spray with oil and cook salmon for 2 to 3 minutes each side or until fish flakes easily when tested with a fork in the thicken part and then flake into large pieces.
- Combines sour cream, lemon juice and horseradish cream in a bowl.
- Divide salmon between pizzas and top with salad leaves and drizzle with horseradish mixture.

- To make the pizza dough, put the water in a mixing bowl and add the yeast and sugar. Stir gently. Leave in a warm place until the yeast has dissolved and the mixture is very frothy. Mix well.
- Place the flour, olive oil and salt in a large mixing bowl. Add the yeast mixture and mix well to form a dough (note: there may be some left over flour in the bowl once you’ve formed the dough, this is fine). Knead the dough for 10 minutes until smooth and elastic, then place in an oiled bowl. Cover with a tea towel or clingfilm and place in a warm place to rise until doubled in bulk (about 40 minutes). You can make the pizza tomato sauce while you are waiting.
- Once it has risen, knock back the dough and divide into 4 even pieces. This recipe uses 2 pizza bases so you can freeze the other 2 pieces of dough (wrapped well in clingfilm) to use at a later date. Alternatively you can cook all four pizzas, just double the amount of toppings listed above!
- Roll out each piece on a floured surface into a disc about 20cm in diameter (the thinner you can get the pizza base, the better). Your pizza bases are now ready!
