MY MOTHER'S SWISS STEAK
My mother's recipe. Serve with potatoes, rice, or noodles.

- Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
- Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
- Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

- In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into four oval patties. In a large skillet, brown patties in oil on both sides. Drain., In a small bowl, combine diced tomatoes and tomato sauce. Pour over patties. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until meat is no longer pink. Freeze option: Freeze individual cooled steaks with some tomato mixture in resealable freezer bags. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary.

- Preheat oven to 350°F.
- Using a meat mallet, pound meat to ½″ thickness.
- Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
- Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
- Place onion & carrot in the bottom of the pot. Top with browned steaks.
- Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.
- Serve over mashed potatoes.

SALISBURY STEAK
Salisbury Steak is an easy comfort food dinner that's reminiscent of tv dinners, but SO much better!

- Add breadcrumbs to a large mixing bowl. Grate onion over the bowl and stir grated onion into the breadcrumbs. There will likely be some onion "juice" that goes into the bowl as well, and that's good. It will add moisture as well as flavor.
- Add remaining patty ingredients and use hands to mix until just combined.
- Use the side of your hand to lightly score the meat in half. Then score each half into 3 sections. Now you have 6 roughly equally sized sections. Scoop out the meat in each section and form into oval shaped patties.
- Heat 1 Tbsp each butter and olive oil in a large skillet over MED HIGH heat. Once hot, add patties and sear about 4-5 minutes per side, until cooked through. Transfer patties to a plate and keep warm.
- Reduce skillet heat to MED and add 1 Tbsp butter. Add sliced onions and cook for 3 minutes. Add mushrooms and cook another 4-5 minutes.
- Stir in beef broth, scraping the bottom of the skillet to loosen any browned bits. Add tomato paste, soy sauce, Worcestershire sauce, dijon mustard, salt and pepper and whisk or stir to combine well.
- In a small bowl combine cornstarch and water and whisk until smooth. Whisk mixture into the beef gravy and simmer until thickened to your liking, about 2-3 minutes.
- Add patties back to the skillet and spoon gravy over the top of the patties. Cook another minute or two, until everything is heated through.
- Serve patties hot, over mashed potatoes or noodles if you like, with a generous spoonful or two of gravy over the top, sprinkled with minced fresh parsley (if desired).

- Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking pan with cooking spray.
- Combine beef, onion, green pepper, celery, carrot, bread crumbs, egg, salt, and pepper in a large bowl. Add enough milk to moisten the mixture. Shape mixture into small patties.
- Arrange patties in the prepared pan.
- Mix beef broth, tomato sauce, mushroom soup, Worcestershire sauce, and hot pepper sauce in another bowl. Pour sauce over patties.

- In a large mixing bowl, combine ground beef, egg, tomato paste, mustard, Worcestershire sauce, garlic powder, breadcrumbs, salt and pepper. Mix well to combine. Shape meat mixture into 4 oval-shaped patties.
- Heat a large skillet over medium heat for about 1 minute; add butter. Place meat patties in the skillet; cook for about 4 - 5 minutes per side, or until well-browned. Remove patties from skillet; set aside.
- Gravy: Add onions to the skillet; reduce heat to medium-low. Cook onions until translucent and caramelized, about 15 - 20 minutes. Sprinkle 2 - 3 T. flour over caramelized onions; stir to coat. (Use 2 T. flour to make gravy on the thinner side, or 3 T. flour for a thicker gravy). Cook flour-coated onions for 1 minute, until flour starts to smell toasty. Add dried thyme; cook until fragrant, about 30 seconds. Gradually stir in beef stock/broth and soy sauce; raise heat back to medium.
- Add seared patties back to the skillet; bring to a gentle simmer; cover; cook patties 10 - 15 minutes, or until cooked through. Season gravy to taste. (Gravy will thicken as it cools). Remove the Salisbury steaks from the heat.
