Steps:
- Preheat the oven to 425 degrees F.
- Put the potatoes and parsnips in large pot, cover with water and bring to a boil over medium heat. Salt the water and cook until tender, 12 to 15 minutes. Drain potatoes and parsnips and return them to the hot pot. Add the milk or cream and mash. Stir in the parsley, and season with salt, pepper and nutmeg, to taste.
- Meanwhile, put the meat in a bowl and add 3 tablespoons of Worcestershire, the egg, cracker crumbs, grated onion, salt and pepper, to taste. Cover a baking sheet with parchment paper. Mix meat to combine and form into 4 oval shaped loaves, no more than 1 1/2 inches thick and arrange them on a baking sheet. Drizzle with about 1 tablespoon extra-virgin olive oil and bake for 20 minutes.
- While meat is in oven, in a medium skillet over medium heat add the butter and melt, then add the onions and bay leaf and season with salt and pepper, to taste. Cook for 15 minutes, then add the garlic and sage and cook for another 3 minutes. Sprinkle in the flour and stir 1 minute, then whisk in the stock, 2 tablespoons Worcestershire and season liberally with black pepper, to taste. Cook for 1 minute to thicken the sauce.
- Serve the steaks, on individual plates, whole or sliced with gravy on top, a mound of mashed potatoes and parsnips and 1 cup of watercress leaves alongside.

Steps:
- For this recipe I diced the onions, mushrooms, peeled the potatoes, peeled the garlic cloves and laid out all the ingredients on my counter. It makes the cooking process much quicker if you have everything kind of ready to go.
- In a medium bowl use your hands (I like to use gloves* for this step) to combine the ground beef, breadcrumbs, egg, steak seasoning, garlic and Worcestershire sauce. Divide the meat into four equal portions. Form into patties about 3/4 inch thick.
- Turn your Instant Pot to the saute function. When it reads HOT on the display add in 1 Tbsp of vegetable/canola oil. Carefully place the patties in the pot and brown on each side for 3 minutes. Do not mess with them while they are browning. Just give them the full 3 minutes on each side. Gently transfer the patties to a plate. Set aside.
- There should be oil in the pot still from the beef and the oil. Add in your diced onion and saute for 4 minutes. Add in your mushrooms and saute for 2 minutes. Deglaze the pot with the beef broth.
- Place a steamer basket* in the Instant Pot on top of the beef broth. Place all your diced potatoes and the 2 peeled garlic cloves into the steamer basket.
- on top of the potatoes/steamer basket. Gently place your steaks on top of the foil.
- . Secure the lid on the Instant Pot. Make sure valve is set to "sealing." Set the manual button or pressure cook button to 5 minutes. When the cook time ends let the pressure release naturally for 5 minutes. Then move the valve to venting and release any remaining pressure.
- While the food is pressure cooking get a serving bowl out for the mashed potatoes. Put the half and half and the butter in the bottom of the bowl. When the pressure is released, carefully open the lid. Use silicone oven mitts to remove the foil* (it will be hot!) and set the meat aside. Carefully remove the steamer basket full of potatoes. Pour the potatoes and garlic in the bowl with the half and half and butter. Use a potato masher to mash the potatoes. The potatoes will be so hot they will melt the butter. Add in 1/2 tsp of salt and ground pepper to taste.
- Turn your Instant Pot to the saute function. In a small bowl stir together the 1 Tbsp of cornstarch and 1 Tbsp of water until smooth. Stir the mixture into the Instant Pot. The gravy will thicken almost immediately. Once it does, switch the Instant Pot to the Keep Warm function. Stir in 1/2 tsp of salt.
- Spoon potatoes onto each serving plate and top with a steak patty and ladle gravy over the top. Enjoy!

Steps:
- In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
- Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
- Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
- Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
- In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
- Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

SALISBURY STEAK
I came up with this recipe while referencing another recipe here on Zaar. I would have simply reviewed the recipe and added to my cookbook but I made such changes that it is not like the original recipe I referenced, so I feel it would not be a fair rating if I did rate it(even a high rating, which it would have been) I am not saying this is better, but different, the recipe I went by is recipe #16143 . The main reason for the biggest change - the addition of brown gravy is because I like salisbury steaks with mashed potatoes and in order to have enough gravy for 4 or 5 serving of potatoes needs more gravy, plus when I think of salisbury steak I think of brown gravy.

Steps:
- Combine the ingredients for the steaks, namely meat, Worcestershire sauce, onion, salt, and pepper (or steak seasoning), and form two large, 1-inch (2.5 cm) thick oval patties.
- To a preheated nonstick skillet, add a tablespoon of olive oil and the patties, then cook them over medium heat for about six minutes on each side until they are nicely seared and caramelized.
- You will see that your patties are ready when the juices from the meat become clear. At that moment, remove the patties from the skillet and keep them somewhere warm, best by covering them with a tin foil.
- Add one more tablespoon of extra virgin olive oil and butter to the skillet, then add the mushrooms and sauté them for three to five minutes, or until tender.
- Next, add flour and cook for two minutes more. Combine in the stock, stir and let the sauce thicken for a minute.
- Pour the gravy over each patty and serve them with mashed potatoes, spinach, or green peas.

- Add the olive oil to a large skillet and heat over medium to high heat. Add meatballs and cook. Remove meatballs from skillet and set aside.
- To the same skillet add butter and melt. Add onion and cook until onion is soft and translucent. In a bowl add the cornstarch and beef broth and whisk. Add broth and remaining gravy ingredients to skillet, and cook for about 3 to 5 minutes, sauce should thicken. If the sauce is too thick add a bit more beef broth. Taste for seasoning and adjust as necessary.
- When the gravy is done add the meatballs back to the skillet and toss them around so they're covered in the gravy. Garnish with parsley.
