RUSTIC TURKEY TART

Rustic Turkey Tart image

I just saw this in Cook's Country magazine. Oh my, if you could see the picture! This tart is definitely on my list for leftover Thanksgiving turkey! I often make a starter of pears with a bleu cheese-nut combination, and the flavors are fantatic! This recipe was the grand prize winner for their leftover turkey recipes.

Time 55m

Yield 1 tart, 6-8 serving(s)

Number Of Ingredients 10

1 (9 inch) round prepared pie dough (The test kitchen recommends Pillsbury's "Just Unroll It!")
1 1/2 cups leftover turkey meat, cut into bite-sized pieces
3/4 cup crumbled blue cheese
4 firm pears, peeled, cored, and diced
1/4 cup pecans, toasted and chopped
1/4 cup dried cranberries
1 cup sour cream
3 tablespoons heavy cream
1 tablespoon minced fresh thyme
salt and pepper

Steps:

  • Adjust oven rack to middle position and heat oven to 425 degrees. Gently press pie crust into 9-inch tart pan and trim excess dough with knife. Prick bottom of dough all over with tines of fork. Bake until lightly browned, about 15 minutes; cool on wire rack.
  • Combine turkey, ½ cup cheese, pears, pecans, cranberries, sour cream, heavy cream, and thyme in large bowl; season with salt and pepper. Transfer turkey mixture to cooled pie crust, then sprinkle with remaining cheese.
  • Bake until crust is golden brown and cheese is melted, about 20 minutes. Let cool 20 minutes. Serve warm or at room temperature. (Tart can be refrigerated for 24 hours. Bring to room temperature before serving.).

Categories     dessert

Time 1h30m

Yield 8 servings

Number Of Ingredients 17

6 Granny Smith apples, peeled and cored
1/2 cup sugar
2 tablespoons dry sherry
1 tablespoon lemon juice
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 recipe Pate Sucree, recipe follows
2 tablespoons butter, cut into bits
2 tablespoons heavy cream, to brush crust
1 tablespoon sugar, to sprinkle on crust
1 1/4 cups all-purpose flour
1 tablespoon sugar
1/8 teaspoon salt
7 tablespoons butter, chilled and cut into bits
3 tablespoons ice water

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut each apple into 12 segments and put in a large mixing bowl. Add the sugar, sherry and lemon juice and toss to coat well. Add the cinnamon, allspice, ginger and nutmeg and mix well. Set aside to let the flavors blend for 15 minutes.
  • On a well floured surface, roll the dough out to a 15-inch circle. Transfer to a baking sheet and mound the apples in the center, making sure to leave a generous 2-inch border. Dot the apples with the 2 tablespoons of butter and fold the dough border up around the apples. (It won't meet in the center.) Brush the dough with the heavy cream and sprinkle with the sugar. Place in the bottom third of the oven for 30 minutes. After 30 minutes, transfer to the top third of the oven for an additional 30 minutes. Remove and let cool for 15 minutes before serving.
  • Put the flour, sugar and salt into the bowl of a food processor. Pulse to combine. Add the butter and pulse until the mixture resembles coarse crumbs. With the processor running add the water 1 tablespoon at a time until a dough just begins to form. Turn out onto a lightly floured surface and pat into a disk. Wrap in plastic wrap and refrigerate for at least 20 minutes.
