Salmon fillets marinated in Irish whiskey and honey have a glazed look as well as a superb taste and texture. Irish whiskey has a slightly peppery taste. A delicious combination! From Food and Drink. Prep time includes marinating time.

2 tablespoons honey
1/4 cup cider vinegar
1/4 cup Irish whiskey
2 teaspoons chopped fresh thyme
1 1/2 teaspoons grated lemon zest
2 tablespoons vegetable oil
salt & freshly ground black pepper
4 (6 ounce) salmon fillets

Steps:

  • Mix together honey, vinegar, whiskey, thyme, lemon zest, oil, salt and pepper. Pour over salmon and marinate 1 hour on the counter, or 4 hours refrigerated.
  • Preheat oven to 450°F.
  • Remove salmon from marinade and place on a rack over a roasting pan.
  • Grill or Bake for 10 to 12 minutes, basting once with the marinade or until golden and white juices are just beginning to appear.

Poached Salmon with Irish Butter Sauce image

For maximum flavor, we cook the salmon in the time-honoured way: by placing it in boiling salted water.

2 1/2 pounds (1.12 kilograms) center cut of fresh salmon
Water
Salt
2 egg yolks
1 dessertspoon cold water
4 ounces (110 grams) butter, diced
Approximately 1 teaspoon lemon juice
1/4 ounce (8 grams) butter
Salt and freshly ground pepper
Sprigs of watercress or flat parsley

Steps:

  • Half fill the pan with measured salted water and bring to the boil. Put in the piece of fish, just covering with water, and bring back to the boil. Simmer gently for 20 minutes. Turn off the heat, allow the fish to sit in the water. Serve within 15 to 20 minutes.
  • Meanwhile make the Irish Butter Sauce. Put the egg yolks into a heavy bottomed stainless steel saucepan on a very low heat. Add the cold water and whisk thoroughly. Add the butter bit by bit, whisking all the time. As soon as one piece melts, add the next. The mixture will gradually thicken, but if it shows signs of becoming too thick or 'scrambling' slightly, remove from the heat immediately and add a little cold water if necessary. Do not leave the pan or stop whisking until the sauce is made. Finally add the lemon juice to taste. Pour into a bowl and keep warm over hot, but not boiling, water.
  • To serve, lift the cooked salmon carefully from the poaching liquid. Peel off the skin gently. Garnish with sprigs of parsley or watercress. Serve with Irish Butter Sauce.

Easy and delicious lemon-butter salmon fillets. This is an old recipe I changed up a bit and doubled in order to feed a large group or family.

vegetable oil cooking spray
8 (4 ounce) skinless salmon fillets
4 tablespoons salted butter
2 ½ tablespoons fresh lemon juice
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with cooking spray and place salmon fillets in the dish.
  • Place butter in a microwave-safe bowl and microwave on high in 30-second increments until melted, 30 seconds to 1 minute.
  • Mix lemon juice, salt, and pepper into the melted butter; pour over the salmon.
  • Bake in the preheated oven until fish flakes easily with a fork, 12 to 18 minutes.

4 salmon fillets
2 large egg yolks
1/2 cup butter
2 tablespoons lemon juice
salt and pepper

Steps:

  • Generously salt and pepper salmon fillets. Lightly grease grill with cooking spray or oil. Place the egg yolks in a saucepan. Cut the butter into pieces and add to the saucepan. Heat over medium-low heat while whisking the melted butter and egg yolks together. Continue whisking until the mixture turns lemony-colored and thick. Remove from the heat and stir in lemon juice. Place in a container and refrigerate until firm or serve immediately as a sauce. Grill the salmon about 5 minutes on each side or until done. Spoon sauce over fish and serve, garnished with lemon wedges and parsley.

  • Combine the water and salt and stir until dissolved. Place the salmon in a pan that's just large enough to put them in a single layer. Add enough water to barely cover the salmon. The idea is to use a minimum amount of water to preserve maximum flavor. If you need more water, stick with the ratios mentioned above. Discard any unused salt water.
  • Quickly bring the salted water to a boil, then reduce the heat to maintain a simmer and gently cook, uncovered, for 20 minutes.
  • While the salmon is cooking, prepare the butter sauce. Add the egg yolks and cold water to a small heavy-bottomed sauce pan. Whisk until blended. Cook, whisking constantly, over very low heat. Add a pat of butter and whisk continuously until melted, then add another. Repeat until all the butter is incorporated and the mixture is slightly thickened. If it starts to become too thick or "scrambles," remove the pan from the heat and add a few drops of cold water. Remove from the heat and add the lemon juice.
