SAGE SAUSAGE AND CIDER STUFFING
My family, as far back as I can remember loves stuffing that is moist, full of sage and as my wife calls it, 'mushy.' The layers of flavors in this one passed the family test and is now considered a winner for the holiday season.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
- Heat a large skillet over medium-high heat. Cook and stir the sausage in the skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease; set the sausage aside in a mixing bowl. Melt the butter and olive oil in the skillet over medium heat; stir in the celery and onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir the cooked sausage into the onions along with the sage and apples. Continue cooking until the apples are just turning soft, about 5 minutes more. Whisk the chicken soup base and water together in a bowl until dissolved. Add the apple cider; stir in the sausage mixture along with the bread cubes until the bread is moist. Pack the stuffing into the prepared baking dish.
- Bake uncovered in the preheated oven until lightly browned and the edges are crisp, about 30 minutes.

- Add 1 tablespoon of butter to a heavy bottomed pan, and sautee the onions for about 20-25 minutes, over low-medium heat until they are soft and nicely browned. Take your time here and let them get nice color, it will result in great flavor later on.
- Add the rest of the butter to the pan, and while it is melting, slowly add the flour, stirring as you go to avoid lumps.
- Cook the roux for about 10-15 minutes, you're going to want to stir often, until it's a rich amber brown color, but not burnt!

- Preheat oven to 300°F with racks in upper and lower thirds. Spread bread on 2 rimmed baking sheets and bake until dry and crisp (but hasn't taken on any color), 18 to 20 minutes, rotating baking sheets from top to bottom halfway through. Let cool for 30 minutes. (Cooled, toasted bread cubes can be stored in an airtight container at room temperature for up to 2 days.)
- While bread cools, increase oven to 350°F. Grease a 13-by-9-inch baking dish with 1 tablespoon butter. Heat oil and 2 tablespoons butter in a large skillet over medium-high until butter melts. Add sage; cook, stirring often, until crisp, about 1 minute. Using a slotted spoon, transfer sage to a plate.
- Add onions, celery, pepper, and 1½ teaspoons salt to same skillet; cook, stirring often, until mixture softens and just begins to turn golden, 6 to 8 minutes. Transfer to a large bowl; add bread, grated apple, and half of the crisped sage.
- Whisk eggs in a medium bowl until lightly beaten; add broth, vinegar, and remaining 1 teaspoon salt and whisk to combine. Pour broth mixture over bread mixture; stir gently to combine. Let mixture stand, stirring occasionally, until liquid is absorbed, 5 to 10 minutes.
