LIME-MARINATED GRILLED SALMON

Lime-Marinated Grilled Salmon image

The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

Time 1h20m

Yield 4

Number Of Ingredients 8

¼ cup fresh lime juice
1 tablespoon olive oil
2 teaspoons Dijon mustard
¼ teaspoon ground ginger
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper
⅛ teaspoon black pepper
4 salmon steaks

Steps:

  • Whisk together the lime juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl, and pour into a resealable plastic bag. Add the salmon steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil grate. Remove the salmon from marinade, and shake off excess. Discard remaining marinade.
  • Grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on thickness.

HONEY LIME GARLIC BUTTER SALMON

Honey Lime Garlic Butter Salmon image

Honey Lime Garlic Butter Salmon Is ready in under 30 MINUTES! Caramelized on the outside and falling apart tender on the inside! ADAPTED FROM THIS HONEY GARLIC BUTTER SALMON

Provided by Karina

Categories     Dinner

Time 30m

Number Of Ingredients 9

1/3 cup unsalted butter
1/4 cup honey
4 large cloves garlic (, crushed)
2 limes (, juiced)
2 1/2 pound (1.2 kg) side of salmon
Sea salt (, to taste)
Cracked pepper (, to taste (optional))
Lime slices ((to serve))
1/4 cup fresh chopped parsley (, divided)

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking sheet with a large piece of foil, or 2 long pieces of foil over lapping each other lengthways if your salmon is wide.
  • In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lime juice, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Place the salmon onto lined baking sheet. Evenly pour the honey-lime mixture over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons), cracked pepper, and 2 tablespoons of parsley. Fold the sides of the foil up beside the salmon to keep the sauce under the fillet.
  • Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). Then, change oven setting to broil (or grill) for 2-3 minutes on medium heat to caramelise the top. Garnish with remaining parsley and serve immediately with fresh lime slices.

SALMON WITH HONEY-LIME DRESSING

Salmon With Honey-Lime Dressing image

I got this recipe from Weber's Real Grilling. The original recipe calls for a huge fillet salmon on a full cedar plank, but I've done this recipe for individual salmon fillets on smaller planks. It's a much nicer way to serve them, and easier to do for a smaller group. The proportions here are for the whole large salmon, but I find that about half is enough for 3-4 smaller fillets.

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 13

2 tablespoons lime juice
2 tablespoons rice vinegar

2 tablespoons chopped fresh chives
1 teaspoon kosher salt
1/2 teaspoon garlic powder

1/4 cup extra virgin olive oil
1 large salmon fillet, with skin 2 1/2 - 3 pounds (or equivalent of indiivdual size salmon fillets)

Steps:

  • Soak cedar planks in water for at least 1 hour.
  • Combine first 10 ingredients in a blender and process until ssmooth.

  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.

  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
  • Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.

  • Working in batches of two salmon fillets at a time (or using two skillets, because you don't want to overcrowd the salmon when cooking it on the stove-top so it cooks more evenly), place salmon fillets on a cutting board or plate and sprinkle 1 tsp flour over each side of the salmon fillets and spread flour to evenly coat. Evenly drizzle 3/4 tsp honey over each side of the flour coated salmon fillets.* Drizzle 1 Tbsp olive oil into a 10 inch non-stick skillet, swirl pan to evenly coat bottom and heat over medium heat. Once oil is hot, carefully place salmon in pan and cook over medium heat, 3-5 minutes per side until salmon has cooked through and bottom has nicely browned**. Plate salmon immediately, drizzle each fillet with 1 1/2 - 2 Tbsp Browned Butter Lime Sauce and sprinkle with lime zest. Serve warm.
  • *Note that once you remove the salmon from the plate some of the flour and honey coating will stick to the plate so I'd recommend just scraping it up with a spatula and adding it to the salmon once it's in the pan, alternately you could just coat one side with the flour and honey then after adding it to the pan you can coat the top side with flour and honey. Either way works I'd just say don't waste any of that delicious coating.
  • **If you feel the salmon is darkening too much before the center is cooked through, you can brown the salmon in pan on both sides for about 2 minutes then place in a sprayed baking sheet and bake at 350 for 7 - 10 minutes to finish cooking through.
  • Place butter in a small (light colored) saucepan. Cook over medium heat, swirling pan occasionally, until butter is fragrant and has turned a tan shade (for a step by step tutorial on how to brown butter see link here, although I would recommend not to stir constantly rather swirl pan occasionally). Remove from heat and add browned butter along with lime juice, garlic, salt and pepper to a blender. Blend on low speed for 30 seconds to 1 minute until well blended. Pour sauce into a small glass dish (note: whisk butter mixture with a fork before pouring onto salmon as it will separate, rewarm if needed).

  • Adjust your oven rack 6 inches from the broiler element and pre-heat the broiler. Make a foil pan out of heavy duty foil (or use two sheets of regular foil). Just crunch up the sides to hold in the glaze. Place it on top of a broiler pan. This makes for easy clean-up! If you don't feel comfortable cooking in foil, you can always do this in a glass dish instead.
  • Prepare the glaze while the oven is heating. In a small bowl, stir the honey, lime juice, chili powder and cayenne together. Set aside.
  • Pat the salmon dry with paper towels and season with salt and pepper. Lay the salmon (skin-side down) in a foil pan, spaced about ½-inch apart. Reserve 2 tablespoons of the glaze in a clean bowl for serving, then brush half of the remaining glaze evenly over the salmon.
  • Broil until all but the very center of the fish has turned from translucent to opaque and flakes away easily, 10 to 12 minutes, brushing the salmon again with the remaining glaze halfway through broiling.
