Easy Jerk Salmon Steaks with Mango Salsa image

Number Of Ingredients 22

Jerk Seasoning:
2 cloves garlic, minced
1 jalapeno, seeded and finely chopped
2 tbs canola oil 30 mL
4 tsp chopped fresh thyme 20 mL
1 tbs soy sauce 15 mL
2 tsp ground allspice 10 mL
1 tsp brown sugar 5 mL
1 tsp ground cinnamon 5 mL
1 tsp lime zest 5 mL
1 tsp pepper 5 mL
½ tsp salt 2 mL
Mango Salsa:
1 mango, peeled and diced
1 tomato, diced
¼ cup finely chopped white onion 60 mL
2 tbsp lime juice 30 mL
¼ tsp salt 1 mL
¼ tsp ground ginger 1 mL
Salmon Steaks:
4 salmon steaks or fillets
lime wedges for serving

Steps:

  • Mix Jerk Seasoning ingredients in small bowl. Set aside.
  • In another bowl, stir together all Mango Salsa ingredients. Set aside.
  • Pat salmon steaks dry with paper towel. Coat in Jerk Seasoning. Barbecue salmon on grill preheated to medium-high heat, 5 min. per side or until just cooked through. Serve with Mango Salsa and lime wedges.

Sweet and spicy mango salsa and salmon fill these flavorful Paleo-friendly wraps.

2 cups diced mango
1 tablespoon grated gingerroot
1/4 cup fresh mint leaves, chopped
1/4 cup fresh cilantro, chopped
1 tablespoon chopped fresh jalapeño chile
2 tablespoons lime juice
1/4 teaspoon salt
12 oz skin-on salmon (2 or 3 fillets)
1 tablespoon olive oil
1/2 teaspoon salt
2 cups shredded cabbage
1/2 cup thinly sliced red onion
8 large romaine lettuce leaves, rib ends removed to create lettuce leaf taco shells

Steps:

  • Heat gas or charcoal grill.
  • In medium bowl, toss Mango Salsa ingredients. Set aside.
  • Rub salmon with olive oil and 1/2 teaspoon salt. Place salmon on grill over medium heat, skin side down. Cover grill; cook 11 to 15 minutes or until fish flakes easily with fork. Transfer to plate to cool slightly, then remove skin; flake fish with fork, and set aside.
  • To assemble, divide fish, cabbage, onion and salsa evenly among lettuce leaf taco shells. Serve immediately.

4 (6 ounce) salmon steaks
3 tablespoons olive oil
1 large red onion, diced
2 cloves garlic, peeled and minced
2 tomatoes, diced
1 sprig fresh cilantro, chopped
2 mangos - peeled, seeded, and diced

Steps:

  • Preheat the oven broiler. Line a broiler pan with foil.
  • Broil salmon steaks on the prepared pan 12 minutes, or until easily flaked with a fork.
  • Heat olive oil in a medium saucepan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and cilantro. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos. Serve over the salmon steaks.

These salmon lettuce wraps are a great quick lunch option or an easy dinner! Fresh salmon pieces coated in a sweet and spicy sriracha honey glaze!

10 oz fresh salmon filet
1 tbsp sesame oil (or olive oil)
2 tbsp coconut aminos
2 tbsp sriracha sauce
2 tbsp honey
1 clove garlic (minced)
3 butter lettuce wraps
3 oz rice noodles (cooked)
3 tbsp shredded red cabbage
1/4 lime (juiced)
1/4 cup diced mango or mango salsa
salt, pepper, and garlic powder (to taste)
sesame seeds to garnish

Steps:

  • Start by dicing your salmon filet into about 1-inch cubes (see photos above) and cut the skin off of the salmon. Season with salt, pepper, and garlic until lightly coated.
  • Heat sesame oil in a skillet on high heat. Once hot, add each piece of salmon leaving room between each one. Cook for 1 to 2 minutes on each side or until golden brown.
  • Meanwhile, make the sauce. Mix the coconut aminos, sriracha sauce, honey, and minced garlic in a small bowl.
  • Push the salmon pieces to the outer edges of the pan and pour the sauce into the middle on medium to high heat. Let the sauce gently simmer until it thickens. When a glaze begins to form, coat the salmon pieces in the glaze.
  • Cook rice noodles to package instructions. In a small bowl, juice 1/4 lime over the red cabbage and mix.
  • Assemble your wraps by adding the rice noodles, glazed salmon, red cabbage, and mango. Garnish with sesame seeds and enjoy!
