SMOKED SALMON DIP
This elegant smoked salmon dip is delicious on crackers -- or serve it on a brunch buffet with bagels.

Steps:
- Combine the cream cheese, sour cream, mayonnaise, lemon juice, capers, and Tabasco in a food processor fitted with the metal blade; pulse until blended. Add the salmon, dill and chives and pulse, scraping the sides of the bowl as necessary, until the salmon is finely chopped. Taste and add salt, if necessary (I usually add about ¼ teaspoon, but it depends on the saltiness of the smoked salmon). Serve as a dip with crackers or bagel chips, or as a spread with bagels.
- Make ahead: This dip can be made a few days ahead of time. However, it gets quite firm in the fridge so let it sit out at room temperature before serving, otherwise it will be hard to scoop.

SALMON, DILL AND CREAM CHEESE SPREAD
Use leftover poached or baked salmon. Canned red salmon that has been drained, skinned and boned also does the trick.

- Combine first 4 ingredients in processor. Blend until just smooth, occasionally scraping down sides of work bowl. Add smoked salmon and dill. Using on/off turns, blend just until smoked salmon is finely chopped. Season spread with salt and pepper. Transfer to small bowl. Serve with baguette rounds.

- Drain the Salmon well. Remove any skin and bones and crumble into a bowl.
- Beat the cream cheese with the milk and lemon juice until its smooth, add the salmon, salad dressing, chives, salt and pepper, beat all together until well mixed. Refrigerate for a few hours at least,but 24 hours is better as the flavours blend.
- Add slightly more milk to the mix if it's a bit too stiff as cream cheese differs from one brand to another.
- Salad cream has a more tart flavour than mayonnaise,so do us that if possible.

From Australian Woman's Day magazine. Suggested you serve with baguette toasts and or cornichons (small gherkins). Servings are a guess but makes 1 1/2 cups. I have also made this using Philadelphia ultra low fat cream cheese and it went over very well.
