- In a nonstick cooking pan that has been sprayed with veggie spray, sweat minced onion, mushroom stems, and 1 dash of salt until translucent. Set aside to cool.
- In a large bowl, mix ground turkey, cooled veggies, bread crumbs, 2 egg whites, 1 tablespoon Worcestershire sauce, 1 tablespoon onion powder, 2 tablespoons ground sage, 2 teaspoons kosher salt, and freshly cracked black pepper until thoroughly mixed (as you would a meatloaf). Divide the meat into 6 patties. Preheat a seasoned cast iron skillet (this gives the best results, a rich beefy flavor), brush on 1 teaspoon of olive oil. Brown meat on both sides. Finish in the oven at 400 degrees for 20 to 30 minutes until no longer pink in the center.
- In the meantime, sauté a pound of sliced mushrooms in nonstick skillet with cooking spray, until tender.
- Once the meat is done, take it out of the pan and scrape the bits of caramelized meat out of the bottom of the pan with a spoon. Add the sage leaves, wine and the beef broth, and bring to a boil. Let the sauce reduce by half. Remove from the heat, take out the sage leaves, and pour sauce over steak. Serve along with sautéed mushrooms, brown rice, and a fresh green salad.

- Mix beef, bread crumbs, salt, pepper and egg. Shape into 4 oval patties, each about 3/4 inch thick.
- Cook patties in 10-inch skillet over medium heat about 10 minutes, turning occasionally, until brown; drain. Add onion, broth and mushrooms. Heat to boiling; reduce heat. Cover and simmer about 10 minutes or until beef is done.
- Remove patties; keep warm. Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute. Serve over patties.

- In a large bowl, combine 1/3 cup bread crumbs, onion, Worcestershire sauce, steak sauce, garlic and seasonings. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick oval patties. Place remaining bread crumbs in a shallow bowl. Press patties into crumbs, patting to help coating adhere., In a large nonstick skillet, heat 1-1/2 teaspoons oil over medium heat. Add patties; cook 3-4 minutes on each side or until a thermometer reads 165°. Remove from pan., In same pan, heat 2 tablespoons oil over medium heat. - Sauté onions in oil over medium heat until golden brown, about 5 minutes.
- In a large bowl, combine half of the sautéed onions, ground beef, ground turkey, bread crumbs, egg, egg white, 1/4 cup beef broth, salt and black pepper. Shape into 8 oval patties.
- In a large deep skillet over medium-high heat, brown both sides of patties, about 4 to 5 min on each side, in batches as needed. Set aside on a dish.
- Add mushrooms to the skillet, season with salt and pepper and sauté 2-3 minutes.
- Return patties to the skillet with the mushrooms.
- In a small bowl, blend flour and remaining broth until smooth. Mix in remaining onions, tomato paste, vinegar, water, worcestershire sauce and mustard powder. Pour over meat and mushrooms in skillet.
- Cover and cook on low heat for 20 minutes, stirring occasionally.

- Heat Olive Oil in large skillet.
- Mix bread crumbs, worcestershire sauce, salt, and pepper into ground turkey.
- Form large thin burger patties with meat mixture (don't worry they will shrink)
- Brown turkey burgers about 2 minute on each side (don't cook all the way, they will finish cooking in sauce)
- Remove burgers from pan and add sliced onions and mushrooms to the pan. Sautee until carmelized.
- Replace burgers back in pan with onions and mushrooms. then pour stock and both cans of beef gravy on top.
- Cover and simmer for about 30-45 minute
- Great served over mashed potatoes or noodles.

- Add breadcrumbs to a large mixing bowl. Grate onion over the bowl and stir grated onion into the breadcrumbs. There will likely be some onion "juice" that goes into the bowl as well, and that's good. It will add moisture as well as flavor.
- Add remaining patty ingredients and use hands to mix until just combined.
- Use the side of your hand to lightly score the meat in half. Then score each half into 3 sections. Now you have 6 roughly equally sized sections. Scoop out the meat in each section and form into oval shaped patties.
- Heat 1 Tbsp each butter and olive oil in a large skillet over MED HIGH heat. Once hot, add patties and sear about 4-5 minutes per side, until cooked through. Transfer patties to a plate and keep warm.
- Reduce skillet heat to MED and add 1 Tbsp butter. Add sliced onions and cook for 3 minutes. Add mushrooms and cook another 4-5 minutes.
- Stir in beef broth, scraping the bottom of the skillet to loosen any browned bits. Add tomato paste, soy sauce, Worcestershire sauce, dijon mustard, salt and pepper and whisk or stir to combine well.
- In a small bowl combine cornstarch and water and whisk until smooth. Whisk mixture into the beef gravy and simmer until thickened to your liking, about 2-3 minutes.
- Add patties back to the skillet and spoon gravy over the top of the patties. Cook another minute or two, until everything is heated through.
- Serve patties hot, over mashed potatoes or noodles if you like, with a generous spoonful or two of gravy over the top, sprinkled with minced fresh parsley (if desired).

- For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
- Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
- For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
- Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk 1 cup water, onion soup mix, Worcestershire sauce, garlic, and black pepper together in a bowl. Strain mixture, reserving solids and broth. Pour 1/2 cup broth and the solids into a large bowl; mix turkey, bread crumbs, and egg into broth-solids mixture until thoroughly combined. Scoop 8 portions using 1/2 cup measure and form each into an oval patty; arrange on a baking sheet.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Whisk remaining broth, mushroom soup, 1 can water, and gravy mix together in a saucepan until smooth; bring to a boil, stirring constantly. Remove from heat.
- Flip patties and pour gravy over each. Continue to cook until gravy has slightly thickened, about 10 more minutes.

- In a large bowl, stir turkey, egg, breadcrumbs, half the diced onion, ketchup and spices together until combined. Form 6-7 patties and brown both sides in 1 tablespoons olive oil in large, deep skillet. Remove from pan and set aside. Patties will not be cooked completely and that's totally ok!
