Soy Glazed Salmon with Pineapple Rice

nonstick cooking spray
1 can (20 oz) pineapple chunks, drained, juice reserved
2 cups Minute® Brown Rice
1/2 cup reduced sodium soy sauce
1 tbsp sesame oil
1 tbsp fresh grated ginger
4 (4 oz each) salmon fillets
1 tbsp cornstarch
1 tbsp water
1 green onion, thinly sliced (optional)
1 tbsp black sesame seeds (optional)
1 tbsp white sesame seeds (optional)

Steps:

  • Serve the family a dinner they'll love with this restaurant-style, sweet and tangy salmon and rice dish featuring whole-grain brown rice and juicy pineapple chunks. Step 1
  • Preheat oven to 400°F. Step 2
  • Line a 9×13-inch baking pan with aluminum foil; coat foil with nonstick cooking spray. Step 3
  • Chop pineapple chunks, set aside. Step 4
  • Prepare rice according to package directions; stir in chopped pineapple. Step 5
  • Combine reserved pineapple juice, soy sauce, sesame oil and ginger in a medium bowl. Place salmon fillets on prepared baking pan. Step 6
  • Brush filets with sauce. Bake for 10 minutes, or until cooked to desired doneness. Step 7
  • Combine remaining sauce, cornstarch and water in a small saucepan. Bring to a boil and cook, stirring constantly, until sauce thickens. Step 8
  • Reduce heat and simmer for 2 minutes. Step 9
  • Serve salmon and sauce over pineapple rice. Garnish with green onions and sesame seeds, if using.

1 ½ pounds salmon fillets
1 serving cooking spray
½ cup water
1 (8 ounce) can crushed pineapple
¼ cup reduced-sodium teriyaki sauce
3 tablespoons pineapple preserves
3 tablespoons Asian sweet chili sauce
2 teaspoons reduced-sodium teriyaki sauce

Steps:

  • Heat a large saute pan over medium-high heat for 2 minutes. Coat both sides of salmon fillets with cooking spray and add to the hot pan. Cook for 4 minutes. Flip, cover, and cook for 4 minutes more.
  • Whisk water, crushed pineapple, and 1/4 cup teriyaki sauce together in a bowl. Pour sauce over salmon; reduce heat to medium-low, cover, and cook for 2 minutes.
  • Stir pineapple preserves, chili sauce, and remaining 2 teaspoons teriyaki sauce together. Spoon evenly over salmon, cover, and remove from heat. Let stand for 1 to 2 minutes.

3 Salmon Filets
3 cups of rice
Peppers, Onion, Carrots, broccoli
1 Fresh Pineapple or canned works
Brown Sugar
Soy Sauce, Lime Juice, Teriyaki Sauce

Steps:

  • 1. Sear the Fish in a hot pan, on both sides. 2. In a second hot pan add the chopped pineapple and brown sugar along with the other liquids. Add water to make sure there is at least 1/4 inch of liquid in this pan. 3. Move the seared fish to on top of the pineapples, cover 4. In the first pan, add the chopped veggies and sweat, 5. When the broccoli is bright green remove just the broccoli, set aside, then add the rice and soy sauce, mix well 6. In a large serving platter pour out the fried rice, cover with the broccoli, then the fish and finally the pineapples and sauce over the top of everything.
