Crustless Salmon Quiche image

An easy crustless salmon quiche ready in 30 minutes is a great low carb lunch for Spring.

2 shallots (chopped)
1 tablespoon olive oil
1 cup spinach (defrosted)
3.5 oz salmon (cooked)
2 tablespoons dill (chopped)
1 teaspoon garlic powder
8 medium eggs
1/2 cup cream (heavy)
1/4 cup Parmesan (shredded)
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat the oven to 180C/350F degrees.
  • Heat the olive oil in a large saucepan and cook the onions for 3-4 minutes until they are soft.
  • Add the spinach, salmon, dill and garlic powder. Gently mix and remove from the heat.
  • In a medium bowl, beat the eggs with the cream and the Parmesan cheese.
  • Season with the salt and pepper.
  • Spoon the salmon spinach mixture into 6 4 inch quiche cases (or one large 8 inch tin).
  • Pour the egg mixture over the filling
  • Bake for 20-30 minutes until firm.
  • Enjoy warm or cold.

1 cup 1/2 and 1/2 or heavy whipping cream
2 cups milk
3 cups shredded cheddar cheese, divided
1 teaspoon seasoning salt
1/4 teaspoon ground black pepper
2- 5 ounce pouches of salmon, drained ( canned salmon will work too)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine eggs, 1/2 and 1/2 or whipping cream, and milk. Whisk until combined.
  • Stir in 2 1/2 cups cheddar cheese, seasoning salt, pepper, and salmon
  • Pour into a greased 9x13 pan.
  • Sprinkle with remaining cheese.
  • Bake for 45-50 minutes or until center is set.
  • Let rest five minutes.
  • Cut into pieces and serve.

4 large egg whites
1/4 cup cold water
1 cup low fat cottage cheese
1/4 teaspoon kosher salt
1/4 teaspoon ground pepper
2 teaspoons minced fresh dill
2 teaspoons minced fresh chives
3 ounces smoked salmon (roughly chopped)
2 tablespoons goat cheese (chevre) (crumbled)

Steps:

  • Preheat the oven to 375 degrees F. Light coat a 9-inch pie dish with cooking spray.
  • In a large bowl, combine the eggs, egg whites, water, cottage cheese, salt and pepper. Whisk vigorously to break up the cottage cheese. Stir in the dill and chives.
  • Pour the egg mixture into the prepared pie dish. Sprinkle the smoked salmon goat cheese throughout the egg mixture.
  • Bake until the egg is just set and a small, sharp knife inserted in the center comes out clean, about 35 minutes.
  • Let the quiche rest for 5 minutes, then cut into 6 wedges. Serve.

1 unbaked pastry shell (10 inches)
1 medium onion, chopped
1 tablespoon butter
2 cups shredded Swiss cheese
1 can (14-3/4 ounces) salmon, drained, flaked and cartilage removed
5 large eggs
2 cups half-and-half cream
1/4 teaspoon salt
Minced fresh parsley, optional

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack. , In a small skillet, saute onion in butter until tender. I have never served it to someone who didn't love it and beg for the family recipe after. We always make two and freeze one for later! It is excellent paired with a side of grilled asparagus.

¼ onion, diced
4 eggs
1 (12 fluid ounce) can evaporated milk
1 pinch salt
1 pinch ground black pepper
1 pinch garlic powder
1 pinch dried parsley
1 pinch dried sage
1 (14.75 ounce) can salmon, drained, flaked and bones removed
1 (9 inch) frozen pie crust
½ cup shredded Cheddar cheese, divided

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
