RUTH'S GERMAN RED CABBAGE AND APPLES
Lovely German family recipe. This side dish will last for several days. Make sure you prepare ahead of time, as it needs to mingle flavors for at least 24 hours before serving. Serve along side rouladen and brown rice. Yum! One of our Christmas (or anytime) favorites.

Steps:
- Saute onions and bacon until light brown in same pot (don't drain bacon grease).
- Wash and shred cabbage fairly thin. Put on top of bacon and onions in pot. Pot will be full--cabbage will shrink. Add rest of cabbage to pot.
- Add remaining ingredients. Simmer on low in covered pot for 2 hours, stirring often so it won't burn.
- Best if made one day in advance. Allow to cure for no less than 24 hours in refrigerator before serving.

- In a large, deep skillet,on medium heat, cook bacon until crisp. Remove to paper towels to drain. Pour off all but about 2 to 3 tablespoons of fat and saute onion and celery til onion is somewhat translucent. Add chicken stock, red pepper flakes and cabbage. - Remove bacon from pan.
- Reserve 1 tablespoon of drippings.
- Drain bacon on paper towels, while cooking the cabbage.

This is one of my original recipes that my family really likes, and is easy to make but takes about one hour to prepare and cook.

- Cut cabbage into quarters and soak in tap water with a pinch of sugar.
- and let set for 10 minute Then drain in a colinder and set aside.
- In a deep skillet brown diced onions, when lightly browned add the cabbage to the onions using a wooden spoon to seperate the leaves of the cabbage . Reduce fire to a simmer gentle folding the cabbage into the onions, allowing the cabbage to turn a golden brown. When golden brown add the water and bullion cube, salt, pepper, and a pinch of sugar fold in till well dispersed cover with tight lid, reduce the fire to low and allow to simmer for 15 minutes .
- My family like to have cornbread with this dish. If you like your cornbread a little spicy add some chopped jelapeno sparingly to the cornbread batter. Just the right touch to this easy to prepare meal.
