Alfredo Pasta with Salmon image

Alfredo Pasta with Salmon, an amazing under 30 minute recipe, perfect for a busy midweek. It requires minimal preparation and only a few ingredients, and can make happy even a picky eater. Spaghetti tossed in a creamy alfredo sauce, perfectly baked salmon and fresh dill, this is the best dish you can get. A homemade pasta recipe that is quick and easy to make, and better than at a restaurant.

1/4 packet of spaghetti ((200 g, 7oz))
150 ml double cream ((5 oz))
1 salmon fillet
2 cloves of garlic, minced
1 tsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 tbs chopped dill
1 tbsp grated parmesan

Steps:

  • Preheat the oven to 200 degrees C/ 390 degrees Fahrenheit.
  • Wrap the salmon fillet in kitchen foil and bake for 15 minutes until cooked through.
  • Meantime, cook the spaghetti according to the packet instructions.
  • Retain one quarter of cup of the cooking water, and drain the rest.
  • In pan, add the double cream and garlic and bring to a boil.
  • Toss the spaghetti to coat, add the cooked water, parmesan, and season with salt and pepper.
  • Remove the salmon from the oven and use a fork to flake it, then add it to the spaghetti together with the lemon juice and mix everything well.
  • Transfer to a plate and garnish with chopped dill.
  • Serve immediately.

8 ounces Linguine
3 cups Broccoli Florets
16 ounces Salmon
3 tablespoons All-Purpose Flour
2 cloves Garlic
1 tablespoon Dried Chives
½ teaspoon Lemon Peel (shredded)
2 tablespoons Parmesan Cheese
1 teaspoon Ground Black Pepper
1 ½ cups Fat-Free Milk

Steps:

  • In a pot, boil water. Add linguine and broccoli to it.
  • Cook them for about 3 minutes.
  • After 3 minutes, drain the water and keep the linguine and broccoli aside.
  • In a saucepan, add milk, flour, chives, and garlic.
  • Also, add oil in the saucepan and cook over medium heat. Add salmon and lemon peel to it.
  • Flip the salmon to cook the other side of it at medium heat.
  • In a serving bowl, add the spaghetti and broccoli to it. Pour the salmon mixture over it. Top the linguine with Parmesan cheese and freshly ground black pepper.

3 cups broccoli florets
1 ½ cups fat free milk
3 tablespoons all-purpose flour
1 tablespoon dried chives
2 cloves garlic, minced
1 (14.75 ounce) can salmon, drained, skin and bones removed, and broken into chunks
½ teaspoon finely shredded lemon peel
2 tablespoons coarsely grated Parmesan cheese
1 teaspoon Freshly ground black pepper

Steps:

  • Cook noodles according to package directions, adding broccoli for the last 3 minutes of cooking; drain and keep warm.
  • Meanwhile, in a medium saucepan whisk together milk and flour; add chives and garlic. Cook and stir over medium heat until thickened and bubbly. Add salmon and lemon peel. Heat through.
  • Place noodle mixture on a serving platter; spoon salmon mixture on top. Sprinkle with Parmesan cheese, and, if desired, freshly ground black pepper.

I love making food from things that come in cans, jars, or freezer packets, because... well, I'm lazy. This recipe is great because it calls for all of the above, requiring absolutely nothing fresh. (Note: It's an altered version of a recipe from a book called Betty Crocker's 4 Ingredient Dinners.)

12 ounces egg noodles
2 (10 ounce) packages frozen chopped broccoli
2 cups readymade alfredo sauce
2 (6 ounce) cans boneless skinless pink salmon
seasoning, to taste

Steps:

  • In a large stockpot, cook noodles as directed on package.
  • While noodles are cooking, flake and drain salmon.
  • Yes, this is necessary!
  • I was new to canned salmon, and so I didn't believe the instructions, but I soon discovered that salmon truly does come in huge, icky lumps.
  • When noodles are 2 to 4 minutes away from being done, add the broccoli to the water.
  • This will probably stop the water from boiling, so those 2 to 4 minutes might end up closer to 8 to 10 minutes instead!
  • This happened to me, but, amazingly, even with 8 extra minutes of cooking time the broccoli did not become mush.
  • Drain pasta and broccoli, reserving about a cup of the cooking water.
  • Return noodles and broccoli to pot.
  • Add Alfredo and seasonings to taste (I recommend lots of black pepper and--even better--Trader Joe's Sun-Dried Tomato Seasoning Splash, which is sold, not surprisingly, at Trader Joe's-- about 8 teaspoons of it).
  • If the sauce is too thick, and it likely will be, dribble in the reserved cooking water slowly until the consistency is right.
  • And you're done.
  • Woo hoo.
  • You just opened some cans, and a jar, and a box, and a package, and now you have yummy pasta.
  • Enjoy.

1 cup uncooked rice (I used Basmati)
1 can Cream of Mushroom soup
1-1/2 cans of water
1/2 cup Parmesan cheese
1 small can salmon (or any meat)
1/2 cup plain (unsweetened yogurt)
2/3 cup mayonnaise
4 Tbsp Dijon mustard
1/2 cup green pepper (diced)
1/4 - 1/2 cup Monterey Jack cheese (shredded)
1 pkg (14 oz broccoli florets)
Lemon Pepper seasoning
juice of 1/2 lemon
Panko bread crumbs
Parmesan Cheese
Cayenne pepper

Steps:

  • Mix all ingredients in a large bowl (except the Panko bread crumbs, extra Parmesan cheese and cayenne pepper)
  • Mix well and pour into a greased/sprayed casserole dish. (13x9)
  • Sprinkle the Panko bread crumbs & Parmesan evenly over top. Sprinkle with Cayenne, if desired.
  • Bake at 375 for approximately 45 minutes.
  • Sprinkle the juice of 1/2 to 1 lemon over the entire top, cut and serve.
