1 lb salmon (skin on)
1 orange (ZEST and JUICE)
1 orange (JUICE)
3 Tbsp soy sauce
2 Tbsp honey

Steps:

  • Preheat the oven to 425 and line a baking sheet with parchment paper, folding up the edges to keep keep sauce in.
  • Combine juice from 2 oranges, zest from 1 orange, soy sauce, and honey in a bowl. Whisk well.
  • Pour a few spoonfuls of sauce on the prepared baking pan. Place salmon skin up and pour remaining sauce over it.
  • Bake for about 7 minutes and carefully flip salmon skin down. Spoon some sauce over the top of the salmon.
  • Bake for 18-20 minutes, until salmon is done. Bake time will depend on the size and thickness of salmon filet.
  • Enjoy salmon over rice or quinoa.

These salmon cakes are crisp on the outside with flavorful bites of flaked salmon and they always disappear fast! Make sure to serve with our homemade tartar sauce.

1 lb fresh salmon filet*
Garlic Salt - I use Lawry's brand
Black Pepper
Olive Oil
1 medium onion (1 cup finely diced)
1/2 red bell pepper (diced)
3 Tbsp unsalted butter (divided)
1 cup Panko bread crumbs (Japanese Style crumbs)
2 large eggs (lightly beaten)
3 Tbsp mayo
1 tsp Worcestershire sauce
1/4 cup minced fresh parsley

Steps:

  • Preheat Oven to 425˚F. Line a rimmed baking sheet with parchment or a silpat. Place salmon skin-side down, brush with olive oil and season with garlic salt and black pepper. Bake uncovered for 10-15 min or just until cooked through (my thinner cut salmon was closer to 10 min). Remove from oven, cover with foil and rest ten minutes. Discard skin, flake salmon with forks, remove any bones, and cool to room temp.
  • Heat a medium skillet over medium heat. Add 1 Tbsp olive oil, 1 Tbsp butter and finely diced onion and bell pepper. Saute until softened and golden (7-9 minutes) then remove from heat.
  • In a large mixing bowl, combine cooled flaked salmon, sautéed onion and pepper, 1 cup bread crumbs, 2 beaten eggs, 3 Tbsp mayo, 1 tsp Worcestershire sauce, 1 tsp garlic salt, 1/4 tsp black pepper, and 1/4 cup fresh parsley. Stir to combine then form into 13-14 patties. It's easy to portion patties using a flat ice cream scoop then pressing them into 1/3 to 1/2" thick patties.
  • Heat 1 Tbsp oil and 1 Tbsp butter in a large pan over medium heat and once butter is done sizzling, add half of the salmon cakes and sauté 3 1/2 to 4 min per side or until golden brown and cooked through. If salmon cakes brown too quickly, reduce heat. Remove to a paper-towel lined plate. Add remaining 1 Tbsp oil and 1 Tbsp butter and repeat cooking remaining salmon cakes.

1/4 cup lightly packed brown sugar
1 small garlic clove, minced
1/2 tablespoon louisiana hot sauce
4 boneless salmon fillets, about 5 oz each

1 green onion, thinly sliced

Steps:

  • Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.
  • Arrange fish on a broiling pan on a rack over a rimmed baking sheet. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Garnish with green onions.

Easy Baked Asian Orange Salmon (or Trout) image

Easy baked salmon, with an Asian-inspired orange-soy sauce. Ready in just 15 minutes!

2 salmon or trout fillets (long, thin skin-on fillets or *See Notes)
1 Tbsp olive oil (plus more for greasing the pan)
Salt and freshly ground pepper
1 medium orange (sliced, for topping)
4 Tbsp orange juice (freshly squeezed recommended)
3 Tbsp brown sugar
2 Tbsp soy sauce
1 tsp sesame oil
Splash of Sriracha (optional, if you'd like a touch of heat)

Steps:

  • Preheat oven to 400F., with the oven rack in the centre of the oven.
  • Add a little olive or cooking oil onto a baking sheet and use a brush to evenly coat the bottom of the baking sheet. Set aside.
  • Pat the salmon or trout fillets dry with paper towel. Brush the top of the salmon lightly with olive oil, then season with salt and freshly ground pepper. Lay the fillets onto the prepared baking sheet, skin side down.
  • Make the sauce by stirring together all the sauce ingredients. Set aside until needed.
  • *Note: Baking time will vary depending on the size/thickness of your fish. Your first baking period should produce a fish that is cooked/lighter coloured on the outside, but still not quite cooked through the thickest part. Extend your baking time if needed.When oven is preheated, place the salmon into the oven and roast for 10 minutes. (Fish should be cooked-looking on the outside edges with the thicker middle still a little pink at this point). Remove from oven and baste the fish generously with some of the sauce and place a few orange slices on top, if desired. Return to the oven for an additional 5 minutes. (Fish should be evenly coloured at this point.
  • Remove fish from oven and again baste generously. Switch the oven from the Bake setting to the Broil setting (use the "Hi" setting if your oven has both Hi and Lo). Return the fish to the oven to the same middle oven rack and broil for 1 minute. Baste again and broil for another 1-2 minutes. Watch closely so the sauce doesn't begin to scorch, as that will introduce a bitter taste to the sauce.
  • Remove from oven and spoon any sauce that may be in the pan over-top of the salmon. Serve immediately.

