- Heat a large skillet over medium-high heat. Melt butter and oil together in the hot skillet. Add salmon; pan-fry for 3 minutes. Flip and cook until salmon is almost cooked through, 3 to 5 minutes.

- In a medium sized skillet heat the olive oil over medium low heat. Salt and pepper the salmon and add to the skillet skin sized down. Heat for about 5 minutes and flip with a spatula the salmon to the other side and cook for another 5 minutes until the salmon is brown and center is slightly pink. Remove salmon and set aside on a plate.
- Add the garlic to the pan and cook until tender. Add the heavy cream, chicken broth, and lemon juice. In a small bowl whisk together cornstarch and water. Add to the sauce. Let simmer for 3-4 minutes or until sauce has thickened.
- Add the salmon back to the skillet and heat through. Add fresh dill to the sauce and serve.

- Cut your salmon into 4 pieces. Sprinkle each piece with the garlic powder and season with salt & pepper. Coat each piece in flour on all sides.
- Add the olive oil and butter to a skillet over medium-high heat. When the pan is hot, add the fish. Cook the salmon for 3-4 minutes/side or until it's nicely browned. Don't overcook - the salmon shouldn't be cooked fully yet. Remove fish to a plate and set it aside.
- Add the chicken broth, lemon juice, and Dijon mustard to the skillet. Stir until mustard has been incorporated, and let it bubble for 1-2 minutes.
- Add the cream to the pan, along with the dill.
- Add in the salmon and let it cook for another 5 minutes or so until the sauce has thickened a bit and the fish has cooked through. Season with extra salt & pepper if needed. I like to serve it with fresh chopped parsley and a squeeze of lemon juice over the fish.

- In a small bowl, whisk the mustard, wine, brown sugar, vinegar and soy sauce until well blended. Gradually whisk in oil. Stir in dill and pepper. Place salmon in a shallow glass dish. - Rub little salt and pepper on both the side of the salmon fillet and leave it aside for 15 minutes.
- If you are using zucchini and green onion, then rub little salt and pepper on zucchini slices. As the green onion, I sliced it in half the lower white part to grill and finely chopped the green area to cook with the pearl couscous.
- To prepare the couscous, melt the butter and add the garlic. Stir for a minute the add the couscous. Stir the couscous in the butter until the color changes to mild golden color. Then add the finely chopped green onion and the vegetable stock or water. The vegetable stock I used had saltin it. You will have to add salt to taste accordingly.
- Bring it to boil and then let it simmer in medium heat until the water is absorbed, and the couscous is cooked. Layer the cooked couscous on a serving platter.
- While the couscous cools down a little, heat the grill pan and brush the oil on it. Then layer the salmon fillets carefully and let it cook for 3 minutes on each side. Also grill the zucchini and sliced green onion along with the salmon.
- Once done, layer the salmon and the grilled veggies on the couscous.
- To prepare the creamy dill sauce, just blend the yogurt, dill, salt, sugar and cumin powder.
- Drizzle the creamy dill sauce on top of salmon and serve right away!
CREAMY SALMON PASTA IN A DILL SAUCE

- Generously season both of the salmon fillets with salt and pepper.
- Add to a non-stick pan over medium-high heat in a small drizzle of olive oil. Once golden on the bottom side, flip over and place a sprig of dill on top of each fillet. Melt 1 heaped tbsp butter into the pan and baste the salmon until golden on the other side and just about cooked through the centre. Remove and place to one side. Break up into large chunks just before needed (discard dill).
- Cook the pasta in salted boiling water until al dente, reserving a cup of starchy pasta water. Drain when needed.
- Lower to medium heat and fry the shallots in the leftover brown butter until soft and deep golden, then fry the garlic for a further minute or so.
- Pour in 1/3cup/80ml wine and leave to simmer for a good 4-5mins to reduce, deglazing the pan as necessary. Reducing the wine is important so it burns off the alcohol and doesn't end up too bitter. Once almost completely reduced/evaporated, stir in 3/4cup/180ml heavy/double cream.
- Stir in 1 tsp finely diced dill, 1 heaped tbsp finely diced parsley and a small squeeze of lemon juice to taste (careful, you won't need much). Season with salt and pepper. Keep on a gentle simmer.
- Toss through the pasta until the sauce clings to it, adding a dash of starchy pasta water if you needed to loosen up the sauce. Add salmon and gently toss to combine.
- Serve with parmesan & parsley and enjoy!

- Heat the oil over a high heat in a frying pan (skillet).
- Add the salmon, skin-side down and cook for 2 minutes.
- Turn the salmon and cook for a further 2 minutes, until lightly browned, then turn back over so it's skin-side down again.
- Turn the heat down to medium and add the garlic, stir for 30 seconds (no longer or the garlic may burn), then add in the white wine.
