MEL'S CRAB SALAD
I tried for years to duplicate the crab salad that was made in the seafood market i used to work for, but never could. However, I came up with this one and prefer it a whole lot more. My daughter will hide with the batch I make and eat it all. She doesn't like to share. Serve with club-style crackers.

- Gently mix flaked imitation crab, celery, ranch dressing, mayonnaise, sugar, and parsley in a salad bowl until thoroughly combined. Refrigerate overnight, stirring occasionally. Stir again just before serving.

- In a large bowl, combine the first five ingredients. In a small bowl, combine the mayonnaise, horseradish and seasoned salt; mix well. Add to the shrimp mixture and stir well. Cover and refrigerate. Serve on a lettuce-lined plate.

- To make the crisps, preheat the oven to 425 degrees. In a small bowl, mix together the flour, sugar and cumin seeds. Add the vinegar, butter and water and mix thoroughly, but do not overmix.
- Working in batches and using a pastry brush, dab very thin 2-inch discs of batter onto a nonstick baking sheet. Bake until golden, 3 to 5 minutes. Cool on wire racks.
- To make the crab salad, break up the lumps with your fingers, removing any shell or cartilage but leaving the crab as intact as possible. Refrigerate. In a blender, combine the tomatoes, shallots, garlic, lemon juice, oil, vinegar and basil and blend until smooth. Season to taste.
- Slowly stir the tomato sauce into the crab meat. Coat the crab, but do not soak it. Place 3 scoops of crab salad on each of 6 plates. Place a cumin crisp between each scoop. Garnish with the mache and the mangoes.

- Cut imitation crab legs in half inch pieces at an angle and place in a bowl. Add all other ingredients except for salad dressing, dill, salt, and pepper.
- Mix the salad together to combine and add dressing and dill. Stir again to combine.
- Last season the salad with salt and pepper to taste and stir once to combine. Chill in the refrigerator for 10 minutes up to 20 minutes and serve.

MAMA'S CRAB AND PINEAPPLE SALAD (KRABYUIE SALAT)
This humble and interesting dish graced every festive family meal, created by my host-mom in Voronezh, Russia. We've shared it back home with friends here in the states, and they get hooked! It seems like the flavors wont mix, but they do perfectly. The dish is so versatile, it can be served cold with crackers or baguette slices, between slices of bread for a sandwich, or pop it in the oven for a gooey cheesy dip. If you can afford it, try fresh crab. But honestly, the imitation crab does just fine. Try it, you'll like it! :)

- Dice crab meat into small cubes, making them same approximate size as pineapple tidbits, combine together.
- In bowl combine mayo, shredded cheese, salt and pepper, add to crab mixture.
