1 ½ pounds baby potatoes ((1 1/2 lb bag))
2 tablespoon olive oil
1 tablespoon dried rosemary
1 tablespoon dried oregano
tablespoon fresh parsley (chopped)
½ teaspoon salt (or to taste)
½ teaspoon black pepper (or to taste)
4 fillets salmon ((no skin) about 1 lb)
1 tablespoon olive oil

4 slices lemon
⅓ cup Greek yogurt (plain)
⅓ cup mayonnaise
1 teaspoon horseradish
1 tablespoon lemon juice (freshly squeezed)
¼ cup fresh dill (chopped)
1 shallot (finely chopped)
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper (or to taste)

Steps:

  • Preheat your oven to 425 F degrees. Spray a large baking sheet with cooking spray and set aside.
  • In a medium size bowl, toss the baby potatoes with the 2 tbsp of olive oil, rosemary, oregano, parsley, and season with salt and pepper.
  • Place the salmon fillets onto the prepared sheet pan. Drizzle with 1 tbsp of olive oil and season with salt and pepper on both sides. Arrange the potatoes on the pan in between the salmon fillets. Place a lemon slice on top of each salmon fillet, for additional lemon flavor.
  • Place the sheet pan in the oven and bake for 20 minutes.
  • Meanwhile, In a bowl whisk together the yogurt, mayonnaise, horseradish, lemon juice, dill, shallot, salt, and pepper. Cover with plastic wrap and refrigerate until ready to use.
  • Remove the lemon slices from the salmon fillet and top with a couple tbsp of the dill sauce. Serve along with roasted potatoes.

2 pounds red skinned small new potatoes
Coarse salt
1 tablespoon butter
3 tablespoons chopped fresh mint, a handful of leaves, finely chopped
1 teaspoon sugar
7 (6-ounce) portions fresh Norwegian salmon fillets, individually packaged in fish department or market
2 cups dry white wine
2 to 3 cups water
1 bay leaf, fresh or dried
Bouquet of fresh tarragon, dill and parsley sprigs, tied with kitchen string
1 bundle fresh watercress, washed and trimmed
1/2 English or seedless cucumber, thinly sliced
4 slices pumpernickel bread, quartered
2 cups sour cream
2 tablespoons prepared Dijon mustard
1/4 cup chopped herbs, a few sprigs each tarragon, dill and parsley

Steps:

  • Place potatoes in a pot and cover with water. Cover pot and bring water to a boil. Add a generous amount of coarse salt to the water, a few healthy pinches. Reduce heat to medium and boil covered until tender, about 12 minutes.
  • Place salmon fillets in a large deep skillet or divide between 2 skillets if you do not have a pan large enough to accommodate all 8 portions. The additional portions will provide the cooked salmon for salmon cakes on another night. Pour wine and water into the pan so that just the very top of the salmon is exposed. Add a bay leaf and a bouquet of a few sprigs each fresh tarragon, dill and parsley to the pan and set it down into the liquid. Place the pan or pans over high heat and bring the liquid to a boil. Reduce heat to medium low and cover the pan. Poach salmon for 10 minutes or, until fish is firm and opaque.
  • Drain your potatoes and return them to the hot pot. Add butter to the pot and turn potatoes to coat them lightly in the butter. Sprinkle the mint and sugar over the potatoes.
  • Combine sour cream with Dijon mustard and chopped herbs in a small bowl.
  • Remove salmon from the cooking liquid with a thin spatula. Reserve 3 portions of the salmon and place in the refrigerator or freeze for salmon cakes meal.
  • To serve, place a piece of salmon on a plate and garnish with sauce. Serve pumpernickel squares, watercress and sliced cucumber along side the fish. Add minted red potatoes to the plate and serve.

1 tbsp small caper , lightly chopped
8 portions or 1 side of fresh salmon , scaled (see tips below if using whole)
lemon wedges, to serve

Steps:

  • Mix the yogurt with the mustard, lemon zest, dill and capers and season with pepper. Now use to coat the salmon really well.
  • If serving now, either grill the salmon on foil for 6-8 mins (there is no need to turn), or barbecue for 3-4 mins on each side, preferably in fish grill to make turning easier. Serve with new potatoes and lemon wedges, alongside green veg and salad leaves.

1 banana shallot , halved - one half thinly sliced, the other finely chopped
220g pack salmon trout or salmon fillets , skinned
1 tbsp chopped dill , plus 2 sprigs
1 ½ tbsp white wine vinegar
250g new potatoes , sliced
140g trimmed green beans , halved
1 tbsp extra virgin rapeseed oil
1 tsp wholegrain mustard
small handful watercress , finely chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Take a square of foil and arrange the sliced shallots in the centre. Put the fish fillets on top, add 2 sprigs of dill and ½ tbsp of the vinegar. Close the foil, sealing it to make a parcel, and place on a baking tray. Put in the oven for 12 mins.
  • Steam the potatoes for 6 mins. Add the beans and cook for 5 mins more. Put the remaining vinegar in a bowl with the oil, mustard, watercress, and most of the chopped dill and shallot, and mix well. Add the warm beans and potatoes, and gently toss together. Serve with the cooked fish, pouring over the juice from the parcel, and scatter over the remaining dill.

