EASY SALMON POTATO SALAD



Easy Salmon Potato Salad image

I've made this dish many times since coming across the recipe about 12 years ago. We enjoy the unique blend of flavors and textures, and appreciate the fact that canned salmon is always "in season"!

1 can (16 ounces) red salmon, drained, bones and skin removed, flaked or 2 cans (7 ounces each) tuna
2 cups small red potatoes, cooked, drained and diced
1/2 cup diced celery
1/2 cup grated carrot
3/4 cup chopped onion
1 hard-boiled large egg, chopped
DRESSING:
1 cup 4% cottage cheese
2 tablespoons milk
1 tablespoon white vinegar
1/2 cup Miracle Whip
1 teaspoon dill weed
3/4 teaspoon salt
Dash freshly ground pepper
Fresh dill sprigs

Steps:

  • In a bowl, combine the salmon or tuna, potatoes, celery, carrot, onion and egg; set aside. For dressing, mix all ingredients except fresh dill in blender. Add half of dressing to salmon and potato mixture; cover and refrigerate. , Serve chilled. Stir in remaining dressing just before serving or serve with salad. Garnish with fresh dill if desired. Refrigerate leftovers.

Russian Salmon and Potato Salad image

This salmon salad is a very popular dish served at Russian gatherings and is usually the first one to disappear. It is easy to prepare and can be served at a picnic or as an appetizer.

2 eggs
3 medium baking potatoes, peeled and cubed
1 tablespoon olive oil
1 large onion, chopped
1 (16 ounce) can salmon, drained
1 cup mayonnaise, or as needed
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.
  • While the eggs are cooking, place the potatoes in a saucepan with just enough water to cover. Bring to a boil, and cook for 10 to 15 minutes, or until tender. Remove from heat, drain, and set aside.
  • Heat oil in a skillet over medium heat. Add onions, and saute until lightly browned and translucent, about 10 minutes.
  • Flake salmon and spread it over the bottom of a glass baking dish or serving dish. Spread the sauteed onions over the salmon. Gently spread a little bit of the mayonnaise over the onion layer. Top with potatoes, and spread enough mayonnaise just to add moisture to the layer. Finally, slice the eggs, and cover the layer of potatoes. Spread mayonnaise over the eggs, and garnish with chopped parsley. If you wish, you can reserve some of the egg to chop and sprinkle over the top as well. Chill for 1 hour before serving.

1 pound fingerling potatoes
Kosher salt and freshly ground pepper
1 skin-on salmon fillet (1 pound), preferably wild, room temperature
6 tablespoons unsalted butter
2 tablespoons minced shallot
1 teaspoon Dijon mustard
3 tablespoons sherry vinegar
8 ounces spinach, tough stems removed, well washed and spun dry
1/2 cup packed mint leaves
Flaky sea salt, such as Maldon, for serving

Steps:

  • Combine potatoes and 1 tablespoon kosher salt in a straight-sided skillet; add enough water to cover. Boil until potatoes are easily pierced with the tip of a knife, 10 to 12 minutes. With a slotted spoon, transfer to a bowl; cover to keep warm. Generously season fish with kosher salt and pepper. Gently lower into skillet, skin-side down, adding more water if fish is not fully submerged. Return to a boil; then remove from heat, cover, and let stand until fish is just cooked through, 5 to 7 minutes (depending on thickness of fillet). Transfer to a plate, skin-side up; cover to keep warm.
  • Melt butter in a medium saucepan over medium-high. When it boils, reduce heat to medium; simmer until foamy. Continue cooking, stirring occasionally and scraping bottom of pan, until foam subsides, butter turns golden brown with a nutty aroma, and milk solids separate into brown specks that sink to bottom, 2 to 7 minutes. Remove from heat and immediately whisk in shallot, Dijon, and vinegar (mixture will foam and splatter). Season generously with kosher salt and pepper; cover to keep warm.
  • Halve potatoes and toss with spinach, mint, and two-thirds of vinaigrette; divide evenly among 4 plates. Remove skin from fish; drizzle with remaining vinaigrette. Flake into several pieces, divide among salads, and serve, sprinkled with flaky salt.