1/3 cup cooking oil, for frying
LEMON SAUCE:
2 tablespoons salted butter
4 teaspoons all-purpose flour
3/4 cup whole milk
2 1/2 tablespoons fresh lemon juice
1/4 teaspoon salt
Dash of garlic salt
Pinch of dried dill weed, optional
1/8 teaspoon cayenne pepper

Steps:

  • For the Salmon Cakes: Drain the salmon (reserve the liquid) and pick out the skin, and bones, if desired. Flake the salmon and set aside. In a medium mixing bowl, whisk the eggs; whisk in the onion, dill weed, celery salt, garlic salt, and salt and pepper. Add the potato flakes and crushed crackers, give it a little stir and let it set for a few minutes. Gently stir in the flaked salmon. If it seems a bit too dry, add 1 tablespoon of the reserved liquid from the salmon at a time until right consistency to form patties. Shape the mixture into 5 or 6 patties, about 1/2-inch thick. Heat the oil in a large skillet over medium/medium-high heat. Fry patties about 5 minutes on each side, until golden brown. For the Lemon Sauce: Melt butter in a 1-quart saucepan over medium heat. FOR THE SALMON CAKES:1 pound salmon filet
1 tablespoon olive oil
1/2 cup mayonnaise
1 tablespoon dijon mustard
1 teaspoonworcestershire sauce

FOR THE LEMON DILL SAUCE:1 cup mayonnaise

Steps:

  • Preheat oven to 425 degrees.
  • Line a baking sheet with foil and place the salmon on the baking sheet. Drizzle with olive oil and roast for 15 minutes or until fish flakes easily with a fork. Cool to room temperature.
  • When the fish is cool enough to handle, flake the salmon into bite sized pieces using a fork and transfer to a large bowl. If any juices begin to collect in the bottom of the bowl, drain the fish before moving forward with the remainder of the recipe.
  • In a small bowl, stir together the mayonnaise, dijon, worcestershire sauce, egg, pepper and parsley.
  • Add the mayonnaise mixture to the salmon and, carefully, fold together being careful not to break up the fish too much. Gently fold in the breadcrumbs.
  • Form the salmon mixture into 6 patties and transfer to a baking sheet lined with parchment. Chill for 15-20 minutes. (Salmon cakes can be frozen at this point. Wrap each cake tightly in plastic wrap and then foil. Unwrap and cook from frozen by following the instructions below.)
  • While the salmon cakes chill, make the sauce by combining the mayonnaise, lemon juice, lemon zest, mustard, salt, pepper and dill in a small bowl. Cover and refrigerate until ready to serve.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the salmon cakes and cook over medium heat until golden, approximately 3-4 minutes. (Longer if frozen) Turn the salmon cakes over with a spatula. Cook until golden brown, crispy and cooked through, approximately 3 minutes.

1 strip orange zest, 1/2-inch
1/4 cup shallot, julienned
1/2 bay leaf
1 teaspoon whole black peppercorn
1 garlic clove, smashed
1 sprig fresh thyme
1/3 cup dry white wine
1/2 cup heavy cream
8 ounces cold unsalted butter, cut into small pieces (2 sticks)

24 ounces salmon fillets, skin on, 6 ounces each
2 tablespoons canola oil or 2 tablespoons vegetable oil

Steps:

  • Combine the orange juice, strip of orange zest, shallots, bay leaf, peppercorns, garlic, thyme and wine in a saucepan, and bring to a boil. Reduce the heat to a simmer and cook until the liquid has reduced by three-fourths; about 8 minutes.
  • Add the heavy cream and cook until the liquid has reduced by half; about 4 minutes longer.
  • Whisk in the cold butter little by little, whisking until the sauce is smooth and thick and all the butter is incorporated; 3 to 4 minutes. Do not allow the sauce to boil.
  • Strain the sauce through a fine-mesh sieve into another saucepan, pressing on the solids to extract all the liquid; discard the solids.
