MINI-REUBEN APPETIZERS
These are great little appetizers and so easy to make. Prepare in advance and pop in the oven just before serving.

Steps:
- Drain sauerkraut.
- Place coctail ryes on cookie sheet in single layer.
- Carefully place corn beef on each slice of rye.
- Add 1 tablespoon saurerkraut on top of corn beef.
- Squeeze a dash of thousand island dressing on top of saurkraut.
- Top with swiss cheese.
- Preheat oven to 350 degrees.
- Just before serving slide cookie sheet into oven for 5-8 minutes -- just until cheese has melted.

Steps:
- Preheat the oven's broiler.
- Arrange cocktail rye slices on a baking sheet. Top each one with about 2 teaspoons of thousand island salad dressing, then fold about 1/2 slice of corned beef to fit the bread, and lay over the dressing. Place a small amount of sauerkraut over the meat, then top with 1/4 slice of the Swiss cheese, or a slice about as big as the bread.
- Broil for 3 to 5 minutes, until cheese is melted. Serve warm.

CHEESY REUBEN APPETIZER

- Heat oven to 400°F.
- Mix cream cheese, 1 cup of the Swiss cheese, the dressing and corned beef. Spread in pie plate, 9x1 1/4 inches, or quiche dish, 9x1 1/2 inches. Top with sauerkraut and remaining 1/2 cup Swiss cheese. (Cover and refrigerate up to 24 hours if desired.)
- Bake about 15 minutes or until bubbly around edge. Serve hot with pretzel crackers or cocktail bread. Garnish with chives and radishes.

- PREHEAT broiler. Beat cream cheese and mustard in medium bowl with electric mixer on medium speed until well blended.
- ADD corned beef, Swiss cheese and onion; mix well. Spread evenly onto toast slices. Place on baking sheet.
- BROIL 2 to 3 minutes or until lightly browned.

Steps:
- 1. Sauté onions in oil until softened. Add corned beef and garlic. Sauté on medium low heat about 2 minutes, just until warmed. Add cream cheese and stir in until melted. Remove from heat.
- 2. Add swiss cheese and sauerkraut. Stir until combined. Add 3 Tbsp of rye bread crumbs, parsley, and mustard.
- 3. Cool until easily handled. Form into 1&1/2 inch balls. Roll in flour. Refrigerate until completely cool. Dip in egg whites then roll in remaining bread crumbs. Let sit at least 1-2 hours in refrigerator until firm.
- 4. Fry in canola oil until golden brown. Serve warm with thousand island dressing for dipping.
RYE WITH SWISS AND CORNED BEEF APPETIZER
Rye slices with swiss and corned beef spread. A touch of mustard mimics one of my favorite sandwiches. Perfect for a party or pot luck.

- preheat oven to 400F.
- Slice bread into 20 pieces. If using a 1.5 loaf, slice into 3/4" to 1" slices and cut those in half.
- Mix all other ingredients in a bowl.
- Place about 1 tablespoon of cheese mixture onto each piece of bread and place on a baking sheet either oiled or lined with parchment paper.
- Bake for 12 minutes or until cheese is lightly browned in spots. Broiling is good, also, but be careful not to burn or over brown.
- Cool and serve.