1 lemon, finely sliced
small bunch of thyme
reserved dill stalks (from the mayonnaise recipe below)
side of salmon (about 1-1.2kg), cut from the tail end
1 tbsp olive oil
1 ½ kg new potatoes, halved if large
1 tbsp Dijon mustard
1 lemon juiced
3 tbsp olive oil
200g mayonnaise
1 tbsp wholegrain or Dijon mustard
small bunch of dill, leaves picked, stalks reserved

Steps:

  • Heat the oven to 120C/100C fan/gas ½. Scatter the lemon slices, thyme sprigs and reserved dill stalks over the base of a large, shallow roasting tin or baking tray. Season the salmon generously with salt and pepper and rub half the olive oil all over the fish. Lay the salmon skin-side up on top of the lemon and herbs. Roast for 45-50 mins until the fish feels firm and a corner of skin peels away easily. If you have a digital thermometer, the salmon should be at about 55C when ready. Leave to cool slightly in the tin.
  • While the salmon is cooking, tip the potatoes into a pan of cold salted water and bring to the boil. Reduce the heat to a simmer and cook for 10-15 mins until just tender. Drain. Mix the mustard, lemon juice and olive oil together in a large bowl, and season with salt and pepper. Tip the hot potatoes into the bowl and toss to coat in the dressing. Set aside. Can be served hot or made a day ahead and chilled.
  • Carefully lift the salmon onto a serving platter, if you like (it can also be served directly from the tin). Peel away and discard the skin, then use a cutlery knife to neatly scrape away the grey meat on top (see quick fishcakes recipe, below, to use it up), leaving the pink flesh underneath. The salmon is now ready to eat warm, or leave to cool completely and eat at room temperature. (See tip for garnishing the salmon, below.) Will keep chilled for up to two days. Can be served cold.
  • For the mayonnaise, mix all of the ingredients together in a small bowl. Can be made a day ahead and kept chilled. Just before serving, brush the rest of the olive oil over the salmon and season with sea salt. Serve with the potato salad and dill & mustard mayonnaise on the side.

Cooking the salmon slowly in oil, or 'confit'-ing it, is a restaurant way of keeping the fillets wonderfully soft and moist

about 500ml olive oil
1 garlic clove , peeled and halved
1 thyme sprig
6 x 140g skinned salmon fillets
600g new potato (Jersey Royals are good)
1 tbsp chopped chives
2 tsp chopped dill
25g butter
200g white and brown crabmeat
1 bunch watercress , stalks removed, to serve
1 tbsp chopped dill
4 tbsp extra-virgin olive oil
juice ½ lime

Steps:

  • First, tip the potatoes into a pan of boiling water, then simmer for 15 mins or until soft. Drain and keep warm. Meanwhile, pour the olive oil into a thick-based pan or roasting tin that will fit the salmon fillets snugly. Add the garlic and thyme, gently heat the oil for a few mins to let the flavours infuse, then turn off the heat.
  • About 20 mins before you want to serve, slip the salmon into the warm oil. Cook on a low heat for 8 mins (or 10 mins if you prefer your fish well cooked), then take off the heat. Leave the salmon in the oil for 5 mins, then remove and drain.
  • Meanwhile, place the cooked potatoes into a mixing bowl and lightly crush with a fork. Add the herbs, butter and a drizzle of olive oil from the salmon, season and mix well, then fold through the crabmeat. To make the drizzle, whisk the dill, olive oil and lime juice together.
  • On each plate, fill a cook's ring with the crushed potato mix (if you don't have a ring, spoon into a neat pile). Remove the ring and lay a salmon fillet next to it. Serve a small handful of watercress alongside, spoon around the drizzle, then serve.

3 cups sugar snap peas, stemmed and strung
1 teaspoon olive oil
4 4-ounce pieces of salmon fillet
1/2 cup white wine
2 tablespoons chopped fresh dill
2 tablespoons buttermilk
Salt and freshly ground pepper to taste

Steps:

  • Place the potatoes in a medium-size saucepan and cover with cold water. Cook over medium heat until tender, about 12 minutes. Drain and keep warm. Meanwhile, bring a medium-size saucepan of salted water to a boil. Add the sugar snaps and blanch for 3 minutes. Drain. Toss with the potatoes and keep warm while preparing the salmon.
  • Heat a large, heavy-bottomed nonstick skillet over medium heat until hot. Add the olive oil. Add the salmon and saute until just cooked through, about 2 1/2 minutes per side. Transfer the salmon to the center of a serving platter and keep warm. Add the wine to the pan and cook, stirring, until reduced to about 2 tablespoons. Stir in the dill. Pour the liquid into a small bowl. Whisk in the buttermilk and season with salt and pepper. Pour the sauce over the salmon. Place the potatoes and sugar snaps in a ring around the salmon and serve immediately.

1 skin-on salmon fillet (about 1 1/4 pounds), preferably wild
1 pound baby potatoes, such as Yukon Gold
2/3 cup buttermilk
1/3 cup mayonnaise
3 tablespoons coarsely chopped fresh dill
1 large cucumber (about 3/4 pound), peeled and thinly sliced
Lemon wedges, for serving

Steps:

  • Bring 1 1/4 inches of water to a boil in a large straight-sided skillet. Generously season with salt. Add salmon, skin-side down; return to a boil. Remove from heat, cover, and let stand until salmon is just opaque throughout, 15 to 17 minutes. Use a slotted spatula to transfer salmon to a plate, skin-side up.
  • Meanwhile, bring 2 inches of water to a simmer in a large pot fitted with a steamer basket (or a metal colander). Place potatoes in basket, cover, and steam until easily pierced with the tip of a sharp knife, 12 to 15 minutes.
  • Whisk together buttermilk and mayonnaise in a bowl, stir in dill, and season with salt and pepper. Remove skin from salmon; flake fish into large pieces. Divide salmon, potatoes, and cucumber among plates; drizzle with dressing, and serve with lemon wedges.
