GRILLED SALMON SKEWERS WITH GARLIC AND DIJON



Grilled Salmon Skewers with Garlic and Dijon image

These take less than 30 minutes to make and you end up with such juicy, flaky and flavorful salmon... you'll want seconds!

1.5 lbs salmon fillets (cut into 1-inch squares)
2 large lemons thinly sliced
16 10-inch bamboo skewers
2 Tbsp parsley (freshly chopped)
2 large or 3 small garlic cloves (pressed)
1/2 Tbsp Dijon mustard (we used grey poupon)
1/2 tsp salt
1/8 tsp ground black pepper
2 Tbsp light olive oil (not extra virgin, pick something with a higher smoke point)
2 Tbsp of fresh lemon juice from 1/2 large lemon or 1 small lemon

Steps:

  • Prep: Soak bamboo skewers at least 1 hour to keep them from catching fire. Preheat Grill to medium heat (about 375˚F).
  • In a medium bowl, stir together all of the marinade ingredients: 2 Tbsp chopped parsley, 2 pressed garlic cloves, 1/2 Tbsp dijon, 1/2 tsp salt, 1/8 tsp pepper, 2 Tbsp olive oil, 2 Tbsp lemon juice.
  • Double skewer the salmon and lemon slices folded in half intermittently onto two skewers at a time (The double skewer aids in turning the salmon kebobs on the grill). Brush both sides of skewered salmon with marinade.
  • Oil the grates then carefully place salmon skewers onto the hot BBQ. Grill kebobs for 3-4 minutes per side or until salmon is cooked through and opaque.

4 (6 ounce) salmon fillets
⅓ cup Dijon mustard
4 large cloves garlic, thinly sliced
1 red onion, thinly sliced
1 teaspoon dried tarragon
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch pan with cooking spray.
  • Arrange the salmon skin side down in the prepared pan, and lightly coat with the Dijon mustard. Place the garlic and onion slices on the salmon fillets. Season with tarragon, salt, and pepper.
  • Bake 20 minutes in the preheated oven, or until salmon is easily flaked with a fork.

2 tablespoons parsley, chopped
3 small garlic clove, pressed
1/2 tablespoon Dijon mustard
1/2 teaspoon salt (we love sea salt)
1/8 teaspoon black pepper, freshly ground
2 tablespoons light olive oil (not extra virgin)
2 tablespoons fresh lemon juice
lemon slice, for effect

Steps:

  • Preheat the oven to 450° F. Line rimmed baking sheet with foil.
  • In a small bowl, mix together: 2 Tbsp parsley, 2-3 pressed cloves garlic, ½ Tbsp Dijon, ½ tsp salt, ⅛ tsp pepper, 2 Tbsp oil and 2 Tbsp lemon juice.
  • Slice salmon into 4 portions and arrange them on a lined baking dish, keeping salmon skin-side-down.
  • Generously brush top and sides of salmon with sauce and top with fresh lemon slices.
  • Bake at 450°F for 12-15 min or until just cooked through and flaky. Don't over-cook.

1/8 cup mild olive oil
2 Tbsp fresh lemon juice

Steps:

  • Mix well in small bowl. Coat both sides of fish very well. Thicker on top. Preheat oven to 450. Line pan w Foil. Bake about 8-9 minutes for thin fillet and about 15 for thick cut. DO NOT OVER-COOK!! Check for flakiness. Enjoy

  • In a small bowl, add the ingredients for the chicken marinade and stir stir to combine. Place chicken thighs into a mixing bowl or in a large ziploc bag, add the marinade and stir to combine. Marinate at least 6 hours or preferably overnight.
  • Trim and halve the brussels sprouts (see instruction below). Place them on a parchment or silpat lined baking sheet and sprinkle with 1/2 tsp salt, 1/4 tsp pepper and 2 tsp olive oil. Toss to combine then scoot the sprouts to edges of the pan, keeping them in a single layer.
  • Place marinated thighs, skin-side-up, in the center of the pan about 1/2" apart. Bake uncovered at 400˚F for 25 minutes (30 minutes for bone-in chicken). For crispier skin, broil on high heat for 2-4 minutes or until skins have browned.
