This is an easy and quick salmon patty recipe. I like to serve these with hollandaise sauce or a little gravy. The kids prefer them with ketchup :)

Number Of Ingredients 6

1 (14 3/4 ounce) can salmon
1 egg, lightly beaten
1/2 cup all-purpose flour
1/4 teaspoon dill weed
1 1/2 teaspoons baking powder
2 tablespoons vegetable oil

Steps:

  • Drain salmon, reserving 1/4 cup of juice.
  • Discard salmon bones and skin.
  • In a bowl, combine salmon, egg, flour, and dill; mix well.
  • Stir baking powder into reserved juice; add to salmon mixture.
  • Heat oil in skillet over medium-high heat.
  • Drop batter by 1/4 cupfuls into skillet.
  • Cook the patties for 2 to 3 minutes on each side or until golden brown.
  • Drain on paper towels.
  • Serve warm.

My mom made these for me when I was a little girl. To this day, I still have to eat them with spinach and crackers. Delicious dipped in yellow mustard, too.

Number Of Ingredients 6

1 (14 ounce) can salmon
1/4 cup salmon liquid, from the salmon
1 egg, slightly beaten
1/2 cup flour
1 teaspoon baking powder
oil (for frying)

Steps:

  • Half fill a deep fryer or skillet with oil. Preheat while you are mixing the salmonettes. Drain all but 1/4 cup liquid off the canned salmon and set it aside. Put the salmon in a mixing bowl and break it apart with a fork until you have no big flakes. Add the flour and egg. Blend with a spoon until all of the flour is mixed in, don't overmix.
  • Add the baking powder to the liquid that was set aside and beat with a fork or whisk until frothy. Immediately pour this into the salmon mixture and stir until well blended. It is important not to let the baking powder and liquid mixture sit after mixing. Pour it immediately.
  • Drop the mixture by spoonfuls (small bite sized balls are the best) into the hot oil. They will brown very quickly-about 5-7 minutes. Lift them out with a slotted spoon and drain on a paper towel.

6 ounces skinless, boneless salmon
⅛ cup mayonnaise
⅛ cup dry bread crumbs
⅛ cup chopped green onion
1 egg white
2 teaspoons lemon juice
½ teaspoon Cajun seasoning
1 teaspoon butter or margarine
1 tablespoon mayonnaise
½ teaspoon Dijon mustard

Steps:

  • Combine salmon, 1/8 cup mayonnaise, bread crumbs, green onion, egg white, lemon juice, and Cajun seasoning in a bowl. Mix well and shape mixture into 1/2-inch thick patties.
  • Heat butter in a nonstick skillet over medium heat. Add patties and cook until golden brown, 3 to 4 minutes per side.
  • Combine 1 tablespoon mayonnaise and Dijon mustard together in a bowl. Serve sauce with croquettes.

1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.
