SMOKED SALMON DIP

This elegant smoked salmon dip is delicious on crackers -- or serve it on a brunch buffet with bagels.

Yield 2 cups

Number Of Ingredients 10

1 cup (8 ounces) cream cheese
¼ cup sour cream
¼ cup mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons capers, drained
¼ teaspoon Tasbasco
4 ounces smoked salmon, roughly chopped
2 tablespoons fresh chopped dill
2 tablespoons fresh chopped chives
Salt, to taste

Steps:

  • Combine the cream cheese, sour cream, mayonnaise, lemon juice, capers, and Tabasco in a food processor fitted with the metal blade; pulse until blended. Add the salmon, dill and chives and pulse, scraping the sides of the bowl as necessary, until the salmon is finely chopped. Taste and add salt, if necessary (I usually add about ¼ teaspoon, but it depends on the saltiness of the smoked salmon). Serve as a dip with crackers or bagel chips, or as a spread with bagels.
  • Make ahead: This dip can be made a few days ahead of time. However, it gets quite firm in the fridge so let it sit out at room temperature before serving, otherwise it will be hard to scoop.

Number Of Ingredients 7

1 1/2 cups flaked cooked salmon (about 6 ounces)
4 ounces cream cheese
1 tablespoon fresh lemon juice
1 tablespoon prepared white horseradish
4 ounces smoked salmon
2 tablespoons chopped fresh dill
Thinly sliced baguette rounds

Steps:

  • Combine first 4 ingredients in processor. Blend until just smooth, occasionally scraping down sides of work bowl. Add smoked salmon and dill. Using on/off turns, blend just until smoked salmon is finely chopped. Season spread with salt and pepper. Transfer to small bowl. Serve with baguette rounds.

  • In a bowl, combine the cream cheese, mayonnaise and lemon juice. Add the salt, curry powder, basil and pepper; mix well. Gently stir in salmon and onions. Cover and refrigerate for at least 1 hour. Serve with crackers and vegetables.

1 squeeze fresh lemon juice

  • Process cream cheese in a food processor to soften completely; add salmon, capers, green onion, dill, cream, Worcestershire sauce, hot pepper sauce, and lemon juice. Process the mixture again until creamy and smooth.

1/4 pound (4 ounces) smoked salmon, minced

Steps:

  • Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites and/or crackers.

250 g cream cheese, not lite
210 g salmon, tinned, red
2 teaspoons lemon juice
3 teaspoons milk
1/4 teaspoon lemon zest
1 tablespoon salad cream
1 1/2 tablespoons chives, fresh and finely snipped
1/4 teaspoon pepper, black course
salt

Steps:

  • Drain the Salmon well. Remove any skin and bones and crumble into a bowl.
  • Beat the cream cheese with the milk and lemon juice until its smooth, add the salmon, salad dressing, chives, salt and pepper, beat all together until well mixed. Refrigerate for a few hours at least,but 24 hours is better as the flavours blend.
  • Add slightly more milk to the mix if it's a bit too stiff as cream cheese differs from one brand to another.
  • Salad cream has a more tart flavour than mayonnaise,so do us that if possible.

60 g soft cream cheese (spreadable)
1/4 cup thickened cream
1 lemon (juice of)
3 green onions (spring onions or scallions, finely sliced)
1 tablespoon fresh dill (snipped)

Steps:

  • Place salmon, cream cheese, cream and lemon juice in a jug and using a hand blender process until well blended (or use a small food processor).
  • Stir in onions and dill and season to taste.
  • If not serving immediately cover and chill in refrigerator and bring out about 15 to 30 minutes before serving.
