SPICY ITALIAN HAM AND SALAMI SANDWICH
This "sitting sandwich" is great picnic fare because it only gets better as it sits. Pack it at the bottom of the basket so any weight on top will compress it, making it easier to eat. A mojo-like sauce made with fresh lime juice, garlic, and lots of fresh oregano perks up the flavor of a classic Italian sub.

Steps:
- In a small bowl, mix the oregano, oil, lime juice, garlic, 1/2 tsp. salt, and 1/4 tsp. pepper. Cover and refrigerate for at least 2 hours (the flavor improves as it sits, and it will keep for up to 1 week).
- Halve the ciabatta loaf lengthwise. Rewhisk the sauce and pour over the cut sides of the bread, spreading evenly with a knife. Line the bottom half with the lettuce, then top with the prosciutto, capocollo, soppressata, and provolone. Scatter the peppers over the cheese and cover with the top of the ciabatta. Smush together, cut crosswise into 6 sandwiches, and wrap each in foil or waxed paper. Let sit for a few hours at room temperature to let the flavors meld.

Steps:
- Drain cole slaw and stir in dill.
- Split rolls. Spread mustard over top halves and spoon cole slaw on bottom halves.
- Place salami and cheese on cole slaw on bottom halves. Place salami and cheese on cole slaw and cover with top halves of rolls.
- Cut sandwiches in half and serve.

ANTIPASTO GRILLED SANDWICH
I was looking for a different kind of grilled cheese sandwich and this is what I came up with! It really hits the spot!

Steps:
- 1. Blot dry the roasted sweet red pepper.
- 2. Slice the marinated artichoke heart in half, then press it to flatten.
- 3. Melt butter in a non stick skillet over med/low heat.
- 4. Dip one side of each slice of bread in the melted butter and set aside.
- 5. Place one slice of bread, buttered side down, in the skillet.
- 6. Top with mozzerella, salami, roasted red pepper, and artichoke halves
- 7. Place other piece of bread ontop, buttered side up, and grill for about 2 minutes, pressing down on the sandwich the entire time. Check to see that the bottom is browning. Then flip the sandwich over and repeat cooking process to brown the other side.
- 8. Slice in half and serve warm.
SHREDDED BBQ PORK & COLE SLAW SANDWICHES
I got this recipe from an Ingles Summer fun booklet. It's really easy and the slaw is a delicious change from regular slaw. Even DS who doesn't like slaw liked this. The slow cooker makes it extra easy. You can also substitute chuck roast or skinless,boneless chicken thighs or breasts. Enjoy!

- Place pork in slow cooker and spoon tomato paste over; do not stir.
- Cook, covered LOW 8-10 hrs (or HIGH 4-6 hrs).
- Shred pork, blending tomato paste (I left in the juices).
- Stir in BBQ sauce and salt.
- Spoon on rolls and top with slaw.
- For the Tangy Coleslaw:.
- Whisk together mayo, mustard,honey & salt in large bowl.
- Add coleslaw mix and raisins; toss until well blended.
- Cover and chill 2 hrs before serving.
