- Prep the oven: Preheat the oven to 375F.
- Make the filling: Add the peaches, sugar, cornstarch, lemon zest, and lemon juice to a saucepan over medium heat. Bring the mixture to a bubble and cook for 5 minutes, stirring often, until the peaches begin to soften.
- Melt the butter: Spread the cubes of butter evenly in a 9x9-inch baking dish. Place in the preheated oven and leave it in until the butter has melted and is bubbly.
- Make the batter: Add the flour, baking powder, salt, sugar and egg, vanilla, and milk to a bowl and whisk just until you no longer see any flour.
- Assemble the cobbler: Pour the batter into the baking dish with the melted butter. Pour the peaches evenly over the batter.
- Bake: Transfer the baking dish to the oven and bake for 40-45 minutes or until the cobbler topping is set and golden brown. Serve warm with a scoop of vanilla ice cream.

Steps:
- Preheat oven to 350 degrees.
- Spray baking spray in a 9x13 baking pan, then pour butter into pan and sprinkle with chopped pecans.
- In a large bowl whisk together the milk, vanilla and sugar.
- Add in the flour, baking powder and salt and whisk until just combined.
- Spoon batter over the butter and pecans, careful to not mix the butter in.
- Sprinkle the brown sugar over the batter.
- Gently pour the water over the batter and sugar.
- Bake for 30-35 minutes. Cool for 10 minutes before serving.

Steps:
- Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13-inch baking dish with butter or baking spray.
- Pour the peaches, juices included, into the bottom of the greased baking dish.
- Sprinkle the cake mix evenly over the peaches. Drizzle the melted butter over the cake mix.
- Bake for 50 minutes, or until the top is golden brown. Serve warm. Enjoy!
