FILET MIGNON ENCRUSTED WITH BLUE CHEESE
At Ruth's Chris Steak House, my husband tried blue cheese on his filet, it was awesome! I had to go home and try to recreate that experience! My hubby loved it, so did I! You can follow the recipe and omit the blue cheese if you prefer.

Steps:
- 1. Preheat oven to 350* degrees. Preheat oil in cast iron skillet or one without non-stick coating on HIGH. Season your steaks just before adding them to skillet.
- 2. When skillet is hot, add seasoned steaks, cook for 3 minutes on one side. (set timer!) Turn over after 3 minutes, add blue cheese crumbles. (They will look very well done at this point, but NO worries! ;)
- 3. Place steaks (still in the skillet) into preheated 350* oven. Roast for 12-13 minutes for medium rare steaks or 13-15 minutes for medium done steaks. Filet Mignon is best with a pink center for a juicy, tender steak!
- 4. When steaks are done, remove from oven and let them REST for about 3 minutes before plating them. Meanwhile, heat your dinner plates in the 350* oven. Melt 2-4 Tbsp of real butter in the microwave in a small glass measuring cup or bowl. Pour on top of steaks (with or without blue cheese) just before serving. Pairs well with a Cabernet or Zinfandel. Enjoy!

Steps:
- Mix all ingredients together VERY well. Cover and refrigerate. Prepare steak as normal, but cut cooking short on 2nd side by 2-3 minutes. Pack blue cheese mixture on less cooked side of meat and put under preheated broiler (about 3-4 inches away) and cook 2-3 minutes or until blue cheese topping starts to brown up and bubble. Remove steak from oven, tent with foil and let rest 5 minutes.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Stir butter and horseradish together in a bowl until evenly mixed. Fold blue cheese crumbles into the butter mixture. Mix bread crumbs thoroughly into topping.
- Grill steaks until they start to firm and are reddish-pink and juicy in the center, about 4 to 5 minutes per side for medium rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Transfer steaks to a broiler pan. Spread about half the blue cheese mixture atop each steak.
- Cook steaks under the broiler until the crust becomes golden, about 3 minutes.

- In medium mixing bowl, combine cheese, bread crumbs and heavy cream. Mix well with a spatula until all ingredients are fully incorporated, cover and refrigerate. Remove the mixture from refrigerator 30 minutes prior to use. Spread two tablespoons of the mixture on top of your favorite cooked steak (or other meats). Place under broiler for approximately 1 ½ minutes, or until the crust is golden brown. (NOTE - The mixture can be kept for about four days in the refrigerator. It makes enough to coat 6 pieces of meat)
