Spaghetti Aglio e Olio image

No two spaghetti aglio e olio recipes are alike, but this one is pretty true to the classic method. The key is slowly toasting the garlic slices to a perfect golden-brown in the olive oil. If it's too light, you don't get the full flavor and if it's too dark it gets bitter. My advice? Do it perfectly.

1 pound uncooked spaghetti
6 cloves garlic, thinly sliced
½ cup olive oil
¼ teaspoon red pepper flakes, or to taste
salt and freshly ground black pepper to taste
¼ cup chopped fresh Italian parsley
1 cup finely grated Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and transfer to a pasta bowl.
  • Combine garlic and olive oil in a cold skillet. Cook over medium heat to slowly toast garlic, about 10 minutes. Reduce heat to medium-low when olive oil begins to bubble. Cook and stir until garlic is golden brown, about another 5 minutes. Remove from heat.
  • Stir red pepper flakes, black pepper, and salt into the pasta. Pour in olive oil and garlic, and sprinkle on Italian parsley and half of the Parmigiano-Reggiano cheese; stir until combined.
  • Serve pasta topped with the remaining Parmigiano-Reggiano cheese.

Kosher salt
1 pound dried spaghetti, such as DeCecco
1/3 cup good olive oil
8 large garlic cloves, cut into thin slivers
1/2 teaspoon crushed red pepper flakes
1/2 cup minced fresh parsley
1 cup freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Bring a large pot of water to a boil. Add 2 tablespoons of salt and the pasta and cook according to the directions on the package. Set aside 1 1/2 cups of the pasta cooking water before you drain the pasta.
  • Meanwhile, heat the olive oil over medium heat in a pot large enough to hold the pasta, such as a 12-inch saute pan or a large, shallow pot. Add the garlic and cook for 2 minutes, stirring frequently, until it just begins to turn golden on the edges-don't overcook it! Add the red pepper flakes and cook for 30 seconds more. Carefully add the reserved pasta-cooking water to the garlic and oil and bring to a boil. Lower the heat, add 1 teaspoon of salt, and simmer for about 5 minutes, until the liquid is reduced by about a third.
  • Add the drained pasta to the garlic sauce and toss. Off the heat, add the parsley and Parmesan and toss well. Allow the pasta to rest off the heat for 5 minutes for the sauce to be absorbed. Taste for seasoning and serve warm with extra Parmesan on the side.

7 to 9 oz spaghetti ((240g))
6 cloves garlic (minced)
1/4 cup olive oil
2 tbsp parsley
1/4 cup chives
1/2 cup almonds (chopped)
2 tbsp unsalted butter
1 cup heavy cream
1/2 + 1/8 cup cooking water from spaghetti
1/2 cup Parmesan cheese (for serving)

Steps:

  • In a large pan, bring water to a boil. Add salt and oil.
  • In a skillet heat olive oil and add garlic. Cook until garlic starts to get golden brown.
  • Remove from heat. Add chives, parsley and almonds.
  • Add butter. When butter is completely melted, add heavy cream.
  • When water begins to boil, add spaghetti and cook according to package instructions.
  • When pasta is almost ready remove 1/2 + 1/8 cup cooking water from spaghetti and mix with sauce. Stir a little and bring sauce to a boil.
  • Drain spaghetti and mix with sauce.
  • Serve with parmesan cheese.

400 g salmon fillets
200 g angel hair pasta
1 teaspoon mixed herbs (or any seafood herbed seasoning)
1 teaspoon salt
1 lemon
2 teaspoons red chili pepper flakes
4 chili peppers, whole
6 garlic cloves
6 tablespoons olive oil
1 teaspoon butter

Steps:

  • Marinade the salmon fillet for about 10 minutes with mixed herbs and a few drops of lemon juice.
  • Mince garlic.
  • Glaze salmon with 1 tbsp olive oil and grill in oven for about 8 minutes or until salmon is no longer "translucent".
  • Cook angel hair pasta in a pot of boiling water for about 2 minutes (until al dente).
  • While pasta is cooking, heat the rest of the olive oil over a medium flame and add garlic and chilli flakes.
  • When garlic becomes fragrant, turn off the fire.
  • Drain pasta and mix it into the olive oil mixture.
  • Sprinkle salt and mix.
  • Pour pasta onto plates and top with grilled salmon.
  • Smear butter on top of salmon and let it melt.
  • Garnish with whole chillis and serve.

8 oz. (226 g) spaghetti
2 tablespoons extra-virgin olive oil
4 cloves garlic, minced
8 oz. (226 g) shelled, deveined tiger prawn or medium-sized shrimp, tail-on
1/2 teaspoon red pepper flakes
1/2 teaspoon salt or to taste
1 tablespoon chopped Italian parsley
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Bring a pot of water to boil. Cook the spaghetti according to the package instructions. Drain and set aside. Save 3 tablespoons of the pasta water.
  • Heat a skillet on medium heat and add the olive oil. Add the garlic and saute for 30 seconds, add the shrimp, chili flakes and salt. Cook the shrimp until both sides turn white, then add the spaghetti and water into the skillet. Stir to combine well.
  • Add the parsley into the skillet, stir to distribute well. Turn off the heat and add the Parmesan cheese. Dish out and serve immediately.

1/4 cup Moroccan olive oil (mina's olive oil)
3/4 cup panko bread crumbs
1/4 teaspoon salt
Pinch chilli flakes
1 tablespoon minced fresh basil
3/4 cup Moroccan Olive Oil (mina's olive Oil)
8-14 cloves garlic (sliced thinly)
1/2 teaspoon salt and black pepper
1/4 teaspoon chilli flakes
2 tablespoons minced fresh basil leaves
1/2 cup parmesan cheese freshly grated
1/4 cup fresh basil leaves (minced)
1 pound cooked spaghetti pasta aldente
Extra olive oil for garnish
Parmesan cheese for garnishing
Extra fresh basil and chilli flakes for garnish.

Steps:

  • In a deep 9 inch skillet, start by making the breadcrumbs.
  • Add the mina olive oil to the skillet over medium heat and then go in with the breadcrumbs and remaining ingredients except for the basil. Toast the bread until it's nice and golden. This should take around 7 minutes.
  • Once the bread crumbs have turned a beautiful golden color, add in the fresh basil and remove from the skillet onto a plate.
  • While the same skillet with a kitchen towel and start making the olive oil pasta sauce.
  • Over medium heat add the olive oil, garlic and seasoning. Toss for a couple of minutes and then add in the basil and continue cooking until the garlic slices turn a beige or pale yellow color.
  • Be careful not to overcook the garlic as it will turn bitter.
  • At that point add in the cooked spaghetti and toss it well with the olive oil sauce. Toss in some parmesan cheese and serve right away.
  • Top the spaghetti with bread crumbs and any extra garnishes you want. Serve right away and enjoy!!
