Lovely German family recipe. This side dish will last for several days. Make sure you prepare ahead of time, as it needs to mingle flavors for at least 24 hours before serving. Serve along side rouladen and brown rice. Yum! One of our Christmas (or anytime) favorites.

6 lbs red cabbage (about 2 medium heads)
4 -5 lemons, juice of
8 cloves (or to taste)
1/4 teaspoon salt
1/2 cup sugar
2 apples, any kind peeled and sliced thin
12 ounces bacon, diced
1 medium onion, diced
1/2 cup water

Steps:

  • Saute onions and bacon until light brown in same pot (don't drain bacon grease).
  • Wash and shred cabbage fairly thin. Put on top of bacon and onions in pot. Pot will be full--cabbage will shrink. Add rest of cabbage to pot.
  • Add remaining ingredients. Simmer on low in covered pot for 2 hours, stirring often so it won't burn.
  • Best if made one day in advance. Allow to cure for no less than 24 hours in refrigerator before serving.

I love German food, especially this classic side dish known as rotkohl. My method is decidedly Americanized, but the taste brings me back to my heritage.

2 tablespoons butter
3 tablespoons cider vinegar
¼ cup brown sugar
½ teaspoon salt, or to taste
¼ cup onion, minced
½ cup grated peeled apple
2 pounds red cabbage, thinly sliced
⅛ teaspoon ground cloves
⅛ teaspoon ground allspice

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter. Add apple cider vinegar, brown sugar, and salt. Stir to combine. Mix in onion, grated apple, and red cabbage until well combined. Close and lock the lid. Select Steam function. Set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Mix in ground cloves and allspice.

5 cups shredded red cabbage
1 cup sliced green apples
⅓ cup apple cider vinegar
3 tablespoons water
¼ cup white sugar
2 ¼ teaspoons salt
¼ teaspoon black pepper
¼ teaspoon ground cloves

Steps:

  • Place butter, cabbage, apples, and sugar into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.
  • Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

Red cabbage with apples is a traditional German side dish for pork roast and other roasts, Christmas goose, turkey, and game. It tastes even better when reheated so I usually make it the day before. It is a staple on most people's home for Christmas dinner.

3 tablespoons unsalted butter
1 tablespoon sugar
1 onion, finely chopped
1 large apple - peeled, cored and diced
2 pounds red cabbage, cored and thinly sliced
½ cup vegetable broth
4 tablespoons cider vinegar
salt to taste
fresh-ground black pepper
2 tablespoons lingonberry jam

Steps:

  • Melt butter in a large pan. Add sugar and stir until it has a light caramel color, about 5 minutes. Add onion and apples; cook and stir until the onions start to soften, about 5 minutes. Add cabbage and cook until heated through, about 5 minutes.
  • Stir in broth, apple cider vinegar, and salt. Cover and simmer until flavors are well combined, about 30 minutes. Season with salt and pepper and stir in lingonberry jam towards the end of the cooking time if desired.

  • Chop onion. In a large pot with cover, I used a dutch oven, melt the butter and add the onions. Saute over medium heat for a couple of minutes until the onions are translucent.
  • Quarter the cabbage and shred into small strips. Add to the pot with the onion. Saute, stirring occasionally for about 5 more minutes.
  • Grate in the apples and add the vinegar, water, salt, nutmeg, coves, pepper and raisins. Cover and cook over low heat for about an hour.
  • Remove lid and continue to cook until the cabbage is soft and the liquid is reduced to your liking.
