1 cup butter, divided
2 cups fresh lima beans
½ teaspoon salt
4 medium whole (2-3/5" dia) (blank)s fresh tomatoes, peeled and chopped
2 teaspoons white sugar
4 ears fresh corn kernels, cut from the cob

Steps:

  • Melt 1/2 cup butter in a large saucepan over medium heat. Stir in lima beans and salt, and cook until tender, about 20 minutes.
  • Meanwhile, in a separate saucepan heat tomatoes, sugar and remaining 1/2 cup butter. Cook until tomatoes are tender, about 20 minutes.
  • Stir tomatoes into lima beans and add corn; cook 10 minutes more.

1/4 cup olive oil
3 tablespoons unsalted butter
2 cloves garlic, finely chopped
1 medium onion, cut into 1/4-inch dice
2 medium red bell peppers, seeded, deveined, and cut into 1/4-inch dice
2 medium zucchini, seeded and cut into 1/4-inch dice
2 10-ounce packages frozen lima beans, rinsed under warm running water and drained
3 cups fresh or frozen corn kernels (4 ears)
Coarse salt and freshly ground pepper
1 tablespoon coarsely chopped fresh sage
1 tablespoon picked fresh thyme leaves

Steps:

  • In a large skillet, heat oil and butter over medium-high heat. Add garlic and onion; cook until translucent, about 4 minutes. Add bell peppers, zucchini, lima beans, and corn. Season with salt and pepper. Cook, stirring occasionally, until vegetables are tender, about 10 minutes. Stir in herbs, and serve.

One 15-ounce bag frozen baby lima beans, thawed, or about 2 cups fresh lima beans
4 slices bacon
2 tablespoons unsalted butter
1 Vidalia or sweet onion, diced
2 cups fresh corn kernels (from about 3 ears)
3 garlic cloves, minced
Kosher salt and freshly cracked black pepper
1 1/2 cups frozen sliced okra
1 cup grape tomatoes
1 lemon, juiced
2 tablespoons fresh parsley, chopped

Steps:

  • Place lima beans and 1 slice bacon in a medium saucepan; cover with water. Bring to a boil over medium-high heat, then turn the heat to medium-low and simmer until the beans are just tender, 8 to 10 minutes. Drain the beans and set aside. Discard the bacon.
  • Meanwhile, add the remaining bacon to a large cast-iron skillet over medium-high heat. Cook, turning occasionally, until crispy, about 8 minutes. Remove the bacon to a plate or bowl and set aside.
  • Melt the butter in the skillet with the bacon fat. Add the onion and cook until softened, 2 to 3 minutes. Add the corn and the garlic and season with salt and pepper (about 1/2 teaspoon of each). Cook until the corn is just barely cooked, 3 to 4 minutes. Stir in the okra and cook until tender, another couple of minutes. Add the tomatoes and drained beans and continue to cook until the corn is tender, 2 to 3 minutes. Add the lemon juice, then taste for seasoning.
  • Chop the reserved bacon and sprinkle on top along with the chopped parsley. Serve warm or at room temperature.

2 cups frozen baby lima beans or fresh shelling beans
6 ears sweet corn, kernels and scrapings removed separately
4 tablespoons butter
Salt and freshly milled pepper
Chopped parsley
Paprika

Steps:

  • Put the beans in a saucepan, cover them with water, and simmer until tender, several minutes for frozen beans, about 25 minutes for fresh. Drain, reserving the cooking water. Add the corn kernels to the pan with the butter, 1/2 teaspoon salt, and enough of the cooking water to barely cover. Cook gently for 3 minutes, then stir in the scrapings. Turn the heat to low and cook, without stirring, until most of the liquid is cooked off, 5 to 10 minutes. Season with pepper, pour into a serving dish, and add the parsley and a dash of paprika. Serve right away.

But succotash really is a great and very underrated recipe.