Warm Salmon and Potato Salad with Creamy Dill Dressing image

One 12-ounce salmon fillet
Salt and pepper, to taste
4 cups baby potatoes, quartered
1/2 pound green beans, trimmed and halved
1/3 cup plain Greek yogurt
2 tablespoons Dijon mustard
2 tablespoons chopped fresh dill
1 small lemon, zested and juiced
1 garlic clove, grated
4 cups arugula
2 tablespoons capers

Steps:

  • Preheat the oven to 400 degrees F. Place the salmon on a parchment-lined baking sheet and sprinkle with salt and pepper. Bake until the salmon is cooked through, about 15 minutes. Use a fork to flake the salmon and set it aside.
  • At the same time, steam the potatoes in a steamer basket over 2 inches of boiling water until they become fork tender, 13 to 15 minutes. Remove the potatoes and set aside. To the same steamer basket, add the green beans and steam until tender crisp, about 5 minutes. (Check to ensure there is enough water in the bottom pot at all times.)
  • In the meantime, whisk the yogurt, Dijon mustard, dill, lemon zest and juice, garlic and some salt and pepper in a small bowl until well combined. Set it aside.
  • In a large serving dish, arrange the cooked potatoes and green beans on a bed of arugula. Top with the flaked salmon and capers and then pour on the dressing.
  • Serve immediately or store in the refrigerator for 2 to 3 days. (If you're planning on enjoying this the next day, do not add the arugula until just before eating.)

1.1 pounds salad or baby potatoes (see **Notes)
⅓ iceberg lettuce (roughly chopped)
8 radishes (finely diced)
4-6 dill pickles/gherkins (finely diced)
2 tablespoons capers
3 tablespoons chives (finely chopped)
2 handfuls watercress (without the hard stems)
3 tablespoons mayonnaise
3 tablespoons Greek yogurt
2 tablespoons dill (finely chopped)
1 tablespoon vegetable oil
1 tablespoon lemon juice (plus zest of ½ lemon)
2 teaspoons Dijon mustard
1½ teaspoons maple syrup
1 tablespoon water ((optional), see Instructions)

Steps:

  • Start by boiling the potatoes (with or without the skin) until tender. You can do this ahead and once cooled refrigerate the potatoes overnight. Cool the potatoes completely before assembling the salad.
  • Make the dressing by placing all the ingredients (not the water) in a bowl and stirring until thoroughly combined. Add a little water/lemon juice if needed, season to taste and set aside.
  • To assemble the salad spread the lettuce over a large plate (or use a wide-bottom bowl), add the potatoes and scatter chunks of salmon over the top. Add the remaining ingredients, season with pepper (see ***Notes), pour the dressing over the whole thing and enjoy your potato salmon salad.

DH & I were the lucky recipients of a lrg amt of fresh salmon recently. 18 lbs went to be smoked & the rest is in our freezer, so I've been on a mission to expand my salmon horizons. The Alaska Seafood Marketing Institute has been my best source & they didn't disappoint me w/this truly special potato salad that ranks right behind "my mama's best" for me. They described it as a side-dish, but I've used it more as a hearty 1-dish salad meal & just served it w/crusty bread & a variety of veggie/salad items at its side (sliced tomato & cucumber, olives, hard-boiled eggs, etc). Times were estimated & do not include time spent cooking the potatoes. This is a must try! Enjoy! (Edited to Add: To halve this recipe, use 1/2 can salmon & the rest of the ingredients halve easily. Then w/the unused canned salmon, make salmon patties to accompany the salad.)

1 cup dry and crisp white wine
1 tablespoon Dijon mustard
5 sprigs fresh dill
2 lemons, 1 sliced in half, the other sliced into thin rounds
1 pound salmon, pin bones removed, skin intact
Kosher salt and freshly ground black pepper
1/3 cup white wine vinegar
1/4 cup extra-virgin olive oil
1 teaspoon chopped fresh dill fronds
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1 pound baby Yukon gold potatoes
Kosher salt and freshly ground black pepper
4 large eggs
1/2 pound haricot vert or thin green beans, trimmed
1/4 cup olive oil
1 large head frisee lettuce, cut into bite-size pieces (about 5 cups)
1 romaine heart, cut into bite-size pieces (about 3 cups)
1 cup cherry tomatoes, sliced in half
1/2 cup pitted kalamata olives, sliced in half

Steps:

