3/4 teaspoon garlic salt or 3/4 teaspoon seasoning salt
1/4 teaspoon black pepper
2 tablespoons butter
1 (8 ounce) package sliced button mushrooms
2 tablespoons sweet vermouth, wine or 2 tablespoons ruby port
1 (12 ounce) jar beef gravy

Steps:

  • Heat large heavy nonstick skillet over medium-high heat 3 minutes or until hot. Combine ground sirloin, garlic salt, and pepper; mix well. Shape mixture into four 1/4-inch-thick patties.
  • Place patties in skillet as they are formed; cook 3 minutes per side or until browned. Transfer to plate. Pour off drippings.
  • Melt butter in skillet; add mushrooms. Cook and stir 2 minutes. Add wine; cook 1 minute. Add gravy; mix well.
  • Return patties to skillet; simmer uncovered over medium heat 2 minutes for medium or until desired doneness. turning meat and stirring sauce.

4 slices bacon
1 medium red bell pepper
8 ounces mushrooms, sliced
1 large yellow onion, sliced
1 1/2 lbs lean ground beef
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1/3 cup Burgundy wine or 1/3 cup red wine
1/4 teaspoon dried thyme leaves, crumbled

Steps:

  • In a large skillet cook bacon over moderatly-high heat;cook until crisp and browned, about 5 minutes.
  • Transfer bacon to paper towels and set aside; reserve drippings in the skillet.
  • Core and seed the bell pepper; cut into strips, add mushrooms, onions and bell pepper to the drippings in the skillet; cook stirring frequently, until crisp tender, about 4 minutes.
  • Meanwhile, shape ground beef into 4 oval steaks about 3/4 inch thick; sprinkle on both sides with salt and pepper.
  • Transfer vegetables to a warm serving platter, cover and keep warm.
  • Cook steaks until they are well browned, about 3 minutes on each side for medium.
  • Place the steaks on top of vegetable mixture, cover, and keep them warm; add wine and thyme to the skillet

1 lb (0.45 kg) Lean Ground Beef
¼ cup (50 mL) finely chopped onion
½ cup (125 mL) finely grated carrots
1 (30 mL) large egg white
1 ½ tsp (7 mL) garlic powder
¼ tsp (1 mL) salt
pepper to taste
1/2 cup (125 mL) finely chopped onion
3 minced garlic cloves
1 tbsp (15 mL) olive oil
2 cups (500 mL) of diced white mushrooms
1/2 cup (125 mL) red wine
1-1/2 (375 mL) cups no salt-added beef broth
1 tsp (5 mL) brown sugar
1/2 tsp (2 mL) chili powder
2 tbsp finely chopped parsley (optional)
salt and pepper to taste
1 tbsp (15 mL) cornstarch
1 tbsp (15 mL) cold water

Steps:

  • Combine lean ground beef, onions, carrots, garlic powder, egg white, salt and pepper in a large bowl. Mix well.
  • Shape ground beef mixture into four 3/4-inch (2 cm) thick patties. Place patties on a parchment paper-lined baking tray and cook in a 425°F (220°C) for 10 minutes per side. Meanwhile, make Wine and Mushroom Sauce.
  • Transfer patties from oven to the sauce; cover and cook for 5 additional minutes until a digital rapid-read thermometer inserted sideways into centre of each patty reads at least 160°F(71°C).
  • Serve each patty Wine and Mushroom Sauce, mashed potatoes and seasonal vegetables.

  • Sauté onion and garlic in oive oil over medium-high heat; cook, stirring until softened. Add mushrooms; cook stirring until lightly browned. Gradually stir in wine and bring to boil, scraping up browned bits from bottom of pan, and cook until reduced by half. Stir in broth, brown sugar, chili powder, parsley (optional), and salt and pepper. Bring to a boil and simmer for 5 to 10 minutes until slightly thickened. Reduce temperature to medium; gradually stir in cornstarch mixed with cold water; cook, stirring until sauce thickens slightly, about 5 minutes.

1 large egg, lightly beaten
1/4 onion, finely chopped (about 1/3 cup)
7 saltine crackers, finely crushed (about 1/4 cup)
1 teaspoon minced fresh sage
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
8 ounces sliced mixed mushrooms
2 teaspoons Worcestershire sauce
3 tablespoons all-purpose flour
2 1/2 cups hot water
1 to 2 tablespoons chopped fresh parsley
Buttered egg noodles, for serving (optional)

Steps:

  • Gently mix the beef, egg, onion, cracker crumbs, sage, 1/2 teaspoon salt and a few grinds of pepper in a large bowl using your hands. Divide into 4 equal portions and shape into oval patties, about 1/2 inch thick.
  • Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown the patties, about 4 minutes per side. Transfer to a plate.
  • Add 1 tablespoon butter to the skillet and cook the mushrooms, stirring occasionally, until slightly browned, about 2 minutes. Stir in the Worcestershire sauce, and salt and pepper to taste, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Sprinkle in the flour and stir, then stir in the hot water and simmer until the sauce begins to thicken, about 2 minutes. Add the remaining 1 tablespoon butter, swirling to combine.
  • Return the patties and any juices from the plate to the skillet. Simmer until the sauce thickens and the patties are cooked through, about 2 minutes. Sprinkle with parsley and season with salt and pepper. Serve with noodles, if desired.

