SHAVED ARTICHOKE SALAD

Shaved Artichoke Salad image

Prepping artichokes can take time and patience, but they are among the most delicious of nature's gifts, so are well worth the effort. In this dish they are served raw to showcase their flavor, which is enhanced here with olive oil, lemon juice and Parmesan.

Provided by Mark Bittman

Categories     salads and dressings

Time 30m

Yield 4 servings

Number Of Ingredients 7

8 baby artichokes, cleaned
Vinegar for soaking (optional)
Zest and juice of a lemon
Chunk of Parmesan
3 tablespoons extra-virgin olive oil, more as necessary
Salt and pepper
Chopped fresh parsley or basil leaves for garnish

Steps:

  • Prepare artichokes by trimming stem, cutting off pointed tips and removing tough leaves. Slice thinly with mandoline. As each artichoke is finished, drop slices into a bowl of cold water with about 10 percent vinegar or lemon juice.
  • Slice Parmesan with mandoline, creating as many pieces as you have artichoke slices, and about the same size.
  • Remove artichoke slices from water and dry, then toss with olive oil and 1 tablespoon lemon juice. Sprinkle with a little salt and a fair amount of pepper, then lay Parmesan on top. Taste and add more olive oil, lemon juice, salt or pepper as needed. Garnish with herbs and lemon zest and serve.

ROASTED JERUSALEM ARTICHOKES (OR SUNCHOKES)

Roasted Jerusalem Artichokes (or Sunchokes) image

This is a super-easy way to cook these vegetables if you've never tried them before and by far my favorite. Jerusalem artichokes, or sunchokes, are starchy tubers like potatoes and turnips. When roasted, the skin becomes flaky and the flesh becomes tender, but the taste of a sunchoke is slightly nutty and sweet. Cooked sunchokes are best when eaten within 2 days. When raw, they store well in your fridge's vegetable bin, wrapped loosely in a paper towel. Enjoy!

Categories     Food & Cooking     Appetizers

Number Of Ingredients 6

2 lemons
8 baby artichokes, trimmed
Parmesan cheese
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground black pepper
Chopped fresh flat-leaf parsley or fresh basil leaves, for garnish

Steps:

  • Squeeze juice from 1 lemon into a large bowl of ice water. Slice artichoke hearts and bottoms, if tender enough, as thinly as possible, adding them to the ice water as you slice.
  • Thinly slice Parmesan so that you have about as many slices of cheese as you do artichoke slices. Zest and juice remaining lemon; set aside.
  • Remove artichoke slices from water and pat dry. Toss with olive oil and juice from remaining lemon; season with salt and pepper. Layer artichoke slices on a platter with Parmesan; season with salt and pepper. Garnish with reserved lemon zest and herbs; serve immediately.

Salad of Shaved Artichokes and Sunchokes with Grapefruit and Chicories image

Provided by Food Network

Time 25m

Yield 4 servings

Number Of Ingredients 8

4 ounces orange juice
1 grapefruit
2 tablespoons lemon juice
5 ounces extra-virgin olive oil
1 (6 to 7 ounce) sunchokes (Jerusalem artichokes), peeled and thinly sliced
4 large artichokes, cleaned with stems and chokes removed, hearts sliced very thin
1 ounce mixed chicories (frisee, radicchio, endive), cut into small pieces
1 teaspoon chopped chives

Steps:

  • Reduce the orange juice until thick and bubbly, to a syrup. Cool and reserve.
  • Section grapefruit by removing the peel and pith with a knife, and then cutting between the membranes. Squeeze the remaining grapefruit for its juice; reserve juice.
  • Whisk together 1 tablespoon of the lemon juice, 1 tablespoon grapefruit juice, and the reduced orange juice. Whisk in 3 ounces of the oil to make an emulsified vinaigrette. Adjust seasoning. Mix together the remaining lemon juice, 1 tablespoon grapefruit juice and the remaining oil to make a loose vinaigrette. Adjust seasoning.
  • Toss the chicories with the emulsified vinaigrette, season, and divide among 4 cold plates.
  • Toss the grapefruit sections, sunchokes, artichokes, and chives with the loose vinaigrette, season and place on top of the chicories.
  • Drizzle the plates with the remaining vinaigrette; and serve.

SHAVED ARTICHOKE SALAD WITH SHRIMP

Shaved Artichoke Salad with Shrimp image

Venice was built on saltwater marshes in the 6th century, and many local crops like the city's Sant'Erasmo artichokes, have a delicate taste of the sea. For this healthy salad artichokes are sliced thin--a great use for a mandolin if you have one--and served raw. When paired with the sweet-salty shrimp the combo evokes the flavors of the lagoon. For tender and tasty results, buy the smallest, freshest artichokes you can find.

Provided by Mauro Stoppa

Categories     Healthy Italian Salad Recipes

Time 55m

Number Of Ingredients 7

1 lemon, halved
12 small to medium artichokes
4 tablespoons extra-virgin olive oil, divided
2 tablespoons torn fresh mint leaves
Pinch of salt
¼ teaspoon ground pepper, divided
½ pound large shrimp (26-30 per pound), peeled and deveined

Steps:

  • Squeeze a lemon half into a bowl of cold water. Cut stems from artichokes and discard. Working with one artichoke at a time, pull off all the leaves and soft purple petals and discard. Using a sharp paring knife, trim any remaining green parts from the heart. Rub with the cut side of the remaining lemon half. Scoop out the fuzzy choke with a melon baller or spoon. Rub again with the lemon half. Place the artichoke heart in the lemon water to prevent discoloration while you trim the rest.
  • Very thinly slice the artichoke hearts and immediately toss them in a bowl with 2 tablespoons oil, mint, salt and 1/8 teaspoon pepper.
  • Heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add shrimp and the remaining 1/8 teaspoon pepper. Cook, stirring occasionally, until the shrimp are pink, 3 to 4 minutes.
  • Serve the shrimp with the artichokes and garnished with more mint, if desired.

JERUSALEM ARTICHOKE SALAD - WHAT JEW WANNA EAT
2011-11-14 But then I realized the Jerusalem artichoke is neither from Jerusalem nor an artichoke. Fail. In actuality, a European explorer who brought the veggie back to the old world thought it tasted like an artichoke. (Which it doesn’t. It’s actually similar to a water chestnut raw and super tasty and nutty roasted. Double fail.) And the Italians get the credit for the Jerusalem part. They named ...
