SAGE AND OYSTER TURKEY STUFFING

Sage and Oyster Turkey Stuffing image

My grandma's way of making turkey stuffing who is not with us anymore and I am sure would be proud that I am thinking of her still. She was part Swedish and reminded me of the actress Ruth Gordon in a way as a spirited woman full of love and back home warmth.

Time 5h

Yield 7-8 serving(s)

Number Of Ingredients 11

1 loaf white bread (stale or toasted)
1/2-1 cup butter
3 cups white onions
2 cups celery (with leaves)
salt and pepper
1 green zucchini
1 yellow squash
8 ounces Bumble Bee oysters (not smoked)
2 tablespoons fresh sage
1/4 cup milk
5 lbs turkey

Steps:

  • Crush the bread with hands in bowl.
  • Drain and cut up the oysters, adding to bread.
  • Add milk.
  • Cover the extra turkey parts; tail and neck with water in a small pot and make stock while frying the cut up onion and celery with butter; salt and pepper [until translucent].
  • Cut up the zucchini; yellow squash and add it to a big pot with the fried-up onions and celery.
  • Cut up the fresh sage and add it to big pot.
  • Take out the boiled turkey parts and cut them up adding them to the vegetable mixture (except the tail and neck I get rid of).
  • Add the water they were cooking in to the vegetable mixture.
  • Combine contents of big pot to bread and oysters and mix it thoroughly.
  • Stuff that big Fat Tom Turkey at both ends even cut a hole at top of skin that is tucked under so as to add some stuffing in this way.
  • Cover turkey with foil until last hour.
  • Bake at 350°F for 4 hours.

CLASSIC EASY TURKEY STUFFING

Classic Easy Turkey Stuffing image

This is an easy basic stuffing recipe, that will easily stuff a 12-14 pound turkey, I have stuffed a large roasting chicken also with this recipe. If you have any remaining stuffing just bake in a small buttered baking dish, or you may wish to bake the complete stuffing recipe in a casserole dish in a 325 degree oven, covered for about 25-30 minutes then uncover and bake for about 10-15 minutes more, or until lightly browned on top. For this recipe two (1 pound) loaves of bread is enough, I just use two 400-gram loaves, make certain that the bread is a couple days old but not mouldy, or you can place it in the refrigerator overnight to help firm up for slicing. Now to this basic stuffing you can add in raisins, water chestnuts, pecans etc. If you are serving this to a crowd and baking it in the oven, I suggest to double the ingredients and bake in two separate casseroles. Please use only butter for this stuffing. This is very good, and a recipe that you will use time and again! Just a suggestion, make up an extra unbaked stuffing mixture, it will freeze well in containers or freezer bags to serve later. To reheat, thaw and bake in a greased dish, rather than in the bird at 325°F until golden brown on top.

Time 45m

Yield 16 cups stuffing

Number Of Ingredients 11

1/4-1/2 lb bacon, chopped
3/4 cup butter
3 stalks celery, chopped
2 medium onions, chopped
2 tablespoons fresh minced garlic (or to taste)
14 cups bread cubes (must be stale but still soft and cut into about 1/2-inch cubes)
2 teaspoons poultry seasoning (to taste) or 2 teaspoons rubbed sage (to taste)
2 teaspoons seasoning salt
black pepper
1 cup low sodium chicken broth (you might use more than 1 cup)
1 1/4 cups dried cranberries (optional but really good to add)

Steps:

  • In a large frypan fry the bacon until crisp; (do not drain the drippings) remove and crumble; set aside.
  • Add 3/4 cup butter (no less than 3/4 cup!) to the bacon drippings and melt.
  • Add in chopped celery, onions and garlic; sauté until tender.
  • Add HALF of the bread cubes to the butter; stir to coat, and keep stirring with a wooden spoon until the bread cubes are lightly browned and the butter is absorbed.
  • Transfer to a large bowl (or finish in the frypan, if you have a large enough frypan to hold all ingredients) and add in remaining bread cubes, salt, pepper and poultry seasoning or sage (if using).
  • Add in crumbled bacon and the cranberries or other ingredients that you choose to use; mix to combine.
  • Drizzle with the chicken broth (mixing with a wooden spoon) until you have reached the desired moistness, you might have to add in more than 1 cup, but do not add in too much or your bread will become too "soggy".
  • Immediately stuff the turkey, and cook.
  • **NOTE** the flavor of the stuffing will vary depending on ingredients and type of bread used.

TRADITIONAL SAUSAGE-MUSHROOM TURKEY STUFFING

Traditional Sausage-Mushroom Turkey Stuffing image

My mother-in-law was famous for her wonderful turkey stuffing, which my husband always looked forward to at holiday time. When my in-laws moved to California, he was bemoaning that he wouldn't have that stuffing anymore! I asked my mother-in-law how she made it, but she didn't have it written down, and told me "a handful of this" and a "handful of that". Needless to say, when I attempted to recreate it, it was a disaster. I started building a recipe from scratch, and ended up incorporating mushrooms, which I love. Ultimately, my husband ending up preferring my stuffing! As they say, necessity is the mother of invention!

Time 1h15m

Yield 8 cups

Number Of Ingredients 12

1 lb bulk pork sausage
1/2 cup butter
1 cup sliced celery
2 cups chopped onions
8 ounces mushrooms, sliced
1 (13 3/4 ounce) can chicken broth (and additional broth, if necessary)
2 lbs loaf firm-textured white bread, cut in 1/2-inch cubes (stale or toasted, do not use fresh)
1 egg, lightly beaten
1 teaspoon poultry seasoning
1/2 teaspoon thyme leaves
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt

Steps:

  • Pan fry sausage over medium-high heat until crumbled and cooked well. Set aside.
  • In large fry pan, melt butter. Add celery, onion, and mushrooms. Saute until soft. Add chicken broth and bring to a boil. Cook down until about 1/3 of the liquid remains.
  • In large bowl, toss bread cubes with poultry seasoning, thyme, salt, and pepper. Add sausage and drippings to bowl and stir. Add vegetables and broth mixture to bowl and stir. Add egg and mix until fully combined. Mixture should be moist and bind together easily. (If not, add more chicken broth.).
  • Stuff neck and body cavities of turkey, or spoon into a greased 2-quart casserole and cover with foil. Truss turkey and roast as usual or, if baking, add casserole to oven about 30 minutes end of turkey roasting time and let bake for 45 minutes. I have also successfully made stuffing balls with this recipe, rolling the stuffing mixture into balls (I got about 15 of them), placing them on a greased, foil-lined baking sheet and baking in a 350-degree oven for about 25 minutes. They were moist and delicious!
