1 tablespoon oil
1 lb. fresh salmon fillet, skin removed, cut into 1-inch pieces
1 (1 lb 5-oz.) pkg. Frozen Lo Mein Stir Fry Meal Starter
1 tablespoon honey
2 teaspoons grated lemon peel
1/2 cup wide crisp chow mein noodles

Steps:

  • Heat oil in large skillet over medium heat until hot. Add salmon; cook 3 to 5 minutes or until fish flakes easily with fork, stirring frequently. Remove from skillet; cover to keep warm.
  • In same skillet, combine frozen vegetables with noodles, frozen sauce from packet and honey; mix well. Cover; cook 7 to 10 minutes or until vegetables are crisp-tender, stirring occasionally.
  • Add salmon and lemon peel; mix gently. Cook just until thoroughly heated, stirring occasionally. Sprinkle with chow mein noodles.

Easy Lo Mein image

The easiest lo mein you will ever make in 15 minutes from start to finish. It is so much quicker, tastier and healthier than take-out!

8 ounces lo mein egg noodles*
1 tablespoon olive oil
2 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 red bell pepper, julienned
1 carrot, julienned
1/2 cup snow peas
3 cups baby spinach
2 tablespoons reduced sodium soy sauce, or more, to taste
2 teaspoons sugar
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/2 teaspoon Sriracha, or more, to taste

Steps:

  • In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside. In a large pot of boiling water, cook noodles according to package instructions; drain well. Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes. Stir in egg noodles and soy sauce mixture, and gently toss to combine. Serve immediately.

1 (8 ounce) package spaghetti
3 tablespoons low-sodium soy sauce
2 tablespoons teriyaki sauce
2 tablespoons honey
¼ teaspoon ground ginger
2 tablespoons vegetable oil
3 stalks celery, sliced
2 large carrots, cut into large matchsticks
½ sweet onion, thinly sliced
2 green onions, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes; drain. Rinse spaghetti with cold water to cool; drain.
  • Whisk soy sauce, teriyaki sauce, honey, and ground ginger together in a bowl.
  • Heat oil in a large skillet or wok over high heat. Cook and stir celery, carrots, sweet onion, and green onion in the hot oil until slightly tender, 5 to 7 minutes; add spaghetti and sauce mixture. Continue to cook, tossing to mix, until the noodles and sauce are hot, about 5 minutes more.

  • To prepare noodles: In a medium quart sized pot, over briskly boiling water, drop the fresh lo mein noodles. Blanch for 3 minutes. Remove from water. Drain and set aside.
  • To saute: Over a large skillet or wok, over medium high heat, add the vegetable oil. Saute the garlic, onions, ginger, tomatoes and scallions for 1 minute. Add the broth and blend well.
  • In a small bowl, mix the rice wine, oyster sauce, water, sugar. Blend this mixture well. Then add to the skillet with the rest of the ingredients. Add the salmon and sardine flakes. Toss in the spinach and pre-boiled lo mein noodles. Blend everything in 1 to 2 minutes so that the liquid coats the noodles. Season with salt and pepper. Pour a few drops of sesame oil. Garnish with chopped scallions and hard boiled egg slices. Serve hot with a little soy sauce mixed with lemon juice on the side.
  • Cook’s comments: I buy the pre-boiled fresh lo mein noodles from the Asian grocery or major supermarkets in packs of 16 oz. each. These are convenient to mix in stir fry dishes or soups. Some packs come with instructions how to prepare. Most times, I drop the noodles in a pot of boiling water and blanch them for 3 to 5 minutes. If Asian noodles are not available, substitute with thin pasta noodles (already cooked), either regular or whole wheat, but using the sauce base in this recipe.
