SALMON MELTS

Salmon Melts image

Warm and juicy sandwiches that are made with crunchy and garlicky bread, with a delicious salmon filling and topped with slices of fresh tomatoes and avocados and covered with melted and gooey cheese.

Provided by Olga's Flavor Factory

Categories     Appetizer

Time 35m

Number Of Ingredients 13

2 cups cooked salmon
1 Tablespoon butter or oil
1 onion, chopped
1-2 garlic cloves, minced
2 Tablespoons capers, finely chopped
1/4 cup mayonnaise (slightly less)
1 Tablespoon dijon mustard
1/2 - 1 Tablespoon lemon juice
1 Tablespoon minced fresh parsley, chives
salt and ground black pepper, to taste
1 baguette, sliced
1-2 tomatoes and/or avocados, sliced
1 cup grated cheese, finely shredded (Mozzarella, Parmesan, Swiss, Provolone, Monterey Jack, Cheddar, etc.)

Steps:

  • Preheat the oven to 450 degrees Fahrenheit.
  • Heat the butter or oil in a skillet on medium heat. Add the onion and garlic, seasoning with salt and ground black pepper to taste. Sauté on medium heat until the onions and garlic are softened and cooked through, 5-7 minutes.
  • In a large bowl, use a fork to mash the cooked salmon until it's flaky. (You can also used canned salmon or tuna, mash with a fork as well.) Add the cooked onions and garlic, the capers, mayonnaise, dijon mustard, lemon juice, fresh herbs, salt and ground black pepper. Mix until evenly combined.
  • Place the sliced bread on a rimmed baking sheet. Toast the bread until it's lightly golden. Take out of the oven and use the sliced garlic cloves to rub all over the surface of each of the slices of bread. The garlic will rub right into the toasted bread (the crisp bread will sort of be a grating surface for the garlic). This gives the sandwiches a pleasant and mild garlic flavor without being too overpowering.
  • Top the toasted bread with the salmon filling, spreading it out evenly over the bread. Place a slice of tomato and/or avocado on top of the salmon filling and then top with grated cheese.
  • Bake in the oven for another 7-10 minutes, until the sandwiches are warmed through and the cheese is melted.

I use this recipe when I have leftover baked salmon. If I do not think I will have enough for this dish, I add canned salmon. You can also add other ingredients to suit your taste: hard-boiled eggs, minced jalapeno, pickles, celery, etc.

SMOKED SALMON PATTY MELT

Smoked Salmon Patty Melt image

I recently came up with this as part of trying to find dishes that had big taste in smaller portions. I live in AK and have a large amount of high grade smoked salmon products right here at my front door. I love smoked salmon but wanted to incorporate into more than chowder or over green salad. This is my spin on the usual Patty Melt.

SALMON MELTS

Salmon Melts image

This recipe celebrates canned wild salmon and the comforting classic of the melt. Bright and tangy, creamy salmon salad sits on top of toasted English muffins, and is topped with white cheddar cheese and slow-roasted tomatoes.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 14

2 small ripe tomatoes
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
8 small thyme sprigs (or 4 large sprigs, cut in half)
2 6-ounce cans wild salmon, drained, skin and bones discarded
1 small shallot, minced
2 stalks celery, finely chopped
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon Dijon mustard
Juice of 1/2 lemon
2 scallions, thinly sliced
4 whole-wheat English muffins, split and toasted
8 small slices white cheddar cheese

Steps:

  • Preheat the oven to 375˚ F. Cut the tomatoes into 8 slices, 1/4 to 1/3 inch thick. Place in a shallow baking dish or on a small sheet pan. Season the tomato slices with salt and pepper, drizzle with the olive oil and put a thyme sprig on top of each. Bake until very tender and lightly browned around the edges, 30 to 35 minutes. Discard the thyme and set the tomatoes aside; keep the oven on.
  • Meanwhile, combine the salmon, shallot, celery, mayonnaise, sour cream, mustard, lemon juice and all but 2 tablespoons of the scallion greens in a medium bowl. Flake the salmon and stir until combined. Season lightly with salt and pepper. Refrigerate until ready to use.
  • Arrange the toasted English muffin halves on a foil- or parchment-lined baking sheet. Top with the salmon mixture (about a heaping 1/4 cup per muffin half). Top each with a slice of cheese and a roasted tomato slice and bake until the cheese is just melted, 3 to 5 minutes. Top with the reserved scallion greens.

  • Cut the sweet potatoes in half lengthwise. Brush the exposed half with the grapeseed oil and sprinkle with salt. Bake for 30 to 40 minutes, flipping the sweet potatoes over halfway through. The sweet potatoes should be fork-tender in the thickest part.
  • Once the sweet potatoes are cooked remove them from the oven and allow them to cool until you can handle them. Use a spoon to scoop out some of the sweet potato meat, leaving about 1 inch of sweet potato meat behind (see photo). Reserve the scooped-out sweet potato meat for another meal.
  • While the sweet potatoes are baking mix up your salmon salad. Drain the liquid from the salmon. Add the salmon to a large mixing bowl. Use a fork to break up any large clumps. Stir in the mayonnaise, mustard, hot sauce and salt and black pepper, until well mixed. Gently stir in the garlic, green onions, red pepper, and celery. Set the salmon aside until the sweet potatoes are ready to stuff.
