At our house we opt for healthy foods, and this lemony salmon with basil is a knockout in the good-for-you category. We have it with asparagus or zucchini. -Shanna Belz, Prineville, Oregon

4 salmon fillets (6 ounces each)
2 teaspoons olive oil
1 tablespoon grated lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons thinly sliced fresh basil
2 medium lemons, thinly sliced
Additional fresh basil

Steps:

  • Preheat oven to 375°. Place salmon in a greased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with lemon zest, salt, pepper and 2 tablespoons basil; top with lemon slices., Bake 15-20 minutes or until fish just begins to flake easily with a fork. If desired, top with additional basil.

1-1/2 cups fresh basil leaves
3 tablespoons plus 2 teaspoons olive oil
1-1/2 teaspoons minced garlic
3/4 teaspoon pepper
1/2 teaspoon lemon juice
1/4 teaspoon salt
1 tablespoon plus 4 teaspoons shredded Parmesan cheese, divided
4 salmon fillets (6 ounces each)

Steps:

  • For pesto, combine the basil, oil, garlic, pepper, lemon juice, salt and 1 tablespoon Parmesan cheese in a food processor; cover and process until finely chopped. , Place the salmon in a greased 13-in. x 9-in. baking dish. Spread 2 tablespoons pesto over fillets. (Cover and refrigerate remaining pesto for another use.) , Bake, uncovered, at 400° for 20-22 minutes or until fish flakes easily with a fork. Sprinkle with remaining cheese. Bake 2-3 minutes longer or until cheese is melted.

2 salmon fillets (5 ounces each)
1 tablespoon butter, melted
1 tablespoon minced fresh basil
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
Lemon wedges, optional

Steps:

  • Prepare campfire or grill for medium heat. Place each fillet, skin side down, on a piece of heavy-duty foil (about 12 in. square). Mix melted butter, basil, lemon juice, salt and pepper; spoon over salmon. Fold foil around fish, sealing tightly., Cook on campfire or in covered grill until fish just begins to flake easily with a fork, 10-15 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.,

¼ cup olive oil, divided
1 ⅓ pounds salmon fillet
salt and ground black pepper to taste
1 pound fresh asparagus, trimmed
2 cloves garlic
⅓ cup grated Parmesan cheese
⅓ cup chopped fresh basil
1 tablespoon lemon juice
1 tablespoon fresh lemon thyme
1 lemon, zested
½ teaspoon salt
½ teaspoon ground black pepper
1 cup fresh bread crumbs

Steps:

  • Rub 1/2 teaspoon olive oil over the salmon and season lightly with salt and pepper. Transfer salmon to the center of the grill pan.
  • Place asparagus in a bowl. Drizzle 1 1/2 teaspoon olive oil over asparagus; season with salt and pepper. Mix well and arrange around salmon.
  • Place garlic cloves in a food processor or blender; process until crushed. Add Parmesan cheese, basil, lemon juice, lemon thyme, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon black pepper; blend well. Add remaining 3 tablespoons oil and bread crumbs; pulse until well mixed.
  • Top salmon with herb mixture, forming a crust.
  • Set Panasonic Countertop Induction Oven to "Auto Cook". Select Fish with Vegetables setting. Place the grill pan in the oven and cook until salmon flakes easily with a fork and asparagus is tender, about 18 minutes.

4 pieces filleted salmon
1/2 lemon
salt & pepper
2 tablespoons flour
2 onions, cut into thin rings
4 tablespoons butter
3 tablespoons oil
1/2 cup fish stock

Steps:

  • Season the fillets with salt and pepper, squeeze the lemon juice over them, and leave to marinate for a short time.
  • Dredge the onion rings in the flour. Shake off the excess.
  • Dredge the fish in the remaining flour, then brown quickly in the combined butter and oil for 5-6 minutes on each side. Brown the onion rings as well (after the fish have been removed from the pan).
  • Arrange the fish on a warm plate and cover with the onion rings. Deglaze the pan with the fish stock and serve as a sauce over the salmon.
  • Serve with boiled potatoes.

1 cup packed fresh basil leaves
1 (1 pound) fillet salmon, skinned and deboned
½ medium lemon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking pan with aluminum foil.
  • Drizzle olive oil onto the prepared pan in an area slightly larger than the salmon fillet. Place tomatoes in a layer on the oiled foil; sprinkle with salt and pepper. Layer basil over top and place salmon on the basil. Squeeze lemon over salmon and season again with salt and pepper.
  • Bake in the preheated oven until fish flakes easily with a fork, 30 to 40 minutes.
