SALMON WITH CREAMY DILL SAUCE
There's nothing like fresh salmon, and my mom bakes it just right so it nearly melts in your mouth. The sour cream dill sauce is subtly seasoned with horseradish so that it doesn't overpower the delicate salmon flavor. -Susan Emery, Everett, Washington

Steps:
- Cook the sauce: Pour the lemon juice, broth, and cream into a small pot and bring to a simmer. Immediately lower the heat to low, cover the pot, and simmer gently for 10 minutes. Add salt and pepper to taste. The last minute or two, uncover the pot and increase the heat to high to reduce the sauce a bit.
- Prep the salmon: While the sauce is cooking, check the salmon for any stray scales (if skin-on). Use needle nose pliers to remove any pin bones.
- Cook the salmon fillets: Add the oil to a sauté pan large enough to fit the fillets in one layer. Heat the pan on high and let the pan heat up for 90 seconds. Lay the fillets in the hot pan and lower the heat to medium. Let the fillets sizzle steadily for 3 to 5 minutes, depending on how thick the fish is. A 1-inch-thick fillet will take about 5 minutes. With a metal spatula, gently turn the fillets over. Cook for another 1 to 5 minutes, depending on how well-done you like your fish. We like our salmon a little rare in the center, so we cook the second side of a 1-inch fillet about 3 minutes.
- Pour lemon cream sauce over the salmon: Place the salmon fillets on plates and pour lemon cream sauce over them and sprinkle with chopped parsley to serve. If you've crisped up the skin, serve the fillets skin-side up so they stay crispy. Otherwise, serve the fillets skin-side down.

STEAMED GINGERED SALMON WITH WARM CITRUS SAUCE
Steps:
- Set up a steamer. In a saute pan coated with oil on medium heat, saute the ginger and scallions until soft, about 2 minutes. Set aside. Wipe out pan and toast the salt and peppercorns until fragrant, about 2 minutes. Grind the peppercorns and salt. Season the fillets on both sides with the salt/peppercorn mixture. Place 1 wrapper on a clean dish towel. Place a thin layer of the ginger/scallion mixture and top with fillet. Roll bottom towards the middle. Fold in both sides and continue rolling. Finish roll and let rest. The top of the package will be the ginger/scallion mixture. Place packages in a steamer lined with a leafy vegetable. Steam for about 8 to 10 minutes. Ladle citrus sauce on small plates and place salmon on top. Garnish with pink peppercorns.
- In a non-reactive pan, combine juices and reduce on low heat by 5 percent. Add the segments, soy sauce and honey and heat. Whisk in the butter. Season to taste and check for seasoning.

- For the marinade, in a small bowl combine shredded orange peel, the 1/4 cup orange juice, shredded lemon peel, the 2 tablespoons lemon juice, 2 tablespoons basil, lemon thyme, 1 tablespoon chives, salt, and pepper. Place salmon in a shallow dish and pour marinade over fish. Cover and refrigerate for 1 hour, turning occasionally.
- For the sauce, in a small saucepan combine 1/2 cup orange juice, 3 tablespoons lemon juice, and the orange and lemon peel strips. Bring to a boiling; reduce heat to medium. Simmer, uncovered, about 10 minutes or until mixture is reduced by half and slightly syrupy. (Sauce can be made up to 1 hour ahead. Cover and chill; reheat before serving.)
- Remove salmon from marinade, reserving marinade. Measure thickness of fish. Brush salmon with olive oil. For a charcoal grill, place fish, skin side up, on the greased rack of an uncovered grill directly over medium coals; grill for 4 to 6 minutes per 1/2-inch thickness or until fish flakes easily when tested with a fork, brushing with reserved marinade and gently turning halfway through grilling. (Discard any remaining marinade.) Use a large spatula to remove fish from grill, leaving skin behind; discard skin. Transfer fish to a serving platter. (For a gas grill, preheat grill. Reduce heat to medium. Place fish on greased grill rack over heat. Cover and grill as above.)
- To serve, pour sauce over fish. If desired, sprinkle with additional basil and chives and serve with lemon wedges. Makes 6 servings.

- Using a sharp knife, peel the orange and the grapefruit, removing all of the bitter white pith, then cut in between the membranes to release the sections.
- In a small saucepan, simmer the wine with the vermouth and shallots over high heat until almost evaporated. Add the orange and grapefruit juices, bring to a simmer and cook until syrupy. Add the crème fraîche and bring to a simmer. Reduce the heat to low and cook, stirring occasionally, for 30 minutes. Remove the pan from the heat and strain the sauce through a fine sieve into another small saucepan. Add the citrus sections and curry powder and, using an immersion blender, puree the sauce until smooth. Season with salt and pepper.
- In a large nonstick skillet, melt 2 tablespoons of the butter. Season the salmon on both sides with salt and pepper. Cook the salmon skin side down over medium-high heat until browned and crisp on the bottom, about 3 minutes. Turn and cook until almost opaque through, about 3 minutes. Transfer the salmon to a platter and tent with foil.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the amaranth and cook over moderately high heat, stirring occasionally, until just wilted. Mound the amaranth on plates and top with a salmon fillet. Spoon some of the sauce over the top and serve. Pass the remaining sauce separately.

- Preheat the oven to 400 degrees. Line a baking sheet with parchment. Add the potatoes to the pan and toss with a little bit of olive oil, garlic powder, salt, and pepper. Roast for 25 minutes until lightly browned and delicious.
- While the potatoes are roasting, make your sauce. Melt the butter over medium low heat (I usually start with 6 tablespoons and add the last two if needed once the sauce is cooked). Add the garlic, shallot, and thyme sprigs; sauté for 3-5 minutes until soft and fragrant. Add broth and cream; bring to a low simmer. Let the sauce hang out over low heat until it starts to thicken enough to coat the back of a spoon. Remove the thyme sprigs. Whisk in the lemon juice, stir in the herbs, and season with salt and pepper. Give it a taste. Yes, you’re in heaven now.
- Add the broccoli and the salmon to the potato pan (keeping the potatoes on there). Toss or brush with a little more oil, salt, and pepper. Bake for another 10-15 minutes, until the salmon is fully cooked – I like it to be *just* past the point of translucent where it flakes apart very easily but isn’t dried out.
- Serve salmon, potatoes, and broccoli with big spoonfuls of sauce, more herbs, and more lemon wedges. This is living. ♡