1 ½ teaspoons butter
½ yellow onion, diced
salt and freshly ground black pepper to taste
½ red bell pepper, diced
1 jalapeno pepper, sliced
3 cloves garlic, minced
½ cup diced tomatoes
½ teaspoon ground cumin
1 pinch cayenne pepper
2 green zucchinis, cut into cubes
4 ounces fresh green beans, cut into 1/2-inch pieces
¼ cup water
1 ½ cups corn
1 cup frozen baby lima beans, thawed

Steps:

  • Heat olive oil and butter in a skillet over medium heat. Cook and stir onion with a pinch of salt in hot butter and oil until onion is softened and slightly golden, 6 to 7 minutes. Add red bell pepper, jalapeno, and garlic; cook and stir until peppers are fragrant and softened, 3 to 4 minutes.
  • Stir tomatoes, cumin, black pepper, and cayenne pepper into onion mixture; cook and stir until heated through, 1 to 3 minutes. Add zucchini, green beans, water, and a pinch of salt; cook until zucchini are almost tender, 5 to 6 minutes. Stir corn and lima beans into zucchini mixture until heated through, about 3 to 5 minutes more. Season with salt.

1 ear sweet white or yellow corn, kernels cut from ear
1 fat clove elephant garlic chopped
2 jalapeño peppers chopped
3 plum tomatoes -- yelo & red, chopped
12-15 fresh lima beans, shelled
1 cup vegetable broth (365 organic)
kosher salt
1/2 teaspoon sugar
1 tablespoon olive oil

Steps:

  • Cook lima beans in vegetable broth with sugar and pinch of salt for about 7 minutes. Strain beans and set aside, reserve the liquid. In iron skillet, add 1 tablespoon olive oil and cook garlic, corn, and peppers about 1 minute. Add lima beans, tomatoes and a 1/4 cup or so of broth to keep pan from becoming dry. Cook for 10-12 minutes, stirring occasionally. Add more broth as it evaporates to keep mixture moist. Finally, allow the broth to reduce in final minutes of cooking so mixture is moist but not soupy. After cooking, add salt and pepper to taste. Optional: after cooking add thinly sliced fresh basil. Can make ahead and reheat.

4 slices OSCAR MAYER Bacon, chopped
1 small onion, chopped
1 pkg. (16 oz.) frozen lima beans
1/2 cup water
1 pkg. (10 oz.) frozen corn
1/2 cup milk
2 Tbsp. butter
2 Tbsp. HEINZ Apple Cider Vinegar
1/2 tsp. salt
1/4 tsp. pepper

Steps:

  • Cook bacon in large skillet on medium-high heat until crisp. Remove bacon with slotted spoon; drain on paper towel. Cook and stir onions in reserved bacon drippings until tender.
  • Add lima beans and water; stir. Cook 5 min. or until beans are just tender, stirring occasionally.
  • Stir in corn, milk, butter and vinegar. Bring to boil. Reduce heat to medium; simmer 10 min. Stir in bacon. Season with the salt and pepper.

4 sweetcorn cobs
1 tbsp olive oil
2 garlic cloves , crushed
100g frozen baby broad bean
1 red chilli , deseeded and chopped
large handful basil , chopped
large handful mint , chopped
1-2 tsp sherry vinegar

Steps:

  • Use a knife to cut down the length of the sweetcorn to remove the kernels. Heat the oil in a large lidded pan. Cook the kernels and garlic over a medium heat for 5 mins, stirring all the time.
  • Add the frozen beans to the pan, cover and cook, stirring every so often, for another 4-5 mins or until the beans are cooked through. Turn off the heat and add the chilli, herbs and vinegar. Taste and add seasoning, if you like.

2 tablespoons vegetable oil
½ cup pearl onions, quartered
2 garlic cloves, sliced
1 teaspoon jalapeno chile, diced
1 cup sweet corn
½ cup edamame, cooked and shelled
1 red bell pepper, roasted, diced
1 cup cherry tomatoes, halved
Salt and pepper to taste
2 tablespoons red wine vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 cup okra, halved, charred on grill
Lemon zest, for garnish

Steps:

  • In large saute pan, heat vegetable oil over medium-high heat. Add sausage and sear until browned. Remove and reserve. (Alternatively, grill sausage for different flavor profile.)
  • Add pearl onions and cook until lightly caramelized. Add garlic and jalapeno, cooking for 1 minute more.
  • Add sweet corn, edamame, roasted red peppers and cherry tomatoes. Season with salt and pepper. Saute briefly to warm through.
  • Add red wine vinegar along with fresh herbs. Adjust seasoning if necessary.
  • Add grilled okra and reserved sausage. Garnish with fresh lemon zest.
