HAM AND GREEN BEAN SOUP
This ham and green bean soup recipe is inspired by the flavors of Pennsylvania Dutch Cuisine. An easy to make dish of healthy and hearty comfort food all in one pot.

Steps:
- In a large stockpot saute onions in the vegetable oil for 2 - 5 minutes until soft and translucent.
- Add ham and saute for another 5 minutes.
- Add green beans, potatoes, black pepper, and broth.
- Bring to a boil then reduce heat and simmer for approximately 40 minutes.
- Add vinegar and simmer for another 5-10 minutes.
- Serve warm.

COUNTRY HAM & BEAN SOUP WITH SMOKED SAUSAGE
This thick and chunky soup is my family's favorite Fall "comfort food" soup. I buy the smoked ham and smoked sausage at our local Farmer's Market. - 1. Place dried beans in a LARGE pot and pick through to check for stones. Rinse beans, drain and add water to cover by at least 2 inches. Soak at least 8 hours or overnight.
- 2. After soaking, drain beans, rinse, drain again and add 2 quarts water**, flavoring packet (that comes with beans) and 2 envelopes of ham flavoring. Bring to a boil and simmer, uncovered, for 1 hour, stirring occasionally. (Note: you may have to add more water during this step to make sure beans are covered with liquid.) ** OR, INSTEAD OF PLAIN WATER, PLACE A HAM BONE IN A LARGE DUTCH OVEN AND ADD WATER TO COVER HALF OF BONE. ADD 2 BAY LEAVES AND A SLICED ONION TO THE POT. BRING TO A BOIL, REDUCE HEAT. COVER AND SIMMER FOR 1 TO 2 HOURS. REMOVE BONE AND STRAIN BROTH. USE THIS BROTH INSTEAD OF PLAIN WATER. Take any meat off of the bone and add to soup with the rest of the meat as mentioned in Step 3.
- 3. After simmering for 1 hour, add onion, carrot, potato, ham, sausage, bay leaves and 2 more envelopes ham flavoring to pot. Simmer an additional 45 minutes to 1 hour, stirring often, until beans are soft and begin to break apart.
- 4. Add chicken broth (enough to make desired consistency) and quick cooking barley (and more ham flavoring if needed). Simmer for 10-15 minutes or until barley is cooked.
- 5. Serve with salad and crusty bread.
- 6. FREEZES WELL!!
HAM AND BLACK BEAN SOUP

- Cover green beans with water in a large pot. Add ham, bouillon, paprika, and cayenne. Bring to a boil over high heat; reduce heat to low and let simmer until beans are tender, about 30 minutes. Remove from heat and let cool, 20 to 30 minutes.
- Meanwhile, melt butter in a frying pan over medium heat. Add flour and cook until almost brown, 3 to 5 minutes. Stir in diced onion; cook until it begins to brown, 7 to 8 minutes. Reduce heat to medium-low; cook and stir dried onions in the mixture until they begin to lightly brown, 3 to 4 minutes, being careful as they burn easily. Add paprika and pepper. Pour in water and stir until mixture is smooth.
- Whip sour cream in a bowl and mix into flour mixture until smooth. Stir sour cream mixture into cooled green beans. Heat soup over medium heat until simmering; cook until heated through, about 5 minutes. Serve.

SOUTHERN-STYLE WHITE BEANS AND HAM
Nothing quite adds a little Southern goodness in your mouth like a big ole pot of slowly simmered Southern-Style White Beans and Ham topped with fresh sliced garden fresh green onions, diced jalapeño peppers, and served with freshly cooked collard greens and a nice warm buttery slice of cornbread.

- Place the dried Northern beans in a colander, rinse the beans off thoroughly sorting through to remove any debris or broken beans at this time.
- Place the Northern beans in a large pot and add enough water to cover as well as come about 2-3 inches above the beans. Place a tight-fitting lid over the pot and let sit overnight or for at least 8 hours before you begin cooking them.
- Drain off the water that the Northern beans have soaked in and placed them back in the pot they have soaked in. Add 6-8 cups of vegetable stock to the Northern beans to cover the beans and come about 2-3 inches above them. If the beans become too thick during the process, add more stock to the pot
- Next, add the chopped Ham steak, diced yellow onions, diced jalapeño peppers, diced celery, and minced garlic to the pot of Northern beans. Place on medium heat and let pot come to a simmer, reduce heat if need be and cook on a low simmer for about 2 hours or 2.5 hours if you prefer a softer bean.
- The last half of an hour is when you will add your seasoning to the pot, at this time add 2 teaspoons of low-sodium Cajun seasoning or regular, kosher salt, and freshly ground pepper. Cook on low for the last 30 minutes.
- Serve over white rice with sliced green onions, sliced jalapeño, and Tabasco sauce if desired.

SALAMI, HAM STEAK, AND BEAN SOUP WITH GREENS
On a recent trip to Paris I ordered the special at Le Cafe Marguerite. After sightseeing in the freezing rain, we needed something warm. I got a delicious dish of boiled ham, salami, potatoes, cabbage, and carrots. I love ham bean soup and make it quite a bit in the cold months. I dress up my normal recipe with salami and cabbage. I love adding turnip, potato, carrot and zucchini, too. This a great recipe to play with. The result is quite delicious. Enjoy.

- In a large saucepan, combine the beans with 1 tablespoon of the herbes de Provence and the smashed garlic cloves. Add water to cover by 1 inch and bring to a boil. Simmer over moderately low heat until the beans begin to soften, about 25 minutes. Add 1 tablespoon of salt and continue simmering until the beans are tender, 20 minutes longer. Drain the beans.
- Meanwhile, in a large enameled cast-iron casserole or soup pot, heat the olive oil. Add the salami and cook over high heat until crisp, about 5 minutes. Using a slotted spoon, transfer the salami to a plate. Add the onion, carrots, celery and the 3 sliced garlic cloves and the remaining 1 tablespoon of herbes de Provence. Season with salt and cook over moderate heat for 2 minutes, then cover and cook until softened, about 10 minutes.
- Add the beans and chicken stock to the vegetables. Transfer half of the soup to a blender and pulse just until the beans are coarsely chopped; return the soup to the casserole. Add the kale and simmer until it is tender, about 15 minutes. Stir in the reserved salami and season with salt and pepper. Ladle the soup into bowls, garnish with the parsley and serve.

- Pour beans into a large heavy stockpot. Using your fingers, sift through the beans to find and remove any foreign materials or damaged beans. (I have found a stone or two in my beans before - so don't skip this step).
