GREEK SALAD WRAPS

- Roughly chop the tomato, cut the cucumber into sticks and split and stone the olives (if using).
- Now heat the tortillas. If you have gas, put each one for 10 seconds on a lit gas ring - you have to be a little bit brave - then turn it over quickly, using tongs, and heat the other side for another 8 seconds or so. The tortillas will be slightly charred in places, which adds a fantastic flavour. If you don't have gas, warm a pan to a medium heat before quickly tossing in your tortillas one at a time. You don't need to have any oil on the pan.
- Make a row of tomato, cucumber, feta and olives down the centre of each warm tortilla. Now spread the hummus around the top and sides of the tortilla. Fold in the sides to seal in the ingredients and roll up tightly to make a big cigar. Cut in half and eat with your fingers.

FETA YOGURT DIP

Steps:
- Combine feta and yogurt in a large bowl and whisk until well blended. Add lemon zest and juice, olive oil, 1 1/2 teaspoons dill and 1 1/2 teaspoons mint. Season to taste with salt and pepper. Mix until well blended. If not serving immediately, cover and chill until ready to serve.
- Transfer to a serving bowl and garnish with the remaining herbs, a drizzle of olive oil and a sprinkling of sesame seeds. Serve with watermelon spears.
SPICY FETA CHEESE DIP
This is best feta dip ever. It is so tangy and salty and completely addictive. People often comment that they would like to lick the bowl. Great on pitas, used as a dip, or alongside souvlaki.

- Combine olive oil, yogurt, lemon juice, paprika, garlic, black pepper, cayenne pepper, and sugar in a food processor; pulse mixture until smooth. Add a couple feta cubes at a time, processing between batches until mixture until thick and smooth.
- Transfer dip to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

- Place all ingredients in processor and puree until almost smooth. Season with pepper. Chill until cold, about 2 hours. (Can be made 2 days ahead. Keep chilled.)
GREEK SALAD DIP
This dip is a refreshing change from the traditional dips you see at parties. The crisp green onions in combination with the olives and tomatoes is very reflective of the Greek salad served here in our local Greek pizza place. Serve with saltine crackers. It's always the first to go at our parties.

SALAD WRAP WITH GREEK YOGURT FETA CHEESE DIP
Steps:
- For the dip: Mix the yogurt, feta, lemon juice and zest, parsley, garlic and salt and pepper to taste in a small bowl. Refrigerate until ready for use.
- For the salad wrap: Cut the lettuces into small bite-size pieces. Lay a slice of cucumber on a work surface. Place a piece of each lettuce and a few sprigs of the carrots and jicama on the cucumber and roll it up tightly.
- For the presentation, arrange the rolls on a platter and serve with the yogurt dip. Enjoy.
