I've always loved the marvelous contrast between a hot, smoky piece of meat, and a cold, fruity salsa; and this version featuring nectarines did not disappoint. In fact, the only thing that pairs better with this fresh fruit salsa is a basket of crispy tortilla chips.

1 cup finely diced nectarine
½ cup finely diced red bell pepper
⅓ cup finely diced onions
2 tablespoons finely diced jalapeno pepper
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons olive oil
½ teaspoon salt, plus more to taste
1 pinch cayenne pepper
1 pinch freshly ground black pepper

Steps:

  • Combine nectarines, bell pepper, onions, jalapeno pepper, and cilantro in a bowl. Stir in lime juice, olive oil, salt, and cayenne pepper.
  • Cover bowl with plastic wrap. Refrigerate to let flavors develop, 30 minutes to 1 hour.
  • Before serving, stir in black pepper. Add a pinch more salt, if needed.

1 medium ripe nectarine, halved, pitted and diced
8 fresh cherries, pitted and chopped
2 tbsp finely chopped onion 30 mL
2 tbsp finely chopped fresh cilantro or mint 30 mL
2 tbsp fresh lime juice 30 mL
1/4 tsp ground cumin 1 mL
pinch of red chili flakes
4 salmon fillets (5 to 6 oz/150 to 175 g each)
2 tbsp olive oil 30 mL
salt and pepper to taste

Steps:

  • In a bowl, combine nectarine, cherries, onion, cilantro or mint, lime juice, cumin and chili flakes. Cover and refrigerate until ready to serve.
  • Brush fish with olive oil and season with salt and pepper. Grill fish on barbecue preheated to medium-high 3 to 4 min. per side, or until just cooked through.
  • Plate salmon and top with nectarine salsa.

¼ cup fresh lime juice
¼ cup extra virgin olive oil
2 tablespoons soy sauce
3 tablespoons shallots, chopped
1 teaspoon sugar
½ cup diced pineapple
2 large plum tomatoes, diced
¼ cup chopped fresh basil
salt and pepper to taste
4 (6 ounce) fillets salmon
½ cup chicken broth
lemon pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Whisk together lime juice, olive oil, soy sauce, shallots, and sugar. Stir in the pineapple, tomatoes, and basil. Season with salt and pepper. Cover, and refrigerate. Remove from refrigerator 10 to 15 minutes before serving.
  • Place salmon in a 9x13-inch pan. Pour chicken broth over the top, and sprinkle with lemon pepper.
  • Bake in a preheated oven until fish flakes easily with a fork, about 30 to 40 minutes. Serve with salsa on the side.

Steps:

  • Heat gas or charcoal grill. In ungreased 11x7-inch (2-quart) glass baking dish, place salmon, skin sides down. Drizzle with 1/4 cup of the lemon juice.
  • Remove salmon from baking dish; place skin sides down on grill over medium heat. Cover grill; cook 10 to 20 minutes or until salmon flakes easily with fork.

  • Combine the first 6 ingredients in a bowl. Cover and refrigerate until needed. Preheat your barbecue or indoor grill to medium-high. Let fish warm at room temperature while the grill heats up. Brush the fish with the 2 Tbsp. oil; season with salt and pepper. Lightly oil the bars of the grill. Grill the fish 3 to 4 minutes per side, or until just cooked through. Plate the salmon, top with salsa, and enjoy.

1/2 teaspoon salt, divided

1 tablespoon honey

  • Sprinkle salmon with 1/4 teaspoon salt and pepper. Place on an oiled grill rack, skin side down. 4 6 oz salmon fillets
1 tablespoon canola oil or vegetable oil
2 ripe nectarines (finely chopped)
½ small yellow onion (finely chopped)
1 jalapeño (seeds and membranes removed and finely diced)
2 tablespoon chopped fresh cilantro
1 teaspoon grated fresh ginger
¼ teaspoon sea salt
2 teaspoons honey
1 tablespoon fresh lemon juice
Salt and pepper to taste

Steps:

  • Combine the nectarines, onion, jalapeño, cilantro, ginger, and salt in a medium bowl. Drizzle with the honey and lemon juice. Stir gently to combine.
  • Preheat a grill to medium high heat. Brush the salmon fillets on both sides with canola oil. Season with salt and pepper.
  • Place the salmon, skin side up, on the grill. Grill for 3-4 minutes with the lid closed, or until grill marks appear and the salmon easily releases from the grill. Carefully flip the salmon and continue cooking, with the lid closed, until the salmon is cooked to your liking. I did another 3-4 minutes for medium well.
  • Remove salmon from the grill and place on a serving platter. Top with the nectarine salsa.
