Potato Sausage Casserole - Creamy Sausage Potato Bake image

Potato Sausage Casserole consists of layers of sliced potatoes, ground pork sausage, and shredded cheese covered in a basic white sauce. Creamy Sausage Potato Bake is an easy casserole that is reminiscent of what Mom or Grandma would serve.

4 cups potatoes, cleaned and sliced thin
1 cup reserved potato water
1 pound ground pork sausage
1 cup thinly sliced onions (optional)
1 cup cheddar cheese, shredded
3 Tablespoons margarine or butter
1/4 cup flour
1 cup milk

Steps:

  • Preheat oven to 375 degrees F. Spray a 13 x 9 inch baking dish with non-stick cooking spray.
  • Boil the cleaned, sliced potatoes for 5 minutes in salted water. Reserve 1 cup of cooking water; drain the remaining water.
  • Brown pork sausage loosely; drain excess grease.
  • In a small saucepan; melt margarine. Add flour and stir until smooth.
  • Slowly add 1 cup reserved potato water and milk; whisking over medium heat until smooth.
  • In the casserole dish, layer all cooked, drained potatoes, add layer of onions on top.
  • Top with drained sausage and shredded cheese.
  • Pour white sauce over the entire casserole. Season with salt and pepper, if desired.
  • Cover with foil, and bake for 45 minutes. Remove from oven, and let sit for 10 minutes before serving. (Optional: remove foil the last 10-15 minutes of baking for a crusty cheese topping.)

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

6 slices bacon, rough chopped
1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1/8 cup olive oil, to fry potatoes if needed
1 cup black beans, drained and rinsed
1/3 cup Italian dressing (I use Good Seasons )
2 medium onions, chopped
2 medium carrots, chopped
1 lb kielbasa, sliced diagonally in 1/8 inch slices
1/2 cup dry white wine
1 cup chicken broth
1 (8 ounce) can tomato puree
1 teaspoon thyme leaves
1/2 cup breadcrumbs, plain
2 tablespoons unsalted butter, melted
2 tablespoons cilantro, chopped

Steps:

  • In a heavy skillet over medium heat, fry the bacon until just browned, about 8-10 minutes. Remove bacon with a slotted spoon to drain. Set aside.
  • In the same skillet over medium heat, fry the potatoes in the bacon grease until golden brown on all sides, turning with a slotted spoon as needed, 12-15 minutes. If more grease is needed, use the olive oil. Remove the potatoes with a slotted spoon to drain. In a large bowl, combine the potatoes with the black beans and set aside.
  • Discard the grease and wipe the skillet clean.
  • Add the Italian dressing to the skillet and cook the onions, carrots and kielbasa over medium heat, stirring occasionally, 12-15 minutes. Stir in the wine, broth, tomato puree, thyme and bacon. Simmer for an additional 5 minutes.
  • Preheat the oven to 350 degrees.
  • In a lightly greased 2-4 quart casserole, ladle 1/3 of the tomato mixture. Spread 1/2 of the potatoes and beans over the top. Repeat with 1/3 of the tomato mixture and the remaining potatoes and beans. Top with the remaining tomato mixture. Spread the bread crumbs over the tomato mixture and drizzle the butter over the crumbs. Sprinkle the cilantro over the top.
  • Bake for 1 hour.
