FRESH SALMON OMELET



Fresh Salmon Omelet image

Our family raised chickens, making my mother naturally creative with eggs. Since dad didn't care for eggs alone but did like fish, she often mixed eggs with salmon. I still prepare this wholesome omelet today.

1 salmon fillet (1 inch thick, about 10 ounces)
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
2 tablespoons butter, divided
6 eggs
1/4 cup shredded cheddar cheese
1/4 teaspoon pepper
1 medium tomato, optional
1/4 medium green pepper, optional

Steps:

  • Remove the skin and bones from the salmon; cut into 1/2-in. chunks. In a 10-in. skillet, saute the salmon, onion and green pepper in 1 tablespoon butter. Remove and set aside., In a small bowl, beat eggs. Melt remaining butter in same skillet over medium heat; add eggs. As eggs set, lift edges, letting uncooked portion flow underneath. , When the eggs are set, spoon salmon mixture over one side, then sprinkle with cheese and pepper; fold omelet over filling. Cover and let stand for 1-1/2 minutes or until the cheese is melted., If desired, make a tomato rose. With a small sharp knife, peel the skin in a thin continuous strip, starting from the base of the tomato. Roll up tightly, skin side out, from the stem end. Tuck end of strip under rose and place on omelet. From green pepper, cut two leaves. Arrange on each side of tomato rose.

2 cups cooked salmon
1 Tablespoon butter or oil
1 onion, chopped
1-2 garlic cloves, minced
2 Tablespoons capers, finely chopped
1/4 cup mayonnaise (slightly less)
1 Tablespoon dijon mustard
1/2 - 1 Tablespoon lemon juice
1 Tablespoon minced fresh parsley, chives
salt and ground black pepper, to taste
1 baguette, sliced
1-2 tomatoes and/or avocados, sliced
1 cup grated cheese, finely shredded (Mozzarella, Parmesan, Swiss, Provolone, Monterey Jack, Cheddar, etc.)

Steps:

  • Preheat the oven to 450 degrees Fahrenheit.
  • Heat the butter or oil in a skillet on medium heat. Add the onion and garlic, seasoning with salt and ground black pepper to taste. Sauté on medium heat until the onions and garlic are softened and cooked through, 5-7 minutes.
  • In a large bowl, use a fork to mash the cooked salmon until it's flaky. (You can also used canned salmon or tuna, mash with a fork as well.) Add the cooked onions and garlic, the capers, mayonnaise, dijon mustard, lemon juice, fresh herbs, salt and ground black pepper. Mix until evenly combined.
  • Place the sliced bread on a rimmed baking sheet. Toast the bread until it's lightly golden. Take out of the oven and use the sliced garlic cloves to rub all over the surface of each of the slices of bread. The garlic will rub right into the toasted bread (the crisp bread will sort of be a grating surface for the garlic). This gives the sandwiches a pleasant and mild garlic flavor without being too overpowering.
  • Top the toasted bread with the salmon filling, spreading it out evenly over the bread. Place a slice of tomato and/or avocado on top of the salmon filling and then top with grated cheese.
  • Bake in the oven for another 7-10 minutes, until the sandwiches are warmed through and the cheese is melted.

2 (5- to 6-ounce) cans salmon, drained
2 stalks celery, minced
2 green onions, white and light green parts, sliced
2 tablespoons diced dill pickle, or 2 tablespoons pickle relish
2 teaspoons pickle juice
1 teaspoon Dijon mustard
3 tablespoons light mayonnaise
1 tablespoon chopped fresh dill
Salt, to taste
Freshly ground black pepper, to taste
Dash hot sauce
For Serving:
4 English muffins, sliced
8 thin slices colby cheese, about 3 ounces total

Steps:

  • Gather the ingredients.
  • In a medium bowl, combine salmon, celery, onions, dill pickle and pickle juice or relish, mustard, mayonnaise, and dill. Season to taste with salt, pepper, and hot sauce.

1 tablespoon butter
1 onion, chopped
salt and ground black pepper to taste
1 clove garlic, minced, or more to taste
2 cups mashed cooked salmon
¼ cup mayonnaise, or to taste
2 tablespoons capers
1 ½ tablespoons lemon juice, or more to taste
1 tablespoon mustard
1 tablespoon minced fresh parsley
1 baguette
1 tomato, sliced, or more to taste
⅓ cup finely shredded mozzarella cheese
⅓ cup finely shredded Swiss cheese
⅓ cup grated Parmesan cheese

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Melt butter in a skillet on medium-high heat. Add onion; season with salt and pepper. Cook until softened, 5 to 7 minutes. Add garlic and cook until fragrant, about 30 seconds. Let cool slightly.
  • Mix onion and garlic with salmon, mayonnaise, capers, lemon juice, mustard, and parsley until combined. Season with more salt and pepper as desired.
  • Slice baguette on a bias into 10 or 12 pieces. Place slices on a baking sheet.
  • Broil for 1 to 2 minutes, watching closely that they don't burn. Top bread with the salmon mixture. Add a slice or two of tomatoes to each. Sprinkle mozzarella, Swiss, and Parmesan cheese on top.
  • Broil until cheese is melted and golden, 3 to 5 minutes.

I live in AK and have a large amount of high grade smoked salmon products right here at my front door. I love smoked salmon but wanted to incorporate into more than chowder or over green salad. This is my spin on the usual Patty Melt.

2 slices jewish rye bread
1 -2 slice swiss cheese
1 slice onion (yellow,vidalia,red)
1/4-1/2 cup smoked salmon, flaked. i use alaska sausage co.smoked salmon but you can use whatever is available to you
1 -2 tablespoon butter, softended or 1 -2 tablespoon margarine

Steps:

  • Heat skillet or griddle to med-high heat.
  • Spread butter on one side of each slice of bread.
  • Lay one slice of bread butter side down in the heated skillet/griddle.
  • Quickly assemble the flaked salmon onto the bread, lay swiss cheese on top of that (this will help hold the salmon together once melted), then the onion, and finally place the other slice of bread of top butter side up.
  • Once the bread has begun to brown nicely and crisp underneath flip to brown and crisp the other side.

Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
8 small thyme sprigs (or 4 large sprigs, cut in half)
2 6-ounce cans wild salmon, drained, skin and bones discarded
1 small shallot, minced
2 stalks celery, finely chopped
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon Dijon mustard
Juice of 1/2 lemon
2 scallions, thinly sliced
4 whole-wheat English muffins, split and toasted
8 small slices white cheddar cheese

Steps:

  • Preheat the oven to 375˚ F. Cut the tomatoes into 8 slices, 1/4 to 1/3 inch thick. Place in a shallow baking dish or on a small sheet pan. Season the tomato slices with salt and pepper, drizzle with the olive oil and put a thyme sprig on top of each. Bake until very tender and lightly browned around the edges, 30 to 35 minutes. Discard the thyme and set the tomatoes aside; keep the oven on.
  • Meanwhile, combine the salmon, shallot, celery, mayonnaise, sour cream, mustard, lemon juice and all but 2 tablespoons of the scallion greens in a medium bowl. Flake the salmon and stir until combined. Season lightly with salt and pepper. Refrigerate until ready to use.
  • Arrange the toasted English muffin halves on a foil- or parchment-lined baking sheet. Top with the salmon mixture (about a heaping 1/4 cup per muffin half).