1 pound lean ground beef
⅓ cup dry bread crumbs
¼ cup chopped onions
1 egg, beaten
1 teaspoon salt
¼ teaspoon ground black pepper
2 cups beef broth
1 large onion, thinly sliced
1 cup sliced mushrooms
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • Combine ground beef, bread crumbs, chopped onion, egg, salt, and black pepper in a bowl until evenly mixed. Shape beef mixture into 4 patties, about 3/4 inch thick.
  • Fry patties in a large skillet over medium heat until browned on both sides, about 10 minutes. Add beef broth, onion, and mushrooms; bring to a boil. Reduce heat to low, cover, and simmer until patties are no longer pink in the center, about 10 minutes more. Transfer patties to a platter and keep warm.

6 hamburger patties (each about 1/2-inch thick)

2 tablespoons butter
1 onion, chopped

4 boneless steaks (about 4 ounces each)
Salt and freshly ground black pepper
Flour, for dredging
1/4 cup extra-virgin olive oil
4 cups beef stock
8 ounces white button mushrooms, quartered
8 ounces shiitake mushrooms, stemmed, caps quartered
1 tablespoon unsalted butter
1 onion, minced
1 carrot, diced
4 sprigs fresh thyme
3 cloves garlic, minced
1 cup balsamic vinegar
Pea whipped potatoes, recipe follows
2 pounds russet potatoes, peeled and cut into large chunks
1 1/2 pounds English peas, or 2 pounds frozen peas
2 cups heavy cream
1/2 cup (2 sticks) unsalted butter, at room temperature
1 tablespoon minced garlic (about 3 to 4 cloves)
Salt and freshly ground black pepper
Grated Parmesan, optional

Steps:

  • Preheat oven to 300 degrees F.
  • Use a jaccard steak tenderizing tool, or tenderize the steak yourself with a fork. Lay the meat out in front of you, pushing it flat with your hands or a meat mallet, and pull it gently apart with tines of the fork until the meat is slightly pulled apart and tender. Season with salt and pepper and dredge in flour. In a large oven-safe skillet over medium-high heat, add olive oil and brown steaks, in batches if necessary, on both sides, about 2 minutes per side. Set aside, keep warm.
  • Meanwhile, in a saucepan, reduce stock by half.
  • Season mushrooms with salt and pepper, to taste. Saute quartered mushrooms in the same pan as the meat, in the leftover olive oil, until very brown, about 5 minutes. Add butter, minced onion, carrot, thyme, and garlic. Cook until vegetables are caramelized, about 5 minutes, add balsamic vinegar and reduce for 1 to 2 minutes. Add broth, slide meat back into sauce, cover and bake until tender, about 1 hour.
  • Stack steaks with pea whipped potatoes and drizzle with balsamic/mushroom sauce.
  • Put the potatoes in a large saucepan with cold water to cover by 3 inches. Salt the water, cover and bring to a boil over high heat. Reduce heat and simmer until tender, about 10 minutes. While the potatoes are cooking, cook the peas in a separate saucepan of salted water. Simmer until just tender, about 3 to 5 minutes. Remove with a sieve and cool on a baking sheet. When the potatoes are done, drain well, scatter on a baking sheet, and let cool for several minutes. In a small saucepan, heat 1/2 cup of the cream until it reaches a boil then simmer for a few minutes. Add the cream to a blender with the cooked peas and puree until smooth. Season with salt and pepper.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat until the butter stops foaming and turns a light brown. Add the garlic and cook quickly until pale gold. Add remaining cream, season, to taste, with salt and pepper and bring to a boil.
  • Press the cooled potatoes through a ricer or food mill into the butter and garlic mixture, tossing to coat.
  • Reduce the heat to low. Add the remaining butter by tablespoonfuls, stirring vigorously after each addition. In this way, the butter does not melt into a golden puddle. Instead, it forms an emulsion with the potatoes, creating a very smooth puree.
  • Fold the pea puree into the mashed potatoes and adjust seasoning, as necessary. Instead of salt, the puree can be seasoned with a little grated Parmesan, if desired.
  • Serve hot.
