1 tablespoon butter, melted
½ teaspoon garlic salt, or to taste
1 pinch ground white pepper, or to taste
1 lime, zested and juiced
2 pounds fresh salmon fillet
½ cup mango chutney
¾ teaspoon sriracha sauce, or more to taste
2 tablespoons chopped fresh cilantro

Steps:

  • Combine melted butter, garlic salt, white pepper, lime zest, and half of the lime juice, reserving remainder for later.
  • Place 2 tablespoons of water in the rear and front of a Panasonic Countertop Induction Oven grill pan. Place salmon skin-side down on the grill pan, with the thickest part of the salmon toward the center of the pan.
  • Brush butter mixture over salmon and slide grill pan into position. Close the oven door and press "Auto Cook." Select the fish setting, 3, and press "Start." Turn the dial to select 2 pounds and press "Start" again.
  • Stir remaining lime juice, mango chutney, and sriracha sauce together in a bowl.
  • Slide the grill pan out when there are 4 minutes remaining on the timer. Pour mango mixture evenly over the salmon. Slide the grill pan back in place, close the door, and continue cooking until salmon flakes easily with a fork, 2 to 4 minutes more.
  • Remove the salmon from the oven and transfer to a plate. Garnish with cilantro.

12 -16 ounces salmon fillets (6-8 oz per person, thin filets are better because they will cook more evenly)
2/3-1 cup mango juice (1/3 - 1/2 cup per person, either puree your own from fresh mangoes or Goya mango juice will do just)
scallion, chopped (for garnish, approximately a small handful per fillet)
olive oil (small amount for cooking)

Steps:

  • The skin will stick to the pan, so if it comes off easily, trim the skin off the salmon filets before cooking.
  • Otherwise, just wait for it to come off during the cooking process.
  • Heat enough oil to coat the pan, and then add the salmon fillets.
  • Pour approximately 1/3 the mango juice over the filets, then after a few minutes (3-5 depending on how thick the fillet is), flip over and add another 1/3 of the mango juice to the pan.
  • Cook the fillet until no longer pink, then remove from the pan.
  • Sprinkle with chives and serve with rice.

1 ¼ pounds skin-on salmon fillet, cut into 4 portions
1 tablespoon extra-virgin olive oil
½ teaspoon kosher salt, divided
1 pound sweet mini bell peppers
2 medium red onions, quartered

Steps:

  • Preheat a gas grill to high, build a fire in a charcoal grill or build a campfire and let it burn down to high heat (about 500 degrees F).
  • Brush or drizzle salmon with oil and sprinkle with 1/4 teaspoon salt. Sprinkle peppers and onions with the remaining 1/4 teaspoon salt.
  • Oil the grill rack (see Tip). Place the salmon, skin-side up, on the grill, along with the peppers and onions. Grill the salmon until browned, 3 to 4 minutes. Using a metal spatula, gently nudge one of the pieces: it should release from the grill without much force, but if it feels stuck, continue cooking for another minute. When the salmon releases easily, flip and continue cooking until browned and the flesh is opaque, about 3 minutes more. Cook the peppers and onions, turning frequently, until tender and well browned, 8 to 10 minutes total.
  • Serve the salmon with the vegetables.

1 cup heavy cream
Juice of 1 lemon, more if desired
2 tablespoons finely sliced chives
2 ripe mangoes, peeled and cut into 1/8-inch slices
Salt and freshly ground black pepper
3 4-by-12-inch thin slices smoked salmon
Fleur de sel or other sea salt
Coarsely ground black pepper
Extra virgin olive oil

Steps:

  • In a medium bowl, whisk cream until it forms stiff peaks. Add juice of 1 lemon and chives, and mix well. Taste mangoes; if they are very sweet, you may wish to add lemon juice to cream mixture. Season to taste with salt and freshly ground pepper.
  • On a cutting board, place one slice of smoked salmon. Using a spatula, spread a thin layer of lemon cream on salmon, covering it completely. Cover cream with slices of mango. Place a second layer of salmon on the mango, and again cover with a layer of cream and a layer of mango. Top with a layer of smoked salmon.
  • Cut into four rectangles of equal size, and transfer to four plates. Sprinkle the napoleons with fleur de sel and coarse pepper. Drizzle them with olive oil, and serve immediately.

3 ripe mangoes, cut into small cubes
3/4 cup plain Greek yogurt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400°. On a work surface, unfold the puff pastry and cut into 6 rectangles. Place on a parchment-paper-lined baking sheet and sprinkle with sugar.
  • Bake until golden-brown, about 15 minutes, then lower the heat to 325° and bake for 5 minutes more. Let cool.

Here you have one of the ultimate summer meals! Flaky tender salmon is topped with a bright and creamy mango avocado salsa and served alongside of bed or rich coconut rice. Sure to impress anyone lucky enough to try it!

4 (6 oz) skinless salmon fillets
3 Tbsp olive oil, (plus more for grill)
2 tsp lime zest
3 Tbsp fresh lime juice
3 cloves garlic, (crushed)
Salt and freshly ground black pepper, (to taste)
1 1/2 cups Zico Coconut Water
1 1/4 cups canned coconut milk
1 1/2 cups jasmine rice, (rinsed well and drained well)
1/2 tsp salt
1 large mango, (peeled and diced)
3/4 cup chopped red bell pepper ((1/2 large))
1/4 cup chopped fresh cilantro
1/3 cup chopped red onion, (rinsed under water and drained)
1 large avocado, (peeled and diced)
1 Tbsp fresh lime juice
1 Tbsp olive oil
1 Tbsp Zico Coconut Water
Salt and pepper, (to taste)

Steps:

  • In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each).
  • Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
  • Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).
  • While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil.
  • Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.
  • While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
  • Serve salmon warm with coconut rice top with avocado mango salsa.

4 salmon fillets (approximately 520g/1lb 3oz)
1 tsp sea salt flakes
1 tsp freshly ground black pepper
½ tsp dried mixed herbs
1 tsp cayenne pepper
2 tbsp butter
1 onion, sliced
4 garlic cloves, finely chopped
½ red pepper, seeds removed, sliced
½ carrot, julienned (cut into thin strips)
1 tsp fresh thyme leaves
4 tbsp mango chutney
squeeze lemon juice
½ Scotch bonnet chilli, seeds removed, sliced

Steps:

  • Rub the salmon with the salt, black pepper, herbs and cayenne. Set aside in the fridge to marinate for at least 1 hour.
  • Melt the butter in a large frying pan over a medium heat. Add the salmon and cook on both sides until cooked through and browned. Remove from the pan and set aside. Add the onion, garlic, red pepper, carrot and thyme and cook until the vegetables are caramelised. Remove the vegetables and add the mango chutney, 100ml/3½fl oz water and lemon juice to the pan. Cook until a thick sauce is formed. Add the vegetables back to the pan along with the salmon and simmer for 5 minutes, basting the salmon in the sauce. Serve immediately.
