I've always loved the marvelous contrast between a hot, smoky piece of meat, and a cold, fruity salsa; and this version featuring nectarines did not disappoint. In fact, the only thing that pairs better with this fresh fruit salsa is a basket of crispy tortilla chips.

- Combine nectarines, bell pepper, onions, jalapeno pepper, and cilantro in a bowl. Stir in lime juice, olive oil, salt, and cayenne pepper.
- Cover bowl with plastic wrap. Refrigerate to let flavors develop, 30 minutes to 1 hour.
- Before serving, stir in black pepper. Add a pinch more salt, if needed.

- In a bowl, combine nectarine, cherries, onion, cilantro or mint, lime juice, cumin and chili flakes. Cover and refrigerate until ready to serve.
- Brush fish with olive oil and season with salt and pepper. Grill fish on barbecue preheated to medium-high 3 to 4 min. per side, or until just cooked through.
- Plate salmon and top with nectarine salsa.

- Preheat oven to 375 degrees F (190 degrees C).
- Whisk together lime juice, olive oil, soy sauce, shallots, and sugar. Stir in the pineapple, tomatoes, and basil. Season with salt and pepper. Cover, and refrigerate. Remove from refrigerator 10 to 15 minutes before serving.
- Place salmon in a 9x13-inch pan. Pour chicken broth over the top, and sprinkle with lemon pepper.
- Bake in a preheated oven until fish flakes easily with a fork, about 30 to 40 minutes. Serve with salsa on the side.

- Combine the nectarines, onion, jalapeño, cilantro, ginger, and salt in a medium bowl. Drizzle with the honey and lemon juice. Stir gently to combine.
- Preheat a grill to medium high heat. Brush the salmon fillets on both sides with canola oil. Season with salt and pepper.
- Place the salmon, skin side up, on the grill. Grill for 3-4 minutes with the lid closed, or until grill marks appear and the salmon easily releases from the grill. Carefully flip the salmon and continue cooking, with the lid closed, until the salmon is cooked to your liking. I did another 3-4 minutes for medium well.
- Remove salmon from the grill and place on a serving platter. Top with the nectarine salsa.