  • For the salmon: Add the wine, Dijon mustard, dill sprigs and 1 cup of water to a large straight-sided skillet. Squeeze the juice from the halved lemon into the skillet and then add in the lemon halves. Bring the mixture to a simmer over medium heat. Sprinkle the salmon with a generous pinch of salt and pepper. Once the liquid is simmering, gently add the salmon, skin-side-down, and turn the heat to low. Place the lemon slices on top of the salmon, cover the pan and cook for 10 minutes. Turn the heat off and let sit, covered, for 5 minutes. The salmon should easily flake apart with a fork. Carefully remove the salmon from the liquid and set on a plate. Cool completely.
  • For the dressing: Add the vinegar, oil, dill, mustard, garlic powder, 1/2 teaspoon salt and 1/2 teaspoon pepper to a glass jar with a lid. Cover and shake to emulsify. Set aside until ready to assemble the salad.
  • For the salad: Add the potatoes to a large saucepan and add enough cold water to cover the potatoes by 4-inches. Add a big pinch of salt and heat over medium high heat. Bring the potatoes to a boil and let cook until the potatoes are fork tender, 5 to 8 minutes. Use a slotted spoon to remove the potatoes to a plate. Reserve the pot with boiling water to use to cook the eggs and haricot vert.
  • Fill a large bowl with ice and water. Bring the water back up to a boil, then add your eggs and cook for 7 minutes. Remove the eggs to the ice bath. Bring the water back up to a boil and add the haricot vert. Cook until they are tender-crisp, about 3 minutes. Remove the haricot vert to the ice bath. Drain and cut them into thirds and set aside until ready to assemble. Remove the eggs from the ice bath, peel and set aside.
  • Using the flat base of a measuring cup or a glass, lightly smash the potatoes to expose some of the flesh. Sprinkle with a generous pinch of salt and pepper. Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the pan. Carefully add the potatoes into the pan, seasoning side down. Sprinkle the exposed side of the potatoes and cook until they are crispy and golden brown in places, about 4 minutes per side. Some potatoes may break apart, that's totally fine! Remove to a plate and set aside until ready to assemble.
  • To assemble the salad: Arrange the frisee and romaine leaves on a large platter. Drizzle about half of the dressing and toss to coat. Top the lettuce with the crispy potatoes, haricot vert, tomatoes and olives. Flake the cooled salmon into large pieces and scatter it on top of the salad. Slice the eggs in half and nestle into the salad. Drizzle on the remaining dressing and serve.

CREAMY POTATO SALAD WITH SALMON AND PRAWNS

Mary Berry's potato salad with lightly cooked fish is light yet substantial and with lots of lovely contrasting textures. Perfect for a summer buffet.

3 x 125g/4½oz middle-cut salmon fillets, skin on
1 lemon, juice only
16 cooked tiger prawns
500g/1lb 2oz baby new potatoes
4 tbsp olive oil
3 tbsp Dijon mustard
1 tbsp caster sugar
3 tbsp white wine vinegar
6 tbsp mayonnaise
1 bunch spring onions, thinly sliced
150g/5½oz radishes, thinly sliced
4 celery sticks, finely chopped
1 small bunch flatleaf parsley, finely chopped
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with kitchen foil.
  • For the salad, put the potatoes in a pan of salted water and bring to the boil. Cook for 15 minutes, or until tender. Drain and slice each potato into quarters.
  • Meanwhile, arrange the salmon fillets, skin-side down, on the prepared baking tray, squeeze over half the lemon juice and season with salt and pepper. Cover with another sheet of foil, seal to make a parcel, and bake for 15 minutes, or until just cooked. Remove and set aside to cool, then remove the skin.
  • For the salad, mix the oil, mustard, sugar and vinegar together in a large bowl. Add the hot potatoes and season with salt and pepper. Stir and set aside to cool.
  • Add the mayonnaise, spring onions, radishes and celery, mix together well and check the seasoning. Stir in the remaining lemon juice.
  • Flake the salmon into large pieces and gently stir into the salad with the prawns and half the chopped parsley. Spoon the salad onto a large platter and sprinkle with the remaining parsley.

Place potatoes in a large pan, cover with water, add salt and cook on high heat. Bring the water to a boil and cook for 10 minutes. Drain the potatoes in a colander and let cool completely.
  • Make the dressing. While potatoes are cooling down, in a small bowl, combine half and half, yogurt, mustard, lemon juice, and fresh dill. Mix well and keep in the fridge.
  • When ready to eat, pour dressing on the potato salad, and mix well to coat. Best served chilled.
